After having this at a friend's house for a dinner get-together, I had to have the recipe! Delicious!

2 cups pineapple chunks
¼ cup fresh cilantro, chopped
1 tablespoon minced red onion
2 tablespoons lime juice
4 (8 ounce) mahi mahi fillets
2 teaspoons sesame oil
¼ cup white sesame seeds
1 tablespoon vegetable oil

Steps:

  • Toss the pineapple, cilantro, red onion, and lime juice together in a bowl until evenly mixed; set aside.
  • Rub the mahi mahi fillets with the sesame oil to lightly coat.
  • Sprinkle the sesame seeds evenly over one side of each fillets; gently press the seeds into the fish to assure they stick.
  • Heat the vegetable oil in a large non-stick skillet over medium heat.
  • Lay the fillets with the seeded side down into the hot oil; cook for 4 minutes, turn, and continue cooking until the flesh turns opaque and flakes easily with a fork, another 3 to 5 minutes. Serve with the pineapple mixture.

¾ pound mahi mahi fillets
1 teaspoon toasted sesame oil
¼ teaspoon garlic pepper seasoning
1 tablespoon sesame seeds, toasted
1 ½ teaspoons grated fresh ginger

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Spray a shallow baking dish with nonstick cooking spray.
  • Pat mahi mahi dry with paper towels. Drizzle with sesame oil, and season with garlic pepper. Press grated ginger and toasted sesame seeds onto both sides of the fish to coat. Place fish on the prepared baking dish.
  • Bake in the preheated oven until the fish flakes easily with a fork, 10 to 15 minutes.

3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 teaspoon grated fresh ginger root
1 clove garlic, crushed or to taste
2 teaspoons olive oil
4 (6 ounce) mahi mahi fillets
salt and pepper to taste
1 tablespoon vegetable oil

Steps:

  • In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
  • Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.
  • Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately.

Mahi mahi fillets are encrusted with black and white sesame seeds, and pan seared. The sauce is rich and creamy, and flavored with soy, ginger, shallots, and shiso (a Japanese herb related to basil and mint).

3 shallots, minced
2 teaspoons minced fresh ginger root
1 lemon, juiced
½ cup dry white wine
½ cup heavy cream
½ cup unsalted butter, chilled and cut into small cubes
3 tablespoons soy sauce
4 shiso leaves
coarse kosher salt
ground white pepper
2 tablespoons canola oil
6 (6 ounce) mahi mahi fillets
4 tablespoons sesame seeds
4 tablespoons black sesame seeds

Steps:

  • In a sauce pan over medium heat, combine shallots, ginger, lemon juice, and white wine. Cook until liquid is reduced to approximately 2 tablespoons. Stir in heavy cream, and bring to light boil. Reduce cream by half; do not burn. Stir in soy sauce, then transfer to blender. Blend on low while slowly adding butter, a few cubes at a time, until all of the butter is emulsified. Roughly chop or tear shiso, add to sauce, and blend for about 10 more seconds. Season to taste with kosher salt and pepper. Keep sauce warm.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat oil in a large saute pan over high heat. Season both sides of the fillets with kosher salt and white pepper. Mix together white and black sesame seeds, and place in a plate or flat dish. Press the TOP side only of each fillet into the mixture, and press seeds into fish so it sticks. Make sure that the crusted sides are evenly crusted with the seeds. When oil is smoking, add fish, sesame seed side down to pan, and be careful of oil splatters. Pan sear fish for about 30 to 45 seconds per side. Place pan into oven, or transfer fish to baking sheet, and cook in oven for about 5 to 6 minutes. Serve sesame crust side up with ginger butter sauce.

I thought this recipe up one night while trying to find a quick and easy meal with the ingredients I had on hand. It's fast, cheap, and a hit with the girlfriend and family. I'm not a big seafood guy, but the mild ginger and lemon flavors accent perfectly with the honey glaze and even I can't say no. *This recipe works equally well with swordfish or tuna. Also try substituting soy sauce or teriyaki for hoisin for some additional variety*

2 (4 ounce) mahi mahi fillets
1 1/2 tablespoons honey, warm (preferably raw, but pasteurized is fine)
1 1/2 tablespoons red wine vinegar
3 garlic cloves, crushed
1/2 teaspoon lemon juice
1/2 teaspoon hoisin sauce
3/4-1 tablespoon olive oil
1/8 teaspoon black pepper, freshly ground
1/8 teaspoon salt (to taste)
1/4 teaspoon ginger powder

Steps:

  • Butterfly cut the mahi-mahi fillets so that they are no more than 1/3 to 1/2 inches (80 to 125 mm) thick.
  • In a small bowl combine the red wine vinegar, honey, garlic, and hoisin sauce. Stir until uniform.
  • Place both the fish and sauce in a large bag and marinate in the fridge for no more than 20 minutes, making sure to coat the fillets evenly. *Marinating for longer than 20 minutes will start to break down the proteins in the fish. Trust me, you want to avoid that.
  • When the fillets are done marinating remove them from the bag and set them aside for now. Reserve the marinade in the bag or a small bowl, you'll use it later.
  • Heat a medium sized skillet or wok on medium-high heat for 30 seconds (or until a drop of water will instantly boil when added to the pan).
  • Add the olive oil and coat the pan evenly.
  • As soon as the pan's hot and coated add the fillets. Then sprinkle half of the salt, black pepper, and ginger powder onto the fillets, making sure to cover as much of the meat as possible.
  • Let the fillets cook undisturbed for about 30 seconds or until you notice the edges of the meat beginning to whiten.
  • Cook the fillets until their bottom sides start to caramelize and turn a light golden color (1-2 minutes); flip.
  • Sprinkle the remaining salt, black pepper, and ginger powder onto the fillets and continue cooking until each side is golden and each fillet flakes (2-4 minutes, depending on thickness).
  • Remove the fillets to a serving plate and cover.
  • Add the reserved marinade to the pan and simmer on low heat until the resulting glaze turns a light golden-brown (1-3 minutes). *Make sure to scrape the bottom of the pan to add the fillet drippings to the glaze.
  • Spoon the glaze over each fillet and serve.

1 1/2 lbs mahi mahi fillets
2 tablespoons butter (divided)
1 garlic clove, minced
1 tablespoon teriyaki sauce
2 tablespoons fresh lemon juice
1 teaspoon honey
1 tablespoon sesame seeds

Steps:

  • In a skillet melt 1 Tbs of butter over medium heat, add garlic, and sauté 'til tender (watch carefully so that it doesn't burn!).
  • Remove from heat and stir in teriyaki sauce, lemon juice, honey and sesame seeds.
  • Let cool a few minutes then pour over fish and marinate 30 minutes in refrigerator.
  • Heat remaining Tbs of butter in skillet over medium heat.
  • Remove fish from marinade and add to pan, sautéing 4-5 minutes per side and basting with marinade.
  • Note: I like to toast the sesame seeds before adding them to the mixture for a more pronounced flavor.
