3 tablespoons each dried savory, marjoram and thyme
1 teaspoon dried basil
1 teaspoon dried rosemary, crushed
1/2 teaspoon rubbed sage
1/2 teaspoon fennel seed, crushed

Steps:

  • In a small bowl, combine all ingredients. Store in an airtight container for up to 6 months.

2 teaspoons dried thyme
2 teaspoons dried parsley
2 teaspoons dried marjoram
2 teaspoons ground black pepper
1 teaspoon paprika

Steps:

  • Crush or grind all the ingredients together. Let stand at least overnight before using. Keep this mixture in an airtight container.

1 bunch green onion, chopped (1 1/2 cups)
3 tablespoons fresh lime juice
3 tablespoons minced fresh parsley
1 tablespoon fresh thyme
1 tablespoon minced fresh marjoram
1 tablespoon minced fresh chives
1 1/2 teaspoons minced garlic
1/2 teaspoon ground cloves, optional
1/8 teaspoon salt
1 dash hot pepper sauce

Steps:

  • Combine all ingredients in a food processor, chopping finely using on/off turns.
  • Cover and refrigerate until ready to use.
