PER POUND OF SEAFOOD TO BOIL (SHRIMP OR CRAB)
1 Tbsp chili powder (good quality, i used penzey's) use more if you like a stronger flavor
1 1/2 tsp cajun seasoning (i use tony chacherre's)
1/2 tsp garlic powder
1/4 tsp cayenne pepper, more or less to taste
1/4 tsp onion powder
1/4 tsp salt
1 pinch peppercorns, whole black
2 bay leaves
1 dash(es) hot pepper sauce (i used tabasco, of course!)
2 c ice cubes in a bowl large enough to hold the shrimp

Steps:

  • 1. First, place a small skillet on medium/medium hight heat. Add the chili powder cayenne, and cajun seasonings to the DRY skillet and toast, stirring constantly, until they become fragrant. This helps the spices to "bloom" and release their flavor.
  • 2. SHRIMP: Place the raw, shell-on shrimp into a pot and rinse once with cool water, then just barely cover with fresh water. Place the pot on the stove, add all the spices and heat on medium high until the shrimp mixture starts to boil. Keep an eye on them at this point, stirring freguently, and they will be done as soon as they turn pinkish white and start to curl, about 3 to 5 minutes. You do not want to overcook them, or they will become rubbery. Immediately remove from heat and drain off the liquid, save for about a 1/4 cup. Add two cups of ice to a separate bowl and add the shrimp and reserved liquid, stirring for a few minutes to aid in cooling. My Dad always used to throw the steaming bowl of shrimp into the freezer to cool. You can serve them hot, warm, or chilled, shell on or off.
  • 3. CRAB: Follow above cooking directions except cover raw crabs with an inch of cold water. Once the water boils, the crabmeat will turn opaque and the shells an orange shade, about 7 minutes. remove from water and serve hot.

1 teaspoon whole black peppercorns
1 teaspoon coriander seeds
1 rib celery, cut into 1-inch pieces
1 sprig fresh tarragon
2 sprigs fresh thyme
3 sprigs fresh parsley
1 tablespoon Essence, recipe follows
2 tablespoons salt
1/2 teaspoon cayenne pepper
1/2 lemon, squeezed (juice reserved) and the shell, plus 4 wedges for garnish

1/4 cup white wine
4 cups water
2 bay leaves
1 pound medium (about 30) shrimp, peeled and deveined, tail segment left intact
Cocktail sauce, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
1 cup ketchup
1 tablespoon fresh lemon juice
1 tablespoon prepared horseradish
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 drops hot pepper sauce, optional

Steps:

  • In a large saucepan, combine the peppercorns, coriander seeds, celery, tarragon, thyme, parsley, Essence, salt, cayenne pepper, lemon juice, white wine, water and bay leaves and bring to a boil over high heat and cook for 5 minutes. Add the shrimp to the boiling water, stir, cover and remove from the heat. Let stand for 8 to 10 minutes, or until shrimp are just cooked through.
  • Strain in a colander and transfer the shrimp to a large bowl. Discard the cooking liquid and seasonings. Refrigerate the shrimp until well chilled, about 1 hour. While the shrimp are chilling, make the Cocktail Sauce.
  • When ready to serve, divide the shrimp among 4 small bowls, and hang them on the rim of each bowl. Divide the cocktail sauce into 4 equal portions and place in the bottom of each bowl. Garnish each bowl with a lemon wedge. Alternatively, you can arrange a layer of crushed ice in the bottom of 4 bowls, put a small ramekin of the cocktail sauce in the ice and arrange the shrimp on the ice around the sauce.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

  • Combine all ingredients in a small non-reactive bowl and stir until thoroughly combined. Refrigerate until ready to serve.

In New Orleans, a seafood boil, the Southern tradition of gathering around a newspaper-lined table to eat large amounts of boiled shellfish with your bare hands, is all about salt and spice. In the words of Jared Austin, a Mississippi riverboat pilot and seafood-boil master, ''Nothing about any of this is subtle - people standing around the pot should sneeze and cough.'' The key to a successful shrimp boil is layering ingredients into the pot so that everything is done cooking at once: First add the potatoes and sausage, then the shrimp, then the frozen corn to bring the temperature down and prevent overcooking. Let it all soak to absorb the salt and spice, then dump it out onto the table and eat with copious amounts of rémoulade. While this recipe can easily be halved, it's a simple - and extraordinarily fun - way to feed a crowd. Just remember to heed Austin's advice: ''Don't be afraid of cayenne. Don't be afraid to let your nose run.''

3 (3-ounce) Louisiana or Zatarain's brand seafood-boil seasoning pouches
1/4 cup cayenne-pepper powder
1 1/2 cups kosher salt (or 2/3 cup fine sea salt)
2 yellow onions, peeled and halved through root
3 celery ribs, cut into 3-inch pieces
2 lemons, quartered
4 heads garlic
6 ears corn, shucked and cut into 3-inch pieces
2 1/2 pounds small (2-inch) red potatoes
2 12-ounce kielbasi, cut into 3-inch pieces
6 pounds shrimp, preferably with shells on

Steps:

  • Fill a very large (24-quart) pot with 8 quarts of water set over high heat. Add seasoning pouches, cayenne, salt, onions and celery. Squeeze lemon juice, and add wedges. Break garlic into cloves, and discard excess skin, then add unpeeled cloves. Cover the pot, and bring to a rolling boil.
  • Lay corn on a baking sheet in a single layer, then place in freezer.
  • Taste the water after it comes to a boil. It should be very heavily salted and spiced, with a bright orange foam (when standing near the boiling pot causes you to cough, it's spicy enough).
  • Add potatoes and sausage to the pot, and let the water return to a boil. Turn off heat, and allow to soak for 10 minutes or until potatoes are barely tender when pierced with a knife. Bring the water to a boil, and add shrimp. Cook for 3 minutes, then turn off heat, add corn and allow to soak for 7 minutes. Drain, and serve immediately with rémoulade (preferably on a newspaper-lined table).

  • Fill a large stock pot with 4 quarts of water and heat over high heat. When the water is just about to boil, lower the heat to medium, add all the seasonings along with the cloves, peppercorns, salt, bay leaves, garlic heads, onions, and squeeze the lemon juice into the stockpot before tossing in the lemon halves too. Bring back to a boil.
  • Add the potatoes to the pot and cook for 10 minutes, add the corn and continue to cook for an additional 10 minutes. Add the shrimp and cook for 2-4 minutes or until they just start to turn and turn opaque. Remove the potatoes, corn, and shrimp with a slotted spoon to a bowl.
  • Combine the lemon juice and butter in a boil and serve on the side. You can also serve it with hot sauce or my homemade cajun remoulade (recipe in notes).
