TUNA BAGEL NICOISE

- Put the eggs in a saucepan and cover with cold water by 2 inches. Bring to a simmer over medium-high heat and cook 8 minutes. Remove with a slotted spoon to a bowl of ice water to cool, then peel and slice.
- Meanwhile, put the green beans in a microwave-safe bowl with 1/2 cup water and a pinch of salt. Cover loosely with plastic wrap and microwave until tender, 2 to 3 minutes. Drain and rinse under cold water. Cut the green beans in half.
- Drain the tuna and toss with the green beans, scallions, bell pepper, parsley, olives, lemon juice, 3 tablespoons olive oil, 1/4 teaspoon salt, and pepper to taste.
- Lightly toast the bagels. Layer the tomato slices, tuna salad and hard-boiled eggs on the bagel bottoms. Drizzle with olive oil and close with the bagel tops.

- Begin with the tuna salad. Combine ingredients in a large mixing bowl and stir to combine.
- Taste and adjust seasoning with salt and pepper.
- Take cut bagels and toast under a hot broiler until golden brown.
- While still hot, smear the cut side of each bagel with the cream cheese.
- Layer each half with red onion, tomato, cucumber and lettuce.
- Top with a scoop of the tuna salad and serve.

- Heat the grill. Split open the bagels, lay them on a baking sheet, then toast both sides until golden. Meanwhile, tip the tuna into a bowl and add the mayonnaise, lemon juice and spring onions. Season to taste and mix well.
- Spread the tuna mix over the bottom half of each of the 4 bagels and top with tomato slices. Sprinkle over a handful of grated cheddar, then grill for 1 min until melted. Finish with the bagel tops and serve.

BAGEL TUNA MELT
This is a favourite with my sister-in-law, although the tomato was my addition. I actually prefer cold tuna salad sandwiches, but this makes a nice change from that.

Steps:
- Preheat oven to 350F; have ready an ungreased baking sheet.
- In a mixing bowl, combine tuna, onion, pepper, mayo and worcestershire; taste and add salt and/or pepper if you wish.
- In the toaster, toast bagel halves; place all 4 on baking sheet.
- On a bagel half, place one slice tomato, then one-quarter of tuna mixture, then 1 slice cheese; repeat with other bagel halves.
- Bake for 5 minutes, or until cheese melts.
- If you wish, quickly broil to brown melted cheese.
- Note: if you like tuna melts real cheesy, use one slice of swiss AND one slice of mozzarella!

- Set oven control to broil. On cookie sheet, place bagels, cut sides up. Broil with tops 4 to 5 inches from heat 1 to 2 minutes or until desired brownness.
- In medium bowl, mix tuna, mayonnaise, mustard and onions. Divide tuna mixture among 4 bagel halves. Top with apple and cheese slices.
- Broil 1 to 2 minutes longer or until cheese is melted and tuna is warm.

- Preheat oven (or toaster oven) to 400 F. Line a baking sheet (or toaster-oven sized baking sheet) with silicon baking mat or spray with cooking spray.
- Spread a nice layer of tuna salad on each cracker, then top with a cracker-sized slice of cheese. Set on the prepared baking mat. Repeat, setting the crackers side by side on the prepared baking sheet.
- Remove from oven, top each Triscuit with a slice of tomato (or half-slice, depending on the size of your tomato), then sprinkle with the Everything Bagel Seasoning. Enjoy!
