THE BEST HUMMUS

The Best Hummus image

This is a classic tahini-forward, bright and lemony hummus, and is similar to what you would find in Israel. We tried this recipe with from-scratch dried chickpeas as well as with canned, and the flavor and texture were only marginally better with the freshly cooked. And we saved 24 hours of prep time! So for a creamy, satisfying 15-minute hummus, we're going with the can.

Provided by Food Network Kitchen

Categories     main-dish

Time 15m

Yield 4 servings

Number Of Ingredients 9

One 15.5-ounce can chickpeas
2/3 cup tahini
1 clove garlic, finely grated
1/4 teaspoon ground cumin, plus more if desired
1/3 cup fresh lemon juice, plus more if desired
Kosher salt
Extra-virgin olive oil, for drizzling
Hot smoked paprika, for sprinkling
Toasted pita bread, pita chips or cut raw vegetables, for serving

Steps:

  • Drain the chickpeas in a medium mesh sieve, reserving the liquid. Reserve about 7 chickpeas for garnish.
  • Process the tahini, garlic and cumin in a food processor. With the motor running, slowly drizzle in 2/3 cup of the reserved chickpea liquid (if you don't have exactly 2/3 cup, add water until the total amount is 2/3 cup) and process until light and very creamy, 1 to 2 minutes. The mixture will appear broken at first but will come together after all the liquid is added and has been processed for a minute or two.
  • Add the chickpeas, the lemon juice and 1/2 teaspoon salt to the tahini mixture. Process until the mixture is extremely smooth, scraping down the sides occasionally, about 4 minutes. Thin with more water if you prefer a looser consistency. Taste and season with more salt, lemon juice or cumin as desired.
  • Spoon the hummus into a shallow bowl, making a well in the center, and drizzle liberally with oil. Top with the reserved chickpeas and sprinkle with paprika. Serve with pita bread, pita chips or cut raw vegetables.

PAULA WOLFERT'S CHICKEN, MOROCCAN-STYLE

Categories     dinner, main course

Time 45m

Yield 4 servings

Number Of Ingredients 15

3 1/2 pound chicken, whole
3 cloves garlic, peeled and crushed (optional)
Salt
1/2 teaspoon ginger
1/2 teaspoon ground black pepper
Pinch of pulverized saffron or 1/4 teaspoon turmeric
1/4 teaspoon ground cumin
1/4 teaspoon sweet paprika
1 1/2 teaspoons finely chopped garlic
1/2 cup grated onion
1/4 cup finely chopped parsley
1/4 cup finely chopped fresh coriander
3 tablespoons oil
1 pound green olives packed in brine
4 tablespoons lemon juice, or more to taste

Steps:

  • Wash the chicken, then drain. The remainder of this step is optional; the North Africans do it to purify the chicken. Blend the garlic with one tablespoon salt to make a paste. Rub the paste into the cavity and the flesh of the chicken. Rinse well.
  • Place the chicken in the casserole with the spices, garlic, onions, herbs, oil and two cups water. Simmer, covered, 30 minutes, turning the chicken often in the cooking liquid.
  • Meanwhile, pit the olives. To rid them of their bitterness boil them three times, changing the water each time.
  • Add the drained pitted olives and the lemon juice to the casserole and continue cooking until the chicken is very tender. Transfer the chicken to a serving dish. Using a slotted spoon, remove the olives and place around the chicken. Meanwhile reduce the cooking liquid in the casserole to a thick sauce. Adjust the salt and lemon juice to taste. Pour over the chicken. Serve at once.

Categories     Condiment/Spread     Citrus     Fruit     No-Cook     Lemon     Summer     Gourmet

Yield Makes 4 preserved lemons

Number Of Ingredients 4

4 large (about 6 ounces each) lemons (preferably thin-skinned), scrubbed
2/3 cup coarse salt
1 cup fresh lemon juice (from about 5 large lemons)
olive oil

Steps:

  • Dry lemons well and cut each into 8 wedges. In a bowl toss wedges with salt and transfer to a glass jar (about 6-cup capacity). Add lemon juice and cover jar with a tight-fitting glass lid or plastic-coated lid. Let lemons stand at room temperature 7 days, shaking jar each day to redistribute salt and juice. Add oil to cover lemons and store, covered and chilled, up to 6 months.

