2 cups pancake mix (use the kind where you only need to add water)
1 cup water
oil for frying

Steps:

  • Heat vegetable oil to 350 degrees.
  • In a medium-sized bowl combine pancake mix and water. Stir until well blended.
  • Use a 1-ounce cookie scoop to drop the batter into the oil. Cook until browned on the bottom, and flip over and cook for another 30 seconds.
  • Remove from oil, and drain. Sprinkle with powdered sugar if desired. Serve with maple syrup.

Pancake Puppies are like sweet hush puppies made from pancake mix, then fried and dipped into a sweet icing. A super fun and easy dessert!

3 cups pancake mix ( (don't pack into measuring cup - just scoop and scrape off excess))
1/3 cup sugar
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
2 eggs, (beaten)
3/4 cup milk
2 tbsp oil, (plus more for frying)
cinnamon sugar
1 cup powdered sugar
1-2 tbsp milk
1 tsp vanilla or maple extract

Steps:

  • Pour several inches of oil into a deep saucepan. Begin heating it up to 375F degrees over medium-high heat. It's important to use a cooking thermometer to get it to the right temperature and not overheat the oil.
  • In a large bowl, combine pancake mix, sugar, cinnamon and nutmeg, milk, beaten eggs and 2 tbsp. oil.
  • Scoop batter up using a spoon or a small cookie scooper and drop into the hot oil. A generous teaspoon of the batter is enough.
  • Don't make them too big and don't let your oil get out of control hot and don't try to cook too many at one time.
  • Drop about 3-4 puppies at a time into the oil.
  • Flip them over once during cooking so the get evenly brown on all sides.
  • Small batches work best so you have a chance to flip them around as they cook. Continue with this process until they are all done.
  • When they are finished frying, place them onto a paper towel lined tray to drain excess grease. They will be golden brown when done.
  • Sprinkle with cinnamon sugar as soon as they come out of oil.
  • To make the icing, stir together powdered sugar, milk and extract in a small bowl. Stir until smooth. Then serve!

2 c krustez blueberry pancake mix
1 c water
1/2 c powdered sugar
1/3 c white chocolate chips
4 c vegetable oil

Steps:

  • 1. In a medium sized pot or deep fryer, add 4 cups of oil, and heat to 350F. In a medium sized bowl combine pancake mix and water & white chocolate chips and mix until blended.
  • 2. Use a cookie scoop to scoop out pancake batter and drop into hot oil. Turn pancake puppy when the pancake dough ball turns brown, flip by using a slotted spoon, and cook until the other side has been browned.
  • 3. Remove cooked puppies and drain on paper towels. Roll puppies in powdered sugar, and top with remaining powder sugar and serve with your favorite syrup.

1 c pancake mix
1/3 c milk
1 large egg
1/3 c strawberry preserves
1/2 c dried strawberries
1/4 c white chocolate chips
1/2 tsp cinnamon
CREAM CHEESE DIPPING SAUCE
4 oz cream cheese
2 1/2 Tbsp butter (room temp)
1 tsp vanilla extract
1 c powdered sugar
FOR SUNDAES
1 pt vanilla ice cream
1 can(s) whipped cream
1 pkg frozen strawberries in syrup (thawed)

Steps:

  • 1. Beat cream cheese, butter, and vanilla until well-mixed, light and fluffy.
  • 2. Beat in powered sugar until the right consistency and sweetness that you like. If frosting is too thick for you, you can add a tablespoon of milk in at a time until it reaches the consistency you want.
  • 3. Preheat oil in deep fryer to 325 degrees.
  • 4. Combine pancake mix, cinnamon, milk and egg in a medium bowl with an electric mixer on high speed.
  • 5. Mix the jam and strawberries together with the white chocolate chips.
  • 6. Add to the batter and mix just until blended in. Set the batter aside for a few minutes.
  • 7. When your oil is hot drop by cookie scoop or a large tablespoon into the oil. If you dip your scooper in the oil first your batter won't stick to it. Cook for 2 ½ to 3 minutes or until the batter is dark brown. You can fry around six balls of batter at a time, but first test the cooking time using one ball so that you can make sure the dough is cooking all the way through.
  • 8. Remove fried batter balls to paper towels to drain. Sprinkle with additional powdered sugar.
  • 9. Serve with cream cheese dipping sauce.
  • 10. Or make a sundae out of them by adding a big scoop of vanilla ice cream to a bowl. Surround with three or four of the puppies. Drizzle with the cream cheese frosting. Add the thawed strawberries on top and lastly garnish with whipped topping. Enjoy!

1 cup all-purpose flour, (spooned and leveled)
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons unsalted butter, melted, or vegetable oil
1 large egg
1 tablespoon vegetable oil
Assorted toppings, such as butter, maple syrup, confectioners' sugar, honey, jams, preserves, sweetened whipped cream, or chocolate syrup

Steps:

  • Preheat oven to 200 degrees; have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven. In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.
  • In a medium bowl, whisk together milk, butter (or oil), and egg. Add dry ingredients to milk mixture; whisk until just moistened (do not overmix; a few small lumps are fine).
  • Heat a large skillet (nonstick or cast-iron) or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil; carefully rub skillet with oiled paper towel.
  • For each pancake, spoon 2 to 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round (you should be able to fit 2 to 3 in a large skillet).
  • Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in oven. Continue with more oil and remaining batter. (You'll have 12 to 15 pancakes.) Serve warm, with desired toppings.
  • BUTTERMILK: In step 1, add 1/2 teaspoon baking soda to dry mixture. In step 2, replace the milk with low-fat buttermilk.
  • YOGURT: In step 1, add 1/2 teaspoon baking soda to dry mixture. In step 2, replace the milk with 2/3 cup plain low-fat yogurt and 1/3 cup milk.
  • WHOLE-GRAIN WITH YOGURT: In step 1, replace the all-purpose flour with 1/2 cup whole-wheat flour, 1/4 cup each cornmeal and wheat germ, and 1/2 teaspoon baking soda. In step 2, replace the milk with 2/3 cup plain low-fat yogurt and 1/3 cup milk.

Place 2/3 cup of batter in a small bowl; stir in chocolate syrup. Place 1 teaspoon of batter in another bowl; stir in strawberry syrup., For puppy ears, pour eight 1 tablespoonfuls of chocolate batter onto a lightly greased large hot griddle. For muzzle and eyes, spoon eight 1 teaspoonfuls and eight 1/4 teaspoonfuls of chocolate batter onto the griddle. For tongues, spoon four 1/8 teaspoonfuls of pink batter onto the griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown. Repeat for plain pancakes, pouring batter by 1/4 cupfuls onto griddle., To assemble, arrange ears, eyes, muzzle and tongue on plain pancakes; top eyes with chocolate chips.
