2 cups confectioners' sugar, divided
1/2 cup creamy peanut butter
3 tablespoons butter, softened
1/2 pound white candy coating, coarsely chopped
24 brown Reese's pieces or milk chocolate M&M's
1 tablespoon water
1/4 to 1/2 teaspoon red food coloring

Steps:

  • In a small bowl, combine 1 cup confectioners' sugar, peanut butter and butter. Shape into 1-in. balls; place on a waxed paper-lined pan. Chill for 30 minutes or until firm. , In a microwave, melt white candy coating; stir until smooth. Dip balls in coating; allow excess to drip off. Place on waxed paper. Immediately press a Reese's candy onto the top of each eyeball for pupil. Let stand for 30 minutes or until set. , In a small bowl, combine the water, food coloring and remaining confectioners' sugar. Transfer to a heavy-duty resealable plastic bag; cut a small hole in a corner of bag. Pipe wavy lines downward from pupil, creating the look of bloodshot eyes. Store in an airtight container.

1-1/2 cups creamy peanut butter
1/2 cup butter, softened
1 teaspoon vanilla extract
3-3/4 cups confectioners' sugar
12 ounces white candy coating, chopped
1 tablespoon shortening
40 milk chocolate M&M's, assorted colors
Red decorating gel

Steps:

  • In a small bowl, cream peanut butter and butter until light and fluffy. Beat in vanilla. Gradually beat in confectioners' sugar. Shape into 1-in. balls. Cover and refrigerate for at least 30 minutes. , In a microwave-safe bowl, melt candy coating and shortening; stir until smooth. Dip peanut butter balls into coating; allow excess to drip off. Place on waxed paper. Place M&M's, plain side up, on top. Let stand until set. Use red gel to create "bloodshot" eyes.

Peanut Butter Eyeballs are a holiday variation of a popular candy called Buckeyes. These nutty treats are dunked white chocolate and then decorated to look like bloodshot eyes. Don't be afraid to get creative with your decorating. A platter of different colored eyeballs would look splendidly scary at a Halloween party. Taken from www.food.about.com

1/2 cup smooth peanut butter
3 tablespoons butter, chopped
1 1/4 cups powdered sugar
1 teaspoon vanilla extract
6 ounces white candy coating
1 (8 ounce) bag M&M's plain chocolate candy
red decorating frosting

Steps:

  • In the bowl of a large mixer, blend peanut butter and butter until creamy.
  • Add powdered sugar and vanilla to peanut butter mixture and continue beating until it looks smooth.
  • Cover a cookie sheet with aluminum foil or waxed paper.
  • Using a spoon, scoop out balls of peanut butter and roll between your palms to get them as round as possible. Place on the cookie sheet and freeze for at least 30 minutes.
  • Place the white chocolate coating in a microwave-safe bowl and microwave until melted. Stir thoroughly until it is smooth.
  • Dip the peanut butter balls into the white chocolate coating. You can use two forks to balance the candy on, or just grasp it in your fingers and roll it around until it is covered completely. Return it to the cookie sheet and proceed to dip the rest of the peanut butter balls.
  • While the chocolate is still wet, press an M&M candy in the center for the iris.
  • Return the eyes to the refrigerator to harden.
  • Once the eyeballs are firm, you can use the red decorator frosting to make squiggly blood vessels.
  • Variation: Another option is to take a few drops of red candy coloring and drop them into the melted white chocolate. Use a fork to mix the chocolate around a bit, but don't stir too much: you want blood-red swirls, not pink chocolate! You can then dip your candies straight into your bloody mixture and skip step #9.

