HONEY GRAHAM ROLL OUT SUGAR COOKIES
This lightly sweetened, soft and chewy honey graham roll out sugar cookies won't spread and doesn't need to be chilled!

Steps:
- Preheat oven to 375° F. Line baking sheets with silicone baking mats or parchment paper.
- Cream the butter and sugar together. If you have any brown sugar lumps, you should crush them up or pull them out. If your brown sugar is especially lumpy or hard, you can microwave it in 10 second bursts until it softens.
- Add the honey and mix until blended.
- Add the eggs, vanilla, cinnamon, salt, and baking powder. Mix thoroughly.
- Add the graham flour and all-purpose flour all at once and mix on low until the dough comes together and forms a ball. (If you are going to roll out right away - use 3 1/2 cups of all-purpose flour. If you plan to let the dough chill in the refrigerator or freezer for more than 4-6 hours, use only 3 cups of all-purpose flour.)
- Bake at 375°F. If you roll your dough to 1/4" - Bake for 7-8 minutes. If you roll your dough to 3/8" - Bake for 10-12 minutes.

- Whisk together first 8 ingredients; cut in butter until crumbly. In another bowl, whisk together honey and water; gradually add to dry ingredients, tossing with a fork until dough holds together when pressed., Divide dough in half. Shape each into a disk; cover and refrigerate until firm enough to roll, about 30 minutes., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to an 8-in. square. Using a knife or fluted pastry wheel, cut each into sixteen 2-in. squares. If desired, prick holes with a fork. Place 1 in. apart on parchment-lined baking sheets. , Bake until edges are light brown, 10-12 minutes. Remove from pans to wire racks to cool. Store in an airtight container.

- Place cereals, nuts and coconut in a large bowl.
- In a medium saucepan combine the butter, corn syrup and sugar. Stirring occasionally, bring to a boil over medium heat. Boil for 2 minutes.
- Pour immediately over the cereal mixture and stir to combine well.
- Pour onto wax paper lined baking sheets to cool, then break into bite size chunks.

- Line cookie sheet with wax paper.
- Combine peanut butter chips with shortening in medium microwavable bowl.
- Microwave on high for 1 1/2 minutes.
- Stir only for a few seconds.
- If needed, microwave about 15 additional seconds to melt mixture; stir well. Chips should be completely melted and mix should be smooth.
- Stir into mixture crushed pretzels, almonds, and cereal; combine well.
- Drop by spoonfuls onto wax paper.
- Let cool for approx 1/2 hour, until firm and cooled off.
