Sweet and tangy, delicious Hawaiian chicken. This chicken is sautéed with peppers and pineapple and a tasty Hawaiian inspired sauce for a perfect weeknight meal.

2 pounds boneless skinless chicken breasts (diced)
Salt and Pepper to taste
2 cups diced bell peppers (red, orange, yellow mix)
1 fresh pineapple (diced)
3 cups Cooked white rice
1 Tbs olive oil
3 Tbs Soy Sauce
3 Tbs dark brown sugar
2 Tbs rice vinegar
½ tsp ground ginger
1 Tbsp minced garlic
1/2 cup barbecue sauce
½ cup pineapple juice

Steps:

  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken with salt and pepper then add to the skillet.
  • Sear outside until a nice golden crust forms.
  • Remove chicken from pan, add in peppers and saute for 3-5 minutes until tender, remove from pan
  • Add sauce ingredients to pan, and bring to a simmer, add chicken back in, and cook on medium-low heat, letting sauce reduce while chicken cooks through.
  • Add peppers and pineapple to pan, and cook a few minutes more, until sauce is thick, sticky, and glossy, and peppers are tender
  • Serve over cooked white rice.

3 tablespoons butter
1 medium red onion, halved and thinly sliced
2 medium pears, thinly sliced

1/2 cup balsamic vinaigrette
1/2 teaspoon dried thyme
2 packages (8.8 ounces each) ready-to-serve long grain and wild rice

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, brown chicken in butter; remove and keep warm. In the same skillet, saute onion until tender. Add pears and brown sugar; cook 3 minutes longer. Stir in vinaigrette and thyme., Return chicken to skillet. Bring to a boil. 1 medium onion, cut into 1/4-inch thick rings
1 cup chicken broth
1 (8 ounce) can pineapple chunks, undrained
2 tablespoons lemon juice
3 tablespoons reduced-sodium soy sauce
1 tablespoon cornstarch
½ teaspoon dry mustard
6 skinless chicken thighs
1 small red bell pepper, cut into 1/4-inch rings

Steps:

  • Heat canola oil in a skillet over medium heat. Add onion rings and cook and stir for 3 minutes. Pour in chicken broth, pineapple juice, and lemon juice carefully. Bring to a boil.

6 skinless, boneless chicken breast halves
2 cups teriyaki sauce, divided
6 pineapple rings
½ cup butter, melted
¾ cup packed brown sugar
¾ cup soy sauce
¾ cup unsweetened pineapple juice
6 tablespoons Worcestershire sauce

Steps:

  • Place the chicken breast halves in a dish with the 1 1/2 cups of teriyaki sauce. Cover and refrigerate 8 hours or overnight.
  • Preheat a grill for high heat.
  • Lightly oil the grill grate. Place chicken breasts on grill, and discard marinade. Cook for 8 minutes per side, or until juices run clear. Brush with the remaining teriyaki sauce during the last 5 minutes. When almost done, place one pineapple ring on top of each breast, and brush with melted butter.
  • In a small saucepan over medium heat, mix the brown sugar, soy sauce, pineapple juice, and Worcestershire sauce. Cook, stirring occasionally, until sugar is dissolved. Serve with chicken for dipping!

4 fresh Anjou pears or 4 canned pears
1 lb chicken, sliced into 2 x 1/2 x 1/2 inch strips
3 tablespoons butter or 3 tablespoons margarine
1 (8 ounce) can pineapple chunks
1 green pepper, seeded and sliced
1/2 cup cashew nuts
2 tablespoons packed brown sugar
1 tablespoon cornstarch
1/3 cup water
2 tablespoons soy sauce
1/2 teaspoon vinegar

Steps:

  • Core and slice pears, if using fresh. Sauté chicken in butter 3 to 5 minutes or until juices run clear. Drain pineapple; reserve 1/3 cup liquid.
  • Add pears, pineapple, green pepper and cashews to chicken; heat thoroughly.
  • Combine brown sugar, cornstarch, reserved pineapple liquid, water, vinegar and soy sauce in saucepan. Cook and stir over low heat until mixture thickens; cook 1 minute longer. Pour sauce over pear-chicken mixture and toss gently. Warm to serving temperature.
  • I sometimes add extra white sugar to sweeten it to my liking, and always double the sauce.

This is a recipe that has been a family favorite for decades. My aunt gave it to my mom when she asked for it, I don't know where my aunt got this recipe. We would serve this on top of some white rice.

6 large chicken breasts, cut in half
1/2 cup butter
1 (15 ounce) can pineapple chunks
1/2 cup pressed brown sugar
4 tablespoons cornstarch
1/4 cup very hot water
2 teaspoons salt
1/2 cup vinegar
1 teaspoon Worcestershire sauce
2 teaspoons chili powder
2/3 cup ketchup
2 teaspoons soy sauce

Steps:

  • Set oven to 350°F.
  • Place chicken in baking dish.
  • Melt butter in large skillet on low heat.
  • Mix corn starch and hot water in glass or small bowl until well blended; set aside.
  • Add excess pineapple juice from can of pineapple chunks.
  • Sprinkle pineapple chunks over chicken.
  • Mix brown sugar, salt, vinegar, worcestershire sauce, and chili powder in skillet until well blended.
  • Turn skillet to medium heat and let simmer for 2 minutes.

Steps:

  • Heat the oven to 450 degrees with a rack in the center.
