WARM LEMON PUDDING CAKES

Spoon into these lovely lemon pudding cakes and discover a layer of luscious lemon pudding beneath the cake!

3 large eggs, separated
1 cup milk (low-fat or whole)
2 teaspoons lemon zest, from 2 lemons
6 tablespoons fresh lemon juice, from 2 lemons
2 tablespoons unsalted butter, melted
¼ teaspoon salt
6 tablespoons all-purpose flour
1 cup sugar
Fresh berries and Confectioners' sugar, for serving (optional)

Steps:

  • Preheat the oven to 350°F and set a rack in the middle position. Spray six (6-oz) ramekins with nonstick cooking spray.
  • In a large bowl, whisk together the egg yolks, milk, lemon zest, lemon juice, butter, and salt. Add the flour and sugar and whisk until smooth.
  • In the bowl of an electric mixer, beat the egg whites until soft peaks form. (The peaks should curl when you lift the beaters out of the bowl.) Spoon about ¼ of the egg whites into the lemon mixture and whisk until smooth. Add the remaining egg whites and, using a rubber spatula, gently fold into the lemon mixture until smooth. The batter will be light, foamy, and liquidy.
  • Place the prepared ramekins into a 9-by-13-inch baking dish. Ladle the batter evenly into the ramekins (it will come almost to the top). Using a teapot or pitcher, pour room temperature water into the pan to reach halfway up the sides of the ramekins. Carefully place the baking pan in the oven and bake for 45 to 50 minutes, or until the cakes are puffy and lightly golden on top. Using tongs, carefully remove the ramekins from the baking dish and let cool on a rack for about 20 minutes before serving. (They will sink a bit as they cool; that's okay.) Dust with Confectioners' sugar and serve with berries, if desired.
  • Make Ahead: The cakes can be made a day ahead of time. Once completely cool, cover the cakes with plastic wrap and store at room temperature. Before serving, preheat the oven to 350°F and set a rack in the middle position. Remove the plastic wrap and place the ramekins on a baking sheet; heat for 10-15 minutes, until warmed through.

1 large egg, separated, room temperature
1/2 cup sugar
1/3 cup whole milk
2 tablespoons all-purpose flour

Steps:

  • Preheat oven to 325°. In a bowl, beat egg yolk. Add sugar, milk, flour, lemon juice, zest and salt; beat until smooth. Beat egg white until stiff peaks form; gently fold into lemon mixture. Pour into 2 ungreased 6-oz. custard cups (cups will be very full). , Place the cups in an 8-in. square baking pan. Pour boiling water into pan to a depth of 1 in. Bake until a knife inserted in the center comes out clean and top is golden, 40-45 minutes. If desired, top with confectioners' sugar, lemon slices and whipped cream.

⅓ cup lemon juice
1 teaspoon lemon zest
1 tablespoon butter
1 ½ cups white sugar
½ cup sifted all-purpose flour
½ teaspoon salt
1 ½ cups milk

Steps:

  • Beat together egg yolks, lemon juice, lemon rind, and butter or margarine until thick and lemon colored. Combine sugar, flour, and salt; add alternately with milk to the yolk mixture, beating well after each addition.
  • Beat egg whites until stiff. Blend egg whites into batter on low speed of electric mixer. Pour into 8 inch square baking dish.
  • Place a pan of hot water in the oven, and set the baking dish into the pan. Bake at 350 degrees F (175 degrees C) for 45 minutes.

1/4 cup flour
2 teaspoons cornstarch
1/4 cup granulated sugar
5 tablespoons unsalted butter, softened
2 tablespoons grated lemon zest and 1/2 cup fresh lemon juice, from four lemons.