1 (18.25-ounce) box dark chocolate cake mix
1 1/3 cups chocolate milk
1/2 cup canola oil
3 eggs
1 (3.4-ounce) box instant butterscotch pudding
1 1/4 cups milk
1/2 cup smooth peanut butter
1 (12-ounce) container ready-to-spread dark chocolate frosting (recommended: Betty Crocker Creamy Deluxe)
Red gel frosting
Plastic eyeballs

Steps:

  • Preheat oven to 350 degrees F. Line 2 (12-capacity) muffin pans with cupcake papers; set aside.
  • In a large bowl, use a hand held electric mixer to beat together cake mix, chocolate milk, oil, and eggs on low speed for 30 seconds. Scrape sides of bowl with a rubber spatula and beat for 1 minute more on medium speed.
  • Use a ladle to fill each lined cupcake cup 2/3 full. Use oven mitts to place cupcakes in preheated oven and bake for 21 to 26 minutes or until a toothpick inserted in the center of the cupcake comes out clean with no wet batter.
  • Use oven mitts to remove from oven and let cool completely before filling and frosting, about 30 minutes.
  • For filling combine pudding mix, milk, and peanut butter in a bowl. Whisk for 2 minutes until smooth and thickened. Refrigerate for 30 minutes. Spoon filling into a pastry bag fitted with a medium plain tip. Fill cupcakes by inserting tip into tops of cupcakes and squeezing a couple of tablespoons of filling into each. Spread 2 tablespoons frosting on each cupcake top.
  • Using red gel frosting, draw squiggly lines on the frosted cupcakes so that they look like veins. Place a plastic eyeball in the center of each cupcake.

1 cup creamy peanut butter
6 tablespoons unsalted butter, softened
Pinch salt
2 cups confectioners' sugar
24 ounces white melting wafers
2 cups eyeball candies

Steps:

  • Line a baking sheet with parchment paper; set aside.
  • In a stand mixer fitted with the paddle attachment, or in a large bowl, cream the peanut butter, butter and salt to combine. Gradually add the confectioners' sugar and combine until smooth.
  • Use a small ice cream scoop or spoon to make thirty-five 1 1/2-inch portions, then use your hands to roll into balls and place on the prepared baking sheet. Refrigerate until firm, 10 to 15 minutes.
  • In a heat-proof bowl set over but not touching simmering water, melt the white melting wafers over medium heat. Once the peanut butter balls are firm, dunk them in the melted wafers to coat completely. Use a fork to lift from the bottom, let the excess coating drip off and set back on the prepared baking sheet. Place an eyeball in the center of the ball and repeat the process with the remaining balls.
  • Let sit until the white coating is set, about 15 minutes.

DECORATIONS:
CRISPY PEANUT BUTTER BALLS
1 (16-OUNCE) jar creamy peanut butter, about 1 1/2 cups, I used Reduce Fat Creamy Jif
1 stick salted butter, 1/2 cup
2 1/2 cups confectioners sugar
3 cups Rice Krispies cereal, slightly crushed
White chocolate chips, white almond bark, or white candy melting wafers (I used the melting wafers)
Brown M&M's candies
Red tinted icing (I used confectioners sugar, dash salt, and enough water for somewhat thick consistency, then tinted it with liquid red food color to desired shade)

Steps:

  • Combine the confectioners sugar and cereal in a mixing bowl. Set aside. Melt the butter in a saucepan over medium heat. Remove from heat and stir in the peanut butter until melted. (Reheat briefly if needed.) Pour mixture over the cereal mixture and stir until combined well. Refrigerate for about 15 minutes. Meanwhile, line a baking sheet with parchment paper. Shape the mixture into balls (mine were about 3/4") and place on the parchment lined pan. (If the mixture gets too soft to handle, refrigerate for another 10 minutes.) Refrigerate the balls for 30-45 minutes or put in the freezer for 15-20 minutes. (For time's sake, I covered them and refrigerated overnight.) When ready to dip the balls, melt the white chocolate as directed on package. Dip the balls in the white chocolate and place on parchment paper, foil, or waxed paper. (I used a fork to lift them out of the chocolate, letting the excess drip back into the bowl, then pushed it off the fork with a knife edge.) Place a M&M in the center of each ball as they are dipped. Set aside to harden at room temperature. Place red tinted icing in a ziptop plastic bag then make a tiny cut off one corner and pipe 3 vertical squiggles onto the sides of each ball. Allow time to completely set before trimming off any excess white chocolate from the base of the balls with a small paring knife. Store in the refrigerator.
