SHEET PAN PECAN PIE
Layers of toasted pecans, a rich gooey filling, and a flaky, buttery pastry crust make this Easy Pecan Pie a heavenly dessert. Made with either a homemade crust or a store-bought one, this is a pie that you're going to love.

Steps:
- Preheat the oven to 350°F. Line a 9x13 pan with parchment paper. Roll out the pie crust to fit the pan and crimp the edges. Place the crust in the freezer while preparing the filling.
- Combine the eggs, corn syrup, brown sugar, butter, and vanilla in a mixing bowl. Whisk to combine. Stir in the pecans.
- Take the crust out of the freezer and pour filling into the crust. Transfer to the oven and bake for 45-50 minutes, until the center is set and the crust is golden.
- Cool completely before cutting into squares. Enjoy!

- Combine butter, pecans and coconut in a skillet. Heat until coconut is toasted. Let cool! Mix cream cheese, powdered sugar and cool whip until smooth. Pour into crusts. Sprinkle coconut-pecan mixture on top. Drizzle caramel sauce over each pie. You probably will not use the entire jar. Refrigerate until time to serve
PECAN PIE COBBLER
This pecan pie cobbler recipe is easy to make, and very tasty. The cobbler and sauce are created in one pan.

Steps:
- Place butter in a 9x13-inch cake pan or casserole dish and put in the oven. Preheat the oven to 350 degrees F (175 degrees C).
- Combine flour, sugar, milk, and vanilla in a bowl. Stir to combine but don't overmix; batter must be of pouring consistency. If batter is too thick, add more milk.
- Mix brown sugar and cinnamon together in a small bowl.
- Remove melted butter from the oven and sprinkle pecans over top. Without mixing or stirring, pour batter over the pecans, sprinkle with brown sugar mixture, and carefully pour hot water over top.
- Bake in the preheated oven until golden brown, 30 to 35 minutes.

HEAVENLY PIE
This is heavenly and a great "do ahead" recipe. It is a bit fussy to do but worth the effort You will get raves on this one

Steps:
- Whip the egg whites until frothy and then add the cream of tartar, continue beating until the egg whites are very stiff and form peaks.
- Gradually beat in the sugar and continue beating until the whites are stiff and glossy Spread into a 9" pie plate and bake in a 250F oven for 1 hour.
- Filling: Beat the egg yokes until thick.
- Gradually beat in the sugar, add lemon juice& rind with the bit of salt.
- Cook in a double boiler until thick, stirring constantly.
- Whip the cream (have the cream very cold and cool your bowl in the fridge too,) Add a little sugar to the cream, beat until stiff When the crust is completely cooled spread half the whipped cream in the shell, then half the lemon filling, top with remaining whipped cream Put in the fridge for 3-4 hours or overnight.
- Loosely cover the pie in the fridge.

This recipe originated here in Louisville. It is often served during the famous Kentucky Derby, but it's good any other time of year, too!