1 1/4 cups whole milk, room temperature
pinch cream of tartar
powdered sugar

Steps:

  • 1. adjust the oven rack to the lowest position and heat the oven to 325°. Grease an 8 inch square baking dish. Place a kitchen towel at the bottom of the roasting pan, arrange the prepared baking dish, towel, and set aside.
  • 2. Whisk the flour and cornstarch together in a bowl. In a large bowl, beat 1/2 cup of the granulated sugar, the butter, and lemon zest together on medium-high speed until light and fluffy, 3 to 6 minutes. Beat in the egg yolks, one at a time, until incorporated. Reduce the mixer speed to low, add the flour mixture, and beat until incorporated. Slowly add the lemon juice and milk and mix until just combined.
  • 3. In a medium bowl, whip the egg whites and cream of tartar with the electric mixer on medium low speed until foamy. Increase the speed to medium-high and gradually whip in the remaining 3/4 cup granulated sugar until the whites form stiff peaks, 1 to 3 minutes.
  • 4. Whisk one third of the egg whites into the batter, then gently fold in the remaining egg whites, one spoonful at a time, until well combined. Spoon the batter into the prepared baking dish. Place the roasting pan in the oven and carefully pour enough boiling water into the pan to come halfway up the sides of the baking dish. Bake until the surface is Golden Brown and the edges are set. The center should jiggle slightly when gently shaken. Bake for about one hour. Remove the baking dish from the water bath, transfer to a wire rack, and cool for at least one hour. Dust the cake with powdered sugar and serve. Serves eight.

3/4 cup sugar
1/4 cup cornstarch
2 1/2 cups milk
3 large egg yolks, lightly beaten
2 tablespoons finely grated lemon zest
Pinch salt
1/2 cup fresh lemon juice
2 tablespoons unsalted butter, at room temperature

Steps:

  • Whisk the sugar and the cornstarch together in a medium saucepan. Add the milk and whisk until smooth. Add the egg yolks, zest, and salt and cook, stirring frequently at first and constantly towards the end, over medium heat until thickened enough to thickly coat the back of a spoon.
  • Remove the pan from the heat and stir in the lemon juice and butter. Pour through a strainer into a large serving bowl or 4 individual serving dishes.
  • Let cool to room temperature. Chill, loosely covered, for at least 2 hours and up to 3 days, or until set and thoroughly chilled. Serve chilled.

1 cup water
1/3 cup vegetable oil
1 tablespoon grated lemon peel
3 eggs
2 boxes (4-serving size each) lemon instant pudding and pie filling mix
3 cups milk
Whipped cream, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray (do not use dark or nonstick pan). In large bowl, beat cake mix, water, oil, lemon peel and eggs with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour into pan; set aside.
  • In medium bowl, beat pudding mix and milk with whisk or spoon 1 to 2 minutes or until smooth. Drizzle pudding over batter to within 1/2 inch of edges of pan.
  • Bake 55 to 60 minutes or until deep golden brown and edges pull away from sides of pan. Cool 20 minutes. Top of cake will have irregular surface.
  • Spoon warm pudding cake, top side down, into bowls; top with whipped cream. Store covered in refrigerator.

2 large lemons
1/4 cup all-purpose flour
1/4 teaspoon salt
3/4 cup sugar, plus
2 tablespoons sugar
3 large eggs, separated
1 1/3 cups whole milk

Steps:

  • Preheat oven to 350°F.
  • Finely grate 1 Tbsp zest from lemons, then squeeze 1/4 cup+ 2 Tbsp juice.
  • Whisk together flour, salt, and 1/2 cup + 2 Tbsp sugar in a large bowl.
  • Whisk together yolks, milk, zest and juice in a small bowl and add to flour mixture, whisking just until combined.
  • Beat egg whites in another bowl with an electric mixer until they hold soft peaks.
  • Beat in remaining 1/4 cup sugar, a little at a time, and continue to beat until whites hold stiff, glossy peaks.
  • Whisk about 1/4 of whites into batter to lighten, then fold in remaining whites gently but thoroughly (batter will be thin).
  • Pour into buttered 1 1/2 qt ceramic gratin or other shallow baking dish and bake in a hot water bath until puffed and golden, 45-50 minutes.
  • Transfer to a rack.
