Easy healthy banana oat waffles image

These easy healthy banana oat waffles are the perfect breakfast recipe for busy mornings. Refined sugar free and full of goodness.

1 cup rolled oats
2 medium bananas (chopped)
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
pinch of salt (optional)
to serve
Fresh fruit of your choice
honey/maple syrup
peanut/almond butter
yoghurt

Steps:

  • Place all the batter ingredients in a blender and blend until smooth.
  • Heat a waffle maker/iron and pour in a few tablespoons of batter.
  • Cook until the waffles are golden brown and cooked through.
  • Carefully remove the waffles and serve with toppings of your choice.

Number Of Ingredients 11

2 bananas (mashed)
1 1/4 cups oats (or oat bran)
1/2 cup whole wheat flour
1/4 cup wheat germ
1/4 cup flax seed (Ground)
1/4 cup wheat bran
2 cups vanilla-flavored soymilk
2 tablespoons oil
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 tablespoon baking powder

Steps:

  • Combine the oat bran or oats and milk in a medium bowl and let it stand for about 5 minutes.
  • Stir in the rest of the ingredients and mix it evenly. If the batter is too runny then add more oat bran, oats, or whole wheat flour until the batter becomes thicker. (If you're making pancakes then the batter does not need to be thick.)
  • Be sure to spray the waffle iron and keep in there for about a minute, adding about 5-10 seconds longer for each waffle.
  • They are delicious topped with peanut butter, bananas and honey. Or you can top with apple sauce, whip cream drizzled with pure maple syrup.

  • Blend all ingredients in a blender until almost smooth. You may need to add a bit more milk if the batter still seems too thick.
  • Pour about 1 cup of the batter onto the waffle iron (the amount will depend on the size of your waffle iron). Allow waffle to cook. I cook mine on close to the highest setting (5/6) and about a minute or two after the waffle iron says it's ready, so that the waffles are a little more browned and crispy. If you prefer softer waffles, you can take them out when the buzzer goes off.
