HEARTY BREAKFAST EGG BAKE
I always fix this casserole ahead of time when overnight guests are visiting so I have more time to spend with them. Then I simply add some toast or biscuits and fresh fruit for a complete meal that everyone loves. This dish also reheats well. -Pamela Norris, Fenton, Missouri

Steps:
- Crumble sausage into a large skillet. Cook over medium heat until no longer pink; drain. Transfer to a greased 13x9-in. baking dish. Sprinkle with hash browns and cheese. , In a large bowl, whisk the remaining ingredients; pour over the top. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

- Preheat oven to 350 degrees.
- Lightly spray a 9x13 inch pan with cooking spray.
- Quarter biscuits, and place at bottom of pan.
- Layer with cooked bacon and shredded cheese.
- In a mixing bowl, whisk together eggs, sour cream, salt, and pepper and pour over cheese and biscuits.
- bake for 30-40 minutes or until golden brown.
- Allow to cool 5-10 minutes before serving.
- Garnish with onions, if desired.

Steps:
- Fry your breakfast meat, set aside.
- Preheat oven to 400° and melt margarine in a 9x13 pan.
- In a medium bowl, mix Bisquick, milk, sugar, oil and eggs.
- Pour into pan over melted margarine, and crumble meat evenly over top. If using link sausage, press gently into batter.
- Bake for 11-15 minutes or till golden. Serve warm.

HEARTY BREAKFAST CASSEROLE
I am not sure where this recipe originally came from. It is the best breakfast casserole I have ever tried. I usually cook the sausage the night before and mix it with the cheeses and other ingredients so I have less work that morning. Be sure to put the hash browns in the frig the night before, as well, so they will be thawed.

Steps:
- Preheat oven to 450 degrees.
- In a medium bowl, combine the potatoes, cheddar cheese and oil.
- Mix well.
- Press mixture into a 9X13 dish.
- Bake for 30 minutes until golden brown; remove from oven.
- Reduce heat to 350 degrees.
- In a large bowl, combine 1 tbsp parsley with the remaining ingredients except the tomato slices; mix well.
- Pour over potato crust.
- Bake for 25 minutes or until the eggs are set.
- Place the tomato slices over the casserole and top with remaining parsley.
- Bake 5 to 7 minutes longer.
HEARTY BRUNCH CASSEROLE
We just love it as is. You can use whatever meat and veggies your family likes and add salt and pepper to taste. Sausage and/or bacon would work as well. There are endless possibilities to try.

- 1. Preheat oven to 375°
- 2. Brown ground beef and drain. Add salami, pepperoni, carrot and onion - then mix well.
- 3. Melt the butter and coat the bottom of the 13x9 pan. Lay the bread slices on top of the melted butter to form the bottom layer
- 4. Sprinkle the meat/veggie mixture on top of the bread, then the spinach.
- 5. Beat the eggs and milk with a fork until well combined then gently pour over the mixture in the pan then top with shredded cheddar
- 6. Bake for 20 minutes at 375°. Cut into 8 servings and ENJOY.
