1 honeydew melon (4-1/2 lb.), cut lengthwise in half
3/4 cup boiling water
1 pkg. (3 oz.) JELL-O Lime Flavor Gelatin
ice cubes
1/2 cup cold water

Steps:

  • Remove and discard seeds from melon halves; invert onto paper towels to drain.
  • Cut thin slice from bottom of each melon shell to allow it to stand upright. (Or, place each melon shell in small bowl.)
  • Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Add enough ice to cold water to measure 1-1/4 cups. Add to gelatin; stir until slightly thickened. Remove any unmelted ice. Spoon gelatin evenly into melon halves. Pour any remaining gelatin into separate small bowl. Refrigerate several hours or until firm. Cut each melon half into 3 wedges to serve.

1 small ripe cantaloupe
1/2 large ripe honeydew
1 wedge of watermelon
1/2 cup freshly-squeezed orange juice
1 generous tablespoon honey, or to taste
Juice of one large lime, about 1 tablespoon, or to taste
2 cups plain yogurt

Steps:

  • Use a melon baller to scoop out balls of flesh from the cantaloupe; place balls in a large bowl. Repeat with the honeydews and add the balls to the bowl. Use the handle of a teaspoon to scrape out the visible watermelon seeds in rows, then scoop out flesh with the melon baller. Add to other melon balls and toss well with orange juice to combine. Chill.
  • In a medium bowl, whisk together the honey and lime juice until honey is liquefied. Whisk in yogurt; taste and add more honey or lime according to your taste.
  • Divide melon balls between 4 serving dishes and drizzle 1/2 cup yogurt over each. Enjoy.

1 small personal-sized watermelon, about 2 1/2 pounds
1/4 cup honey
2 limes, (zested and juiced)
2 teaspoons Aleppo pepper, (or 1/2 to 1 teaspoons red pepper flakes)
blocks of creamy feta for serving, ((optional))

Steps:

  • Heat an outdoor gas grill or an indoor griddle or cast iron grill to high.
  • Slice the melon. Wash the melon and trim the ends so that you're able to set the melon flat on your cutting surface. Cut the melon it into two halves, then cut the halves into quarters. From there slice into 1/2 -inch triangles with the rind on (do not remove the rind/skin).
  • Grill. Arrange the melon wedges or triangles on the prepared hot grill in one single layer. Grill over high direct heat for about 2 to 3 minutes on each side, watching for some grill marks to appear.
  • While the melons are on the grill, quickly prepare the chili and honey-lime sauce. In a small microwave safe bowl, combine the honey, lime juice, and Aleppo pepper flakes (or red pepper flakes). Mix with a spoon then warm the mixture in the microwave for just a few seconds (no more than 10 seconds). Or, you can put your honey in a glass jar and cover tightly and leave it in a bowl of warmed water until it has loosened).
  • Arrange the grilled watermelon.

1 package gelatin powder, your choice but a flavor & color that will compliment your melon

Steps:

  • Cut the melon in half lengthwise, remove seeds& dry center well with a paper towel Prepare Jello powder following package Instructions for 30 minute set.
  • Place melon halves in small bowls and spoon the liquid jello into the centers, fill to the brim Chill until firm apprx 3 hours.
  • Cut into wedges to serve.
  • when placing on serving plates do it carefully so the jello stays on the melon wedge.
