Hillbilly Caviar...an easy pepper, bean, onion, corn side dish that is served with tortilla chips. This is make-ahead recipe great for summer picnics!

Steps:
- Combined the beans, corn, peas, diced peppers and onions in a bowl.
- In a small separate bowl, mix the oil, sugar and vinegar.
- Pour the dressing over the bean mixture.
- Refrigerate for at least an hour so the flavors get mixed well.
- Serve with tortilla chips or on a salad.

- Rinse and drain all beans and corn, finely dice peppers and onion,mix all together in bowl.
- to make the sauce heat, sugar ,vinegar, oil,water, salt & pepper, bring to a boil,remove from heat and allow to cool. Pour cooled sauce over bean mixture and allow to sit at least overnight. Serve with tortilla chips.

Have fun with this dish. This is a great dish to experiment with, you can add or subtract ingredients to fit your personal taste. I have added black-eyed pea relish, jalapeños, and even pear relish on occasions, depending on my mood and what I had on hand. This is a fun dish and people of all ages love it.
