GRILLED PORK TENDERLOIN WITH FRESH PEACH AND GINGER SAUCE

Steps:
- Heat oil in heavy medium saucepan over medium-high heat. Add onion and sugar. Sauté until onion is golden, about 6 minutes. Mix in wine and next 5 ingredients. Cook 1 minute longer. Remove from heat. Cool sauce completely.
- Place pork in large resealable plastic bag. Pour 1 cup sauce over pork. Seal and refrigerate at least 6 hours or overnight, turning meat occasionally. Cover remaining sauce separately and refrigerate.
- Prepare barbecue (medium heat). Remove pork from marinade; discard marinade. Grill pork until meat thermometer inserted into center registers 155°F, turning often, about 35 minutes.
- Meanwhile, boil remaining sauce in heavy medium saucepan until reduced by half, about 5 minutes. Add peaches. Stir until heated through, about 1 minute. Slice pork and arrange on platter. Spoon some sauce over. Top with chives. Pass remaining sauce separately.

- Combine peaches, sugar, vinegar, and hot pepper flakes, and briskly simmer, uncovered, until liquid thickens slightly, 15 to 20 minutes. Stir in onion and salt and simmer for 5 minutes. Relish will continue to thicken as it cools.

Both the peach relish and the pork benefit from an overnight rest in the refrigerator; the relish mellows in flavor, and the pork becomes even more tender in the fiery marinade.

- Make relish:
- Cut a shallow X in bottom of each peach and tomato with a sharp paring knife and blanch in 2 batches in a 4-quart saucepan of boiling water 10 seconds. Transfer peaches and tomatoes with a slotted spoon to a bowl of ice and cold water and let stand until cool enough to handle. Peel peaches and tomatoes, then halve peaches lengthwise and pit. Cut peaches into 1-inch pieces. Coarsely chop tomatoes.
- Cook onion, ginger, and salt in oil in a 3-quart heavy saucepan over moderate heat, stirring occasionally, until softened, 3 to 4 minutes. Add curry powder and cook, stirring constantly, 1 minute. Add peaches and tomatoes with any juices, sugar, and lime juice and simmer, uncovered, stirring occasionally, until mixture is thick and peaches are tender but still hold their shape, about 8 minutes. Transfer to a bowl and cool, uncovered, then chill, covered, at least 8 hours.
- Marinate pork:
- Combine scallions, thyme, salt, allspice, pepper, lime juice, molasses, and hot sauce in a blender and blend until smooth. Put pork in a nonreactive dish and rub all over with marinade. Marinate, covered and chilled, turning occasionally, 8 hours. Bring to room temperature before grilling.
- Grill pork:
- Prepare grill for cooking over medium-hot charcoal (moderate heat for gas); see "Grilling Procedure," below.
- Discard any marinade remaining in dish, then brush pork lightly with oil and grill on a lightly oiled grill rack, turning occasionally and basting frequently with oil, until thermometer inserted diagonally into center of meat registers 145°F, 15 to 25 minutes.
- Transfer pork to a cutting board and let stand 15 minutes. (Internal temperature will rise to about 155°F.) Serve pork with relish.
- Grilling Procedure
- If using a charcoal grill, open vents on bottom of grill, then light charcoal. When charcoal turns grayish white (about 15 minutes from lighting), hold your hand 5 inches above grill rack to determine heat for charcoal as follows:
- Hot: When you can hold your hand there for 1 to 2 seconds
- Medium-hot: 3 to 4 seconds
- Low: 5 to 6 seconds
- If using a gas grill, preheat burners on high, covered, 10 minutes, then, if necessary, reduce to heat specified in recipe.

This burger recipe was on GMA as a semi finalist on 'Emerils Best Burger Ever Challenge. It did not win but it sounds very good. I am keeping it here for safe keeping until the summer when I will try to make it.

- In a mixing bowl combine pork, coriander, garlic, pepper, salt, ketchup, and peppers. In a small microwavable bowl heat the honey for 10 seconds. Add the mustard to the honey and mix well. Add the honey/mustard mix to the pork. Using your hands or fork work the pork mixture until ingredients are well combined. Do not overmix. Shape the pork into 4 patties. Cook on a grill, grill pan or in saute pan over medium heat. Cook each burger about 5 minutes on each side or until nicely caramelized and cooked thru.
- For the Peach Relish: Combine peaches, red onion, garlic, honey, apple cider vinegar, cayenne, salt and pepper. The relish should be chunky. Keep refrigerated intil ready to use. Can be made a day ahead. To assemble the burger: Serve with toasted onion rolls and top with shredded cabbage and fresh peach relish.

- Season the pork generously with salt and pepper. Add 1/2 cup of the bar-b-q sauce to the meat and mix well. Form into 4 equally sized patties. Place a deep thumbprint in the center of each patty. This well help them cook evenly and not puff up. Set aside.
- Make the peach salsa by mixing the peaches, jalapeño, red onion, lime juice, and cilantro together in a medium bowl. Add salt and pepper to taste. Place in the refrigerator.
- While the burgers cook, make the fried onions by heating about 1-inch of vegetable oil in the bottom of a heavy-bottomed cast-iron dutch oven or skillet. Slice the onion into extremely thin slices. Soak them in buttermilk. Whisk the flour and salt together in a small bowl. Once the oil has reached about 350°F, dredge a handful of the onions in the flour and carefully spread them evenly into the oil. Cook for 3 to 4 minutes to until just golden brown. Drain on paper towels. Repeat until all the onion has been cooked.
