This is a very simple, yet very tasty, snack bar recipe. I like to use half regular variety Cheerios and half Multigrain Cheerios, but you can use any variety you like. You might also try mixing in some dried fruit or chocolate chips, but I prefer them as is. Especially if you use Multigrain Cheerios, this is a healthier bar than Rice Crispy treats. My whole family likes them, and they are great to make with kids. (Obviously, supervision is needed for the stove with younger children, but an older child can make these themselves.) Prep time includes cooling time.

1/2 cup honey
1/2 cup white sugar
1/2 cup crunchy peanut butter
5 cups Cheerios toasted oat cereal
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Measure honey and sugar into a large saucepan.
  • Heat just to boiling.
  • Add peanut butter and stir until melted.
  • Remove from heat and stir in Cheerios, mixing thoroughly to coat evenly.
  • Fold into a buttered 13x9 pan.
  • Allow to cool one minute.
  • With slightly wet hands, gently press mixture down so that bars will be compact and hold their shape.
  • Allow to cool thoroughly, about 15 minutes.
  • Cut into squares.

1 tablespoon plus 3/4 cup cold butter, divided
2-1/3 cups all-purpose flour
1/2 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1 large egg, room temperature, lightly beaten
TOPPING:
2/3 cup honey
1/2 cup packed brown sugar
1/4 teaspoon salt
6 tablespoons butter, cubed
2 tablespoons heavy whipping cream
1 cup chopped hazelnuts, toasted
1 cup salted cashews
1 cup pistachios
1 cup salted roasted almonds

Steps:

  • Preheat oven to 375°. Line a 13x9-in. baking pan with foil, letting ends extend over sides by 1 in. Grease foil with 1 tablespoon butter., In a large bowl, whisk flour, sugar, baking powder and salt. Cut in the remaining butter until mixture resembles coarse crumbs. Stir in egg until blended (mixture will be dry). Press firmly onto bottom of prepared pan. , Bake 18-20 minutes or until edges are golden brown. Cool on a wire rack., In a large heavy saucepan, combine honey, brown sugar and salt; bring to a boil over medium heat, stirring frequently to dissolve sugar. Boil 2 minutes without stirring. Stir in butter and cream; return to a boil. Cook and stir 1 minute or until smooth. Remove from heat; stir in nuts. Spread over crust., Bake 15-20 minutes or until topping is bubbly. Cool completely in pan on a wire rack. Lifting with foil, remove from pan. Discard foil; cut into bars.

For crust
1 1/4 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 stick (1/2 cup) cold unsalted butter, cut into pieces
1 large egg, lightly beaten
For topping
1/3 cup plus 1 tablespoon mild honey
1/4 cup packed light brown sugar
1/8 teaspoon salt
3 tablespoons cold unsalted butter, cut into pieces
1 tablespoon heavy cream
1/2 cup whole almonds with skins (3 oz), toasted
3/4 cup hazelnuts (4 oz), toasted and any loose skins rubbed off in a kitchen towel
1/4 cup pine nuts (1 1/2 oz), lightly toasted

a pastry or bench scraper

Steps:

  • Make crust:
  • Butter a 9-inch square metal baking pan (2 inches deep) and line with 2 crisscrossed sheets of foil, leaving a 2-inch overhang on all sides. Butter foil.
  • Blend together flour, sugar, baking powder, salt, and butter with your fingertips or a pastry blender (or pulse in a food processor) until most of mixture resembles coarse meal with small (roughly pea-size) butter lumps. Add egg and stir with a fork (or pulse) until a crumbly dough forms.
  • Turn out dough onto a work surface and divide into 4 portions. With heel of your hand, smear each portion once or twice in a forward motion to help distribute fat. Gather dough together with scraper.
  • Preheat oven to 375°F.
  • Press dough evenly onto bottom (but not up sides) of baking pan and bake in middle of oven until edges are golden and begin to pull away from sides of pan, 15 to 20 minutes. Cool in pan on rack.
  • Make topping:
  • Bring honey, brown sugar, and salt to a boil in a 2-quart heavy saucepan over moderate heat, stirring until sugar is dissolved, then boil, without stirring, 2 minutes. Add butter and cream and boil, stirring, 1 minute. Remove from heat and stir in all nuts until completely coated.
  • Pour nut mixture over pastry crust, spreading evenly, and bake in middle of oven until topping is caramelized and bubbling, 12 to 15 minutes. Cool completely in pan on a rack. Lift dessert out of pan using foil overhang and cut into 25 squares.

The inspiration for this foolproof recipe came from the Paris bakery Moulin de la Vierge. These honey-kissed squares can be made ahead, do not require exotic equipment, are relatively simple (you pat the crust in the pan) and are beautiful, with a glistening glaze. Stored in an airtight container, they stay fresh for days.

120 grams (3/4 cup) unbleached all-purpose flour
45 grams (1/2 cup) almond meal (see note)
35 grams (3 tablespoons) sugar, preferably unrefined vanilla sugar (see note)
1/2 teaspoon salt, preferably fine sea salt
6 tablespoons unsalted butter, chilled and cut into cubes
1 large egg yolk
1/2 teaspoon pure vanilla extract
4 tablespoons unsalted butter
80 grams (1 cup) sliced almonds
30 grams (1/3 cup) candied orange or lemon peel, cut into tiny cubes
65 grams (1/3 cup) sugar, preferably vanilla sugar
2 tablespoons chestnut honey or other intensely flavored honey
1/2 teaspoon vanilla extract

Steps:

  • Heat oven to 400 degrees. Line a 9 1/2-inch-square baking pan with parchment, letting it hang over the sides for easier removal later.
  • Prepare the pastry: In a food processor, combine flour, almond meal, sugar and salt. Pulse to blend. Add the butter and pulse until the mixture resembles coarse crumbs. Add egg yolk, vanilla and 1 tablespoon of water. Pulse to incorporate. Add 2 to 3 tablespoons of water through the feed tube, tablespoon by tablespoon, pulsing until just before the pastry forms a ball. You may not need all the water.
  • Turn the dough out into the prepared baking pan. Press the dough evenly into the bottom of the pan. Place in the oven on the center rack and bake until the pastry begins to brown around the edges, 12 to 15 minutes.
  • While the pastry is baking, prepare the topping: In a saucepan, melt the butter over low heat. Add the almonds, candied peel, sugar, honey and vanilla extract. Heat just until the ingredients are incorporated.
  • Remove the pan and spread the almond-honey mixture evenly over the pastry. Return the pan to the oven and bake until the topping is a deep gold, 12 to 15 minutes. Remove and transfer to a rack to cool in the pan. Once it has cooled, remove from the pan and cut into 32 squares. Store in an airtight container at room temperature for up to 3 days.
