Easy Homemade Spaghetti Sauce Recipe image

My family's secret homemade spaghetti sauce is easy to make using a few staple ingredients you may already have on hand! Perfectly thick and packed with flavor, you'll be ditching that store bought pasta sauce!

1/4 cup extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
1 medium yellow onion, grated
3 garlic cloves, finely minced
2 carrots, finely grated (use a food processor or a grater)
28 oz canned crushed tomatoes
1/2 cup water (pasta cooking water, preferred)
Kosher salt and black pepper
1 tbsp dried oregano
1 tsp sweet Spanish paprika
Pinch red pepper flakes, optional
Handful fresh basil, about ½ cup packed, torn
Handful fresh parsley, about ½ cup packed, chopped
3/4 lb to 1 lb of cooked pasta of your choice

Steps:

  • In a large pan heat the extra virgin olive oil over medium heat until just shimmering. Add the onions, garlic, and finely grated carrots. Cook for about 5 minutes, stirring regularly until softened.
  • Add the crushed tomatoes and about 1/2 cup water. Add a generous pinch of salt and pepper. Stir in oregano, paprika, crushed pepper flakes, if using. Finally, stir in the fresh basil and parsley.
  • Bring the sauce to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes. Check partway through, and if you feel the sauce is too thick, you can add a bit more water (preferably some of your pasta cooking water). When sauce is ready, throw in more fresh basil, if you like.
  • If serving for dinner, add cooked pasta of your choice to the sauce. Mix to combine and let the pasta cook in the sauce over low heat for about 5 minutes.

8 pounds Roma (plum) tomatoes, peeled and chopped
½ cup extra-virgin olive oil
1 large onion, minced
¼ cup grated Parmesan cheese
4 sprigs fresh basil, or more to taste, chopped
3 cloves garlic, minced
2 tablespoons red wine
coarse salt and ground black pepper to taste

Steps:

  • Puree tomatoes in a food processor until smooth; strain through a fine-mesh sieve into a bowl.
  • Heat olive oil in a large, deep pot over medium heat. Stir strained tomatoes, onion, Parmesan cheese, basil, garlic, and red wine together in the pot with the oil; season with salt and pepper. Bring the mixture to a boil, reduce heat to medium-low, and cook at a simmer until thickened, about 25 minutes.

1 pound lean ground beef
1 teaspoon salt
¾ teaspoon white sugar
1 teaspoon dried oregano

2 ½ cups chopped tomatoes
1 ⅓ (6 ounce) cans tomato paste
1 (4.5 ounce) can sliced mushrooms

Steps:

  • Brown beef over medium heat. Drain off fat.
  • In a large pot, combine beef, salt, sugar, oregano, pepper, garlic powder, onion flakes, diced tomatoes, tomato paste, and mushrooms. Simmer at a low heat setting for 2 hours, stirring occasionally.

1 small green bell pepper, diced

1 (16 ounce) can tomato sauce

1 teaspoon salt

Steps:

1 lb Mild Italian sausage (NOT ground)
2 pt Stewed tomatoes (if using store-bought, 1 15 oz can))
1 can(s) Tomato paste
1 pt Heidi's Green Tomato Garden Relish (or store-bought green salsa)
1/4 lb Fresh mushrooms
2 - 3 Tbsp Italian seasoning, rubbed between palms
1/2 Yellow onion, medium
1 lb Artichoke hearts (if using store-bought, 14 oz. can - NOT the marinated kind)

Steps:

  • 1. Brown Italian Sausages in 1 or 2 tablespoons olive or canola oil, cut into 1/4 to 1/2 inch thick slices, and return them to the pan to cook thoroughly through. Do NOT drain the oil when sausage finishes cooking. This will add to flavor of sauce!
  • 2. Combine: Stewed tomatoes, Tomato paste, Heidi's Garden Relish, Mushrooms, and Italian seasoning. Process in food processor (hit surge button 1 to 3 times until mushroom pieces are about the size of barley kernals), and then add to the pan of cooked sausage slices.
  • 3. Adjust heat under pan to MEDIUM or MED-LOW for a slow, easy simmer.
  • 4. Mince onion and cut artichoke hearts into bite-sized pieces. Add both to sauce mixture.
  • 5. Heat through
  • 6. I serve my sauce separate from the spaghetti, which I keep moist with a bit of oleo, a dash of garlic salt and a palmful of basil. My son and I both like to add a sprinkle of Romano or Parmesan cheese to our piles of pasta before we spoon on the sauce.
  • 7. ENJOY!

1 cup torn basil leaves
12 ounces spaghetti
Grated Parmesan, optional
Bring a large pot of salted water to a boil.

Steps:

  • Cook the oil, garlic, 1/2 teaspoon salt and pepper flakes in a large skillet over medium heat, stirring, until the oil heats up and the garlic just starts to turn golden, 4 to 6 minutes.
  • Add the tomatoes; rinse the can with about 1 cup of water, and add the water to the skillet. Add the basil, raise the heat to medium-high and simmer until the sauce thickens, 15 to 20 minutes.
  • Meanwhile, add the spaghetti to the boiling water, and cook according to package directions; strain well.
  • Add the cooked spaghetti to the sauce, and stir to coat. Serve with Parmesan if desired.

3 pounds fresh plum tomatoes, blanched, peeled, seeded and quartered
3 ounces olive oil
Salt and freshly ground pepper to taste
1 pinch crushed red-pepper flakes
1 pound dry spaghetti
2 ounces extra-virgin olive oil
1 tablespoon butter
6 leaves fresh basil, shredded
2 tablespoons freshly grated Parmigiano-Reggiano cheese

Steps:

  • Blanch the tomatoes and remove the skins. Cut in half lengthwise and scoop out the seeds. Cut the tomatoes crosswise. Set aside in a bowl.
  • Heat 3 ounces olive oil in a large, deep skillet over medium-high heat until it smokes slightly. Add tomatoes, salt, pepper and crushed red pepper. Since the tomatoes will reduce and the salt will be concentrated, it is better to season initially with a lighter hand.
  • Chop the tomatoes with a potato masher until they are in fine chunks and all their liquid is released. Be sure they are chopped and crushed fine, for a semichunky sauce. Simmer for 25 minutes over medium heat.
  • While the sauce simmers, heat the water for the pasta. Cook the spaghetti in salted water about half of the way cooked. Drain, reserving some of the water.
  • Taste the sauce and adjust the seasoning if necessary. Add the pasta to the sauce and cook over medium-high heat until all the liquid is absorbed and the pasta is al dente. If the sauce is over-reduced, use the pasta cooking liquid to adjust it.
  • At the last moment, remove the pan from the heat; add the extra-virgin olive oil, butter, basil and cheese. Mix thoroughly until the pasta is an orangy color. Taste again and adjust the salt if necessary. Remove to a platter. Serve.
