1 1/2 lbs ground chuck
1 1/2 cups chopped onions
2 garlic cloves, minced
1 (32 ounce) jar spaghetti sauce
1/3 cup water
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon pepper
4 medium potatoes, peeled and thinly sliced
2 cups shredded mozzarella cheese

Steps:

  • Cook ground chuck , onion and garlic in a large skillet over medium heat until meat is browned, stirring to crumble meat; drain. Add spaghetti sauce, water, basil, oregano, and pepper, stir well.
  • Spoon 1/3 of meat mixture into a lightly greased 13 x 9 x2 inch baking dish. Top with half of potato slices; cover with 1/3 of meat mixture. Add remaining potato slices and remaining meat mixture. Cover with aluminum foil.
  • Bake at 375°F for 1 hour or until potatoes are tender. Remove foil; sprinkle cheese over casserole. Bake an additional 5 minutes or until cheese melts.
  • Let casserole stand 10 minutes before serving.

2 pouches (4.7 oz each) Betty Crocker™ roasted garlic mashed potatoes
Water, milk and butter called for on potatoes pouches
1 package (8 oz) cream cheese, softened
1 cup shredded Parmesan cheese (4 oz)
1 tablespoon Italian seasoning
1/2 teaspoon dried rosemary leaves
1 tablespoon butter
1 cup Progresso™ Panko Italian style crispy bread crumbs
1/2 cup diced fresh tomatoes
1/4 cup chopped fresh basil leaves

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Make both potatoes pouches as directed.
  • Stir cream cheese, 1/2 cup of the Parmesan cheese, the Italian seasoning and rosemary into potatoes. Spoon mixture into baking dish. Top with remaining 1/2 cup Parmesan cheese. Bake 18 to 22 minutes or until heated through (at least 165°F in center of casserole).
  • Meanwhile, in 8-inch skillet, melt butter over medium heat. Add bread crumbs; cook and stir 2 to 3 minutes or until toasted. Remove from heat. Top casserole with tomatoes, toasted bread crumbs and basil.

6 cups sliced red potatoes
3 tablespoons water
1 garlic clove, minced
1/2 teaspoon salt
1/8 teaspoon pepper
6 boneless pork loin chops (6 ounces each)
1 jar (24 ounces) marinara sauce
1/4 cup shredded Parmesan cheese

Steps:

  • Place potatoes and water in a microwave-safe dish. Cover and microwave on high for 5 minutes or until almost tender; drain., Place potatoes in a 13x9-in. baking dish coated with cooking spray. Sprinkle with garlic, salt and pepper. Top with pork chops and marinara sauce. Cover and bake at 350° until a thermometer inserted in pork reads 145° and potatoes are tender, 40-45 minutes., Sprinkle with cheese. Bake, uncovered, until cheese is melted, 3-5 minutes longer. Let stand 5 minutes before serving.

1 medium onion, sliced
1 garlic clove, smashed
1 teaspoon olive oil
1 cup skim evaporated milk
3 tablespoons all-purpose flour
2 teaspoons hot mustard, your favourite
1/2 teaspoon salt
1/2 teaspoon dried sweet basil leaves
1/4 teaspoon sugar
1/4 teaspoon dried oregano
4 medium unpeeled new potatoes, thinly sliced, about 4 cups
1/8 teaspoon cayenne pepper
4 medium tomatoes, sliced 1/4 inch thick
1 tablespoon parmesan cheese, grated

Steps:

  • Sauté onion and garlic in olive oil in medium nonstick fry pan until onion is soft.
  • Combine evaporated milk and flour in small bowl, whisk until smooth.
  • Slowly add to onion, stirring constantly, until boiling and thickened.
  • Stir in mustard, salt, basil, sugar and oregano.
  • Arrange 1/2 of the potatoes in a greased 2 quart casserole.
  • Sprinkle with pepper.
  • Layer with 1/2 of the tomato slices.
  • Cover with 1/2 of the onion sauce.
  • Repeat layers.
  • Sprinkle with parmesan cheese, cover and bake in 375°F degree oven for 45 minutes.
  • Remove cover and bake for 20 to 30 minutes more until golden brown and potatoes are soft.

2 lbs boneless skinless chicken breasts
1 (10 3/4 ounce) can 98% fat-free cream of chicken soup
4 medium potatoes
2 cups shoestring carrots (I buy them already cut in the fresh vegetable section)
2 teaspoons onion powder
2 tablespoons garlic, minced (I but the jarred already minced garlic)
1 teaspoon Italian herb seasoning
1 teaspoon seasoning salt
1/2 teaspoon black pepper
1/2 cup water

Steps:

  • Preheat oven to 400.
  • Spray 11 X 9 casserole dish with cooking spray.
  • Cut chicken into bite size pieces, and place in casserole dish.
  • Cut potatoes in large bite size pieces and place in casserole dish.
  • Place carrots in casserole dish.
  • In a separate bowl mix soup, seasoning and water. Pour over Chicken, potatoes and carrots and toss until everything is covered in sauce.
  • Bake uncovered for about 45 minutes, until chicken and potatoes are cooked thoroughly.

4 potatoes, peeled and cubed
2 carrots, chopped
1 onion, chopped
3 (15 ounce) cans crushed tomatoes with juice
1 ½ teaspoons salt
1 pinch ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Remove casings from sausages and cut into 1-inch pieces. Place these into a 10x15-inch roasting pan. Layer the potatoes, carrots and onions over the sausages. Then pour the tomatoes over all. Season with salt, ground black pepper and oregano.
