Easiest Rhubarb Jam Recipe image

A delightful rhubarb jam recipe that tastes only of rhubarb, no strawberries or ginger to take away the flavor.

4 lbs rhubarb, chopped
4 lbs sugar
3 tbsp lemon juice
1 (1.75oz) packet natural pectin

Steps:

  • Put a saucer in the freezer.
  • Heat rhubarb and lemon juice over medium heat.
  • Increase the heat and boil for 10 minutes. Add pectin and boil for another 10 minutes.
  • Now add the sugar and boil for another 15 to 20 minutes, or until a little jam congeals on the saucer (from the freezer).
  • Boil some water to rinse the jars and lids just before filling them. Pour hot jam into the jars and close immediately.
  • You can let the jars cool and keep in the fridge or process them so that they're safely sealed.

6 cups diced rhubarb
3 cups finely grated peeled carrots
3 grated oranges, peel and juice
1 cup honey
1/2 teaspoon salt
1/4 teaspoon nutmeg

Steps:

  • Place rhubarb in a bowl and pour boiling water over it to cover.
  • Let stand 10 minutes, then drain and add the grated carrots, peel, juice,
  • honey, salt and nutmeg.
  • Mix well.
  • Cover and let stand overnight in a cool place. If you use a metal bowl be sure it is stainless steel.
  • In the morning bring the mixture to a boil and cook over medium heat,
  • stirring often, until rhubarb is transparent and the mixture is thickened.
  • Pour into prepared jars leaving a 1/4" headspace.
  • Process jars in a boiling water bath for 10 minutes. Adjust time according to your altitude.

  • Combine all ingredients in a large saucepan. Bring to a boil over med-high heat, lower heat and simmer until thickened and smooth, stirring often - about 15 minutes.
  • Prepare 3 half pint jars and lids for canning* and start water to boil in a canner (or large stockpot with a rack on the bottom).
  • Skim any foam, if needed (I usually don't need to) and ladle into one hot jar at a time leaving 1/4-inch headspace, wiping the rims and attaching lids.
  • Process in the boiling water bath for 10 minutes. Turn off burner, remove lid and let jars sit in canner 5 minutes. Transfer jars to a towel-lined tray and let cool 12 to 24 hours. Check seals, label and store.
