1 large low-fat low-carb whole wheat tortilla, La Tortilla Factory Whole Wheat Low-Carb (sometimes labeled Smart & Delicious Low Carb High Fiber)
1/2 cup soy crumbles, frozen ground-beef-style (like Boca Ground Burger or Morningstar Farms Meal Starters Grillers Recipe Crumbles)
1/2 cup fat-free cheddar cheese, shredded
1/2 piece Laughing Cow light swiss cheese, 1/2 of a wedge
1 tablespoon nonfat sour cream
1 teaspoon taco seasoning mix
1/2 teaspoon taco sauce

Steps:

  • Place frozen soy crumbles, Laughing Cow cheese and taco seasoning mix in a small microwave-safe bowl. Heat in microwave for 45 - 60 seconds. Remove, add taco sauce, and mix well.
  • Lay tortilla out on a large microwave-safe plate, and then warm it in the microwave for about 10 seconds. Place the soy crumble mixture in the center of the tortilla. Next, cover the mixture with the shredded cheese. Place the tortilla, open-faced, in the microwave for about 40 seconds (until shredded cheese has melted slightly). Remove plate from the microwave, and place sour cream on top of the melty cheese layer.
  • Then, wrap the tortilla up by first folding in the sides and then rolling it up from the bottom. With the seam side down on the plate, heat the wrap in the microwave for another 30 seconds. Enjoy!

(it's catchy!). And since grilled onions, a beefy burger, and melted cheese on toasty rye bread (yeah, that's what a "flat bun" is in this case) sounds delicious, we decided to HG-ify it. We're pleased to present HG's Flat Top Patty Melt."

2 slices light rye bread (for example Weight Watchers or another similar bread with around 50 calories per slice)
2 slices fat-free American cheese
3/4 cup onion, sliced
1 veggie burger, Original Boca Meatless Burger

Steps:

  • Toast bread slices until they are halfway to desired crispiness. Top each slice with a piece of cheese, and continue toasting until cheese is melted and bread is toasty.
  • In a pan sprayed with nonstick spray, cook onions with 2 tablespoons of water over medium heat until desired texture is reached (3 - 5 minutes).
  • Prepare burger patty according to the directions on the package (either in the pan sprayed with nonstick spray, or in the microwave). Place half of the grilled onions on one cheese-topped bread slice, and cover with the burger patty. Top with the rest of the onions, and finish off with the other slice of cheesy bread. Enjoy!

1 cup cream-style corn, canned
2/3 cup all-purpose flour
1/2 cup yellow cornmeal
1/2 cup fat free egg substitute (like Egg Beaters)
1/2 cup nonfat sour cream
1/2 cup reduced-fat cheddar cheese, shredded
1/4 cup scallion, chopped
2 tablespoons artificial sweetener (i. e. Splenda granulated)
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon hot sauce

Steps:

  • Preheat oven to 375 degrees.
  • Combine flour, cornmeal, Splenda, baking powder and salt in a large bowl.
  • In a separate small bowl, mix together all other ingredients -- then add the contents of the small bowl to the large one, and stir until well mixed.
  • Spray a 12-cup muffin pan with nonstick spray or line it with baking cups. Evenly distribute muffin batter among the cups.
  • Bake in the oven for 15 - 20 minutes (until muffins are firm and a light golden brown). Allow to cool and then enjoy!

6 sugar ice cream cones (like the kind by Keebler)
1 cup fat-free ricotta cheese
2 tablespoons fat-free ricotta cheese
2/3 cup Cool Whip Free, thawed
2 1/2 tablespoons Splenda granular
2 tablespoons semisweet mini chocolate chips, divided
1 tablespoon fat-free sugar-free instant vanilla pudding mix
1 tablespoon powdered sugar

Steps:

  • Place all ingredients except the cones and chocolate chips in a medium bowl. Using an electric mixer, beat on high until mixture is fully combined and fluffy. Fold in half of the chocolate chips.
  • Carefully transfer mixture to a large plastic bag, squeezing it down toward one bottom corner of the bag. Snip that corner off with scissors, so that you have a makeshift piping bag.
  • Gently squeeze the ricotta mixture into the cones, evenly distributing it among them.
  • Sprinkle the remaining chocolate chips evenly on top of the filling in each cone.

Number Of Ingredients 15

20 medium jalapenos (about 1 1/4 pounds)
1/2 cup olive oil
2 medium white onions, cut into 2-inch chunks
2 large carrots, cut into 1/2-inch rounds
24 cloves garlic, peeled
3 cups cider vinegar
3 tablespoons coarse salt
3 bay leaves
4 sprigs fresh thyme
4 sprigs fresh marjoram
1/2 lime, cut into 1/2-inch slices
1 1/2 tablespoons sugar
2 teaspoons yellow or Dijon mustard
12 allspice berries, crushed
1/2 teaspoon whole black peppercorns, coarsely crushed

Steps:

  • With a paring knife, cut two slits on opposite sides of each jalapeno, starting about 1/2 inch from the stem end and ending about 1 inch from the tapered end.
  • Heat oil in a deep nonreactive saucepan over medium-low heat. Add the jalapenos, onions, carrots, and garlic and cook, stirring often, until the vegetables are softened but not browned, about 10 minutes.
  • Add the vinegar, 1 cup water, salt, bay leaves, thyme, marjoram, lime, sugar, mustard, allspice, and peppercorns. Bring to a boil, then reduce heat to a simmer. Cook for 15 minutes. Remove pan from heat and cool to room temperature.
  • Transfer pickled jalapeno mixture to a clean glass jar and refrigerate. Pickled jalapenos will keep up to 6 weeks, refrigerated, as long as the vegetables are completely submerged in liquid.
