I just returned from a trip to an Amish community where this incredible dish was served as a fundraiser. Each woman is in charge of topping your haystack with whatever ingredients you choose as you move down the line. By the time you're done, your haystack is mile high! Easily adapted for family use. MEAT SAUCE-
2 lbs. ground beef chuck
one envelope of taco seasoning
one large jar of your favorite spaghetti sauce
START YOUR BOWL OFF WITH A BASE-
fritos corn chips, tortilla chips, or broken ritz crackers
THEN START PILING ON-
warm amish noodles or hot rice
HOW HIGH CAN YOU GO?! OPTIONAL INGREDIENTS-
shredded lettuce
chopped tomatoes
chopped green or red peppers
sliced black olives
chopped green onions
warmed pinto or black beans
shredded cheddar cheese
TOP OFF YOUR MOUNTAIN WITH-
creamy, warm cheese sauce or salsa, guacamole and sour cream and additional shredded cheddar

Steps:

  • 1. Brown your ground beef and drain. Add spaghetti sauce and taco seasoning. Prepare noodles or rice as per package instructions. Keep beef and rice or noodles warm as you prepare veggies.
  • 2. To serve: Each person gets a large bowl. Start with a base of tortilla chips, broken Ritz crackers or Fritos corn chips. Start your haystack with a pile of hot rice or hot noodles. Top with meat sauce. Then move on down the line forming a large mound or haystack with your chosen optional ingredients. Top with either warm, creamy cheese sauce or salsa, guacamole, additional shredded cheddar and sour cream. The height of your haystack is up to you! Enjoy!

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2 cups cubed cooked chicken
1/2 cup water
Hot cooked rice
TOPPINGS:
Cooked peas, raisins, pineapple tidbits, shredded cheddar cheese, sliced ripe olives, chow mein noodles and/or mandarin oranges

Steps:

  • In a microwave-safe bowl, combine the soup, chicken and water. Cover and microwave on high for 2-3 minutes or until heated through. Serve over rice. Top with toppings of your choice.

2 cups kidney beans, cooked
1 teaspoon salt
2 tablespoons chili powder
1 teaspoon ground black pepper
1 (14.5 ounce) package corn tortilla chips
1 head iceberg lettuce - rinsed, dried, and shredded
2 large tomatoes, chopped
1 green bell pepper, chopped
1 onion, chopped
1 (10 ounce) can chopped black olives
1 carrot, shredded
1 cup shredded Cheddar cheese
½ cup sour cream
1 cup salsa

Steps:

  • In a medium saucepan, combine the kidney beans, salt, chili powder and pepper. Cook over medium heat until heated through.
  • To assemble the haystacks put a hand full of corn chips on a plate, follow with a spoonful of heated bean mixture, lettuce, tomato, green pepper, onions, olives, carrot, and cheddar cheese. Top with salsa and sour cream.

1 tablespoon olive oil
4 skinless, boneless chicken breast halves, cut into small cubes
½ cup chicken broth
1 (10.75 ounce) can cream of mushroom soup
1 teaspoon dried basil
1 teaspoon dried parsley
4 cups cooked rice
1 cup chopped pineapple
1 cup chopped green bell pepper
1 cup shredded Cheddar cheese
1 cup chopped fresh tomatoes
1 cup chow mein noodles
½ cup toasted sliced almonds
½ cup chopped green onions
½ cup shredded coconut

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir chicken in the hot oil until no longer pink in the center, 5 to 7 minutes. Add chicken broth; simmer until slightly reduced, about 5 minutes. Mix cream of mushroom soup, basil, and parsley into chicken mixture until smooth; cook until warmed, about 5 minutes. Transfer chicken sauce to a small bowl.
  • Spread cooked rice onto a serving platter; top with chicken sauce. Layer pineapple, green bell pepper, Cheddar cheese, tomatoes, chow mein noodles, almonds, green onions, and coconut, respectively, onto chicken sauce.

1 3/4 cups crushed saltines (about 40 crackers)
2 cups cooked rice
3 lbs ground beef
1 large onion, chopped
1 1/2 cups tomato juice
3/4 cup water
3 tablespoons taco seasoning mix
seasoning salt
pepper
4 cups shredded lettuce
3 medium tomatoes, diced
1/2 cup butter
1/2 cup all-purpose flour
4 cups milk
1 lb Velveeta cheese, cubed
3 cups shredded sharp cheddar cheese
1 (10 ounce) jar stuffed olives, drained and sliced
1 (14 1/2 ounce) package tortilla chips

Steps:

  • Divide crackers between two ungreased 13x9x2-inch baking dishes. Top with rice.
  • In a skillet, cook beef and onion until meat is no longer pink; drain.
  • Add tomato juice, water and seasonings; simmer for 15-20 minutes. Spoon over rice. Sprinkle with lettuce and tomatoes.
  • In a saucepan, melt butter. Stir in flour until smooth. Gradually add milk and Velveeta. Bring to a boil; cook and stir for 2 minutes.
  • Pour over the tomatoes. Top with cheddar cheese and olives.
  • Serve with chips. Refrigerate any leftovers.

Based on a prize winner from Newman's The Hole in the Wall Gang Cookbook. This is a big hit with large groups of teenagers. Since it's "build your own haystack" there's something for everyone. Serve with dinner rolls for the unadventurous who would rather have a sloppy joe and salad. I also serve with bottled Italian salad dressing for those who want a "wetter" haystack.

1 (1 1/4 ounce) package taco seasoning mix
1 (14 ounce) jar spaghetti sauce
2 cups saltines, crushed
2 -3 cups tortilla chips, crushed
2 cups cooked rice
1 head iceberg lettuce, chopped fine
2 cups tomatoes, diced
1 cup carrot, chopped
1 cup green onion, chopped
1 cup sliced ripe olives
1 cup red pepper, diced
1 cup celery, diced
1 1/2 cups cheddar cheese, shredded
1 cup cooked bacon, crumbled
1 cup sunflower seeds
1 (11 ounce) jar salsa
Italian salad dressing (optional)

Steps:

  • Brown the ground beef with the taco seasoning in a skillet over medium-high heat.
  • Add the spaghetti sauce and simmer until the meat is cooked through and the liquid evaporates.
  • Don't crush the saltines or tortilla chips too finely.
  • Place all ingredients in individual serving bowls.
  • Each person can make their own "haystack". The traditional order for layering is lettuce, crushed crackers and chips, meat mixture, rice, each of the veggies, cheese, bacon, sunflower seeds, and salsa (plus Italian dressing if added).

3 stalks celery, chopped