PAULA WOLFERT'S ROASTED VEGETABLES WITH GARLIC AND HERBS

Paula Wolfert's Roasted Vegetables With Garlic and Herbs image

This recipe came to The Times in 1991 by way of Paula Wolfert, the prolific Mediterranean cookbook author and James Beard Award winner. It is a simple treatment she obtained from a woman in Corfu, an island off the coast of Greece in the Ionian Sea. It makes the best of a medley of vegetables - and the recipe can be varied according to what is on hand. "The combination of intense, good flavors - charred tomatoes, Greek olive oil and the herb accents of parsley, dill and mint - is wonderful, she says. Imported feta cheese (this roasted version would be lovely), oily black olives and crusty bread are the best accompaniments. Oh, and wine.

Time 1h30m

Yield 6 servings

Number Of Ingredients 12

1 1/2 pounds ripe tomatoes, peeled, cored, sliced thin, sprinkled with a pinch of sugar
1 1/2 pounds medium boiling potatoes, pared, each cut into six wedges
1 pound medium red or yellow onions, each cut into six wedges
1 pound zucchini, trimmed, rinsed, cut into one-and-a-fourth-inch chunks
2 ribs celery, trimmed, stringed, and cut into one-and-one-fourth-inch chunks
2 teaspoons fine chopped garlic
2 teaspoons fine salt
1/2 teaspoon fine ground pepper
1/3 cup fine chopped parsley
1 1/2 tablespoons chopped dill
1 teaspoon chopped fresh mint or marjoram
1/4 cup fruity extra-virgin olive oil

Steps:

  • Set an oven rack in the upper middle position. Preheat the oven to 400 degrees. Oil a large baking dish (such as a 13-by-11-by-2-inch lasagna pan).
  • Spread half the tomatoes on the bottom of the dish. Scatter the potatoes, onions, zucchini and celery on top. Lay the remaining tomatoes over the vegetables. Sprinkle with the garlic, salt, pepper and herbs and drizzle with oil. Bake the dishes for 30 minutes. Remove it from the oven; stir carefully to redistribute the vegetables, then bake for another 30 to 40 minutes without disturbing. Serve hot or lukewarm.

PAULA WOLFERT'S HUMMUS

Paula Wolfert's Hummus image

I think this hummus has the perfect blend of flavors. I can't believe the difference the home-cooked chickpeas make over the canned. This recipe was in an LA Times article on the best hummus in Los Angeles. As always, make sure your garlic is fresh. I didn't use the cayenne or paprika although this was great without them. I'll try them next time. Taste and use your own judgment on that one. I made this in my Vita-Mix blender with good results. Preparation time is for soaking and cooking. I make this with Tyler Florence's Pita Bread. Which I start in my bread machine.

Time 9h15m

Yield 4 cups, 16 serving(s)

Number Of Ingredients 8

1 1/2 cups dried garbanzo beans, soaked overnight
1 teaspoon kosher salt, divided
3 garlic cloves, peeled
3/4 cup tahini
1/2 cup fresh lemon juice, and more to taste
cayenne or hot Hungarian paprika
2 tablespoons chopped parsley
2 teaspoons olive oil

Steps:

  • 1. Rinse the soaked (overnight) chickpeas well and drain them before putting them in a saucepan and covering them with plenty of fresh water. Bring to a boil; skim, add one-half teaspoon salt, cover and cook over medium heat, about 1 1/2 hours, until the chickpeas are very soft (you might need to add more water. I burnt a batch so beware.).
  • 3. Meanwhile, crush the garlic and one-half teaspoon salt in a mortar until pureed. ( I used the blender for ALL of this then the beans, etc.) Transfer the puree to the work bowl of a food processor, add the sesame tahini and lemon juice and process until white and contracted. Add one-half cup water and process until completely smooth.
  • 3. Drain the chickpeas, reserving their cooking liquid. Add the chickpeas to the sesame tahini and process until well-blended. For a smoother texture, press the mixture through the fine blade of a food mill. Thin to desired consistency with reserved chickpea liquid. Adjust the seasoning with salt and lemon juice. The hummus can be kept in an airtight container in the fridge for up to a week.) Serve, sprinkled with paprika and parsley and drizzled with oil.
