MARINATED FETA AND OLIVE SKEWERS



Marinated Feta and Olive Skewers image

Number Of Ingredients 8

2 teaspoons fennel seeds
2 teaspoons orange zest
3 tablespoons orange juice
1 teaspoon cracked black pepper
4 ounces feta cheese, cut into 24 (1/2-inch) cubes
24 mint leaves
1/4 large English cucumber, seeded, and cut into 1/2-inch chunks
12 pitted green olives, halved

Steps:

  • In a medium bowl combine the fennel seeds, orange zest, orange juice, and pepper. Gently stir in the feta and marinate for 1 hour or more.
  • To make the skewers, place a mint leaf about 3/4-inch up the skewer, then add an olive half, then a chunk of cucumber. Gently place a cube of the marinated feta on the end.

Manzanilla, Hojiblanca, or Gordal olives
Sliced or cubed firm cheese of your choice
Cherry tomatoes
Deli meats of your choice
Fresh or pickled vegetables such as cucumbers, peppers, onions, pickles, etc.
Olive oil
Balsamic vinegar or Balsamic glaze
Herbs or seasoning of your choice

Steps:

  • To make your European olive tapas, simply alternate your olives and cubed or sliced cheese, meat, and veggies on your skewers/banderillas. Your skewers can be prepared ahead of time and stored in the fridge.

Melon and Olive Mini Skewers with Black Pepper Honey image

Number Of Ingredients 8

3/4 cup honey
2 teaspoons freshly ground coarse black pepper
4 sprigs fresh thyme
2 medium sprigs fresh rosemary
1/2 large or 1 small cantaloupe melon, seeded and peeled
One 7-ounce can jumbo pitted green olives, rinsed and drained
One 8-ounce container bite-size fresh mozzarella balls (ciliegine), drained and patted dry
2 cups small fresh basil leaves

Steps:

  • For the honey: Stir together the honey, 1/4 cup water, the pepper, thyme and rosemary in a small saute pan over medium heat. Bring the mixture to a boil, then reduce the heat to low and simmer for about 8 minutes. Remove from the heat and set aside to cool slightly. Strain the honey into a small bowl and set aside while you assemble the skewers.
  • For the skewers: Using a melon baller, scoop out 24 rounds from the peeled melon. Thread each skewer with a melon ball, basil leaf, mozzarella ball, another basil leaf and an olive. To serve, place the skewers on a platter and drizzle with the honey.

10 strips bacon
30 garlic-stuffed green olives
30 toothpicks

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Cut each bacon strip into 3 pieces. Wrap 1 piece of bacon around an olive and secure with a toothpick; place on a broiling pan. Continue with remaining bacon pieces and olives.
  • Broil in the preheated oven until bacon is crisp, but not burned, 10 to 15 minutes.
