Chicken and vegetables are simmered with a creamy soup in a slow cooker and ready for a warm and hearty dinner.

6 red potatoes, cut into chunks
½ pound baby carrots, halved
10 skinless, boneless chicken thighs, trimmed of excess fat
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
⅛ teaspoon garlic salt
2 tablespoons mashed potato flakes

Steps:

  • Place potatoes and carrots in a slow cooker; top with chicken thighs.
  • Combine cream of chicken soup, cream of mushroom soup, and garlic salt in a bowl. Pour over chicken thighs.
  • Cover and cook chicken mixture on High for 3 1/2 hours. Stir potato flakes into soup mixture to thicken; cook for an additional 30 minutes.

4 boneless skinless chicken breast halves (about 1 1/4 pounds)
1/4 cup Dijon style mustard
3/4 cup Reduced-Fat Bisquick®
1 1/2 pounds small red potatoes, cut into fourths
1 medium bell pepper, cut into 1/2-inch pieces
1 medium onion, cut into 16 wedges
cooking spray
1/4 cup grated fat-free Parmesan cheese topping, if desired
1 teaspoon paprika

Steps:

  • 1. Heat oven to 400°. Spray jelly roll pan, 15 1/2 x 10 1/2 x 1 inch, with cooking spray. 2. Brush chicken with 2 tablespoons of the mustard, then coat with Bisquick. Place 1 chicken breast half in each corner of pan. Place potatoes, bell pepper and onion in center of pan. Brush vegetables with remaining 2 tablespoons mustard. Spray chicken and vegetables with cooking spray. Sprinkle evenly with cheese and paprika.3. Bake uncovered 35 to 40 minutes, stirring vegetables after 20 minutes, until potatoes are tender and juice of chicken is no longer pink when centers of thickest pieces are cut. I got this from a favorite brand names recipe site and have been making it about once a month. My family loves it and usually so does everyone else I make it for. It is definitely a comfort food! I switch the veggies sometimes as well so it seems like a new dish. Very good.

3 cups mashed potatoes
1 cup shredded cheddar cheese, divided
1 1/3 cups French's French fried onions, divided (sometimes, I use the cheese flavored ones)
1 1/2 cups cubed cooked chicken
1 (10 ounce) package frozen mixed vegetables, thawed and drained (sometimes I cook broccoli and use that instead, 1 1/4 )
1 (10 3/4 ounce) can cream of chicken and mushroom soup (if you can't find that, use regular cream of chicken soup)
1/4 cup milk
1/2 teaspoon ground mustard
1/4 teaspoon garlic powder
pepper

Steps:

  • Preheat oven to 375.
  • In medium bowl, combine mashed potatoes, 1/2 c cheese and 2/3 french fried onions.
  • Mix thoroughly.
  • Spoon potato mixture into greased 2 Qr. casserole.
  • Using back of spoon, spread potatoes across bottom and up sided of dish to form a shell.
  • In large bowl, combine chicken, veggies, soup, milk and seasonings.
  • Pour into potato shell.
  • Bake uncovered 30 minutes or until heated through and bubbly.
  • Top with remaining 1/2 c cheese and 2/3 c french fried onions.
  • Bake uncovered 3 minutes longer or until onions are golden brown and cheese is melted.
  • Let stand 5 minutes before serving.
