My family has a longstanding tradition of baking cookies together at Christmas to give as gifts. Its a big production and one that we truly enjoy as it is the one time of year where we regulary spend weekends in Mom's kitchen measuring, mixing, baking and decorating thousands (yes thousands) of cookies. We are always on the lookout for new additions to our trays and this German bar cookie looks to have some possibilities as the original recipe indicates that it stores well. The ingredient list is not a mistake - just exacting in the amounts needed to result in a perfect bar. Made a half batch to test and the result is an incredibly rich, almost candy-like, bar. I've checked out several versions and the glaze seems to be optional. That said, it does give the finished product a nice gloss.

4 eggs
1 cup sugar
4 teaspoons sugar
1 cup grated baking chocolate or 1 cup bittersweet chocolate
4 teaspoons grated baking chocolate or 4 teaspoons bittersweet chocolate
1 cup chopped almonds
4 teaspoons chopped almonds
1 cup raisins
4 teaspoons raisins
1 cup flour
4 teaspoons flour
1/4 teaspoon baking powder
1/3 cup milk
3 tablespoons powdered sugar

Steps:

  • Preheat oven to 300 degrees.
  • Beat the eggs with the sugar till foamy.
  • Add the remaining ingredients one by one, ending with the flour and baking powder together.
  • Spread dough into a large greased 11 inch baking pan. Bake for 28-32 minutes. The top should look dry and crusty with some nice cracks.
  • When done, ice with a mixture of milk and powdered sugar. Let cool 2 hours or more and cut into small squares. (They are good before the, just a bit of a mess.).
  • Stored in a cookie tin and refrigerated, these bars keep for quite a while.

During the holidays my family has a longstanding tradition of baking cookie trays for family and friends. This year, my circle includes a friend who has been advised by her doctor to dramatically reduce her carbohydrate intake. Not wanting to leave her out of the cookie circle, I tracked this recipe down on the web and have posted it here for others interested in low-carb baking. The resulting cookie is a little crumbly like a shortbread with a soft nutty flavor. I like the variation, my own, of adding the egg as the cookie holds together more and has a thin marzipan like center. A bit too rich for my low-fat taste buds but a certain hit for a low-carb diet. According to the recipe these have about 2.7g carbs per cookie.

2 cups almond flour
1/2 cup Splenda Sugar Blend for Baking
1/2 cup softened butter, replace with what ingredient (if you want cookie that holds together a little more easily replace 2 tablespoons of butter with 1 l)
1/2 teaspoon salt (if using salted butter, omit salt here)
1 teaspoon vanilla extract
1 teaspoon almond extract
1 egg (optional)

Steps:

  • Preheat oven to 300°F.
  • Using and electric mixer blend softened butter for a minute. Add remaining ingredients and mix together.
  • Form dough into walnut sized balls and place onto ungreased cookie sheet. The oil from the butter and almond flour grease the sheet as the cookie bakes.
  • Bake for 5 minutes. Press down lightly with fork, then continue to bake another 18 minutes. The cookies do not brown.
  • Let cool on sheet for 5 minutes before removing.
  • For a more festive look, you can drizzle a little melted chocolate (sugar-free, of course) on top.

1 cup brown sugar, firmly packed
1/2 cup butter
4 eggs
3 cups flour
1/2 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon nutmeg
1 lb pecan halves (1/2 lbs chopped)
1 lb raisins, optional
1 lb candied cherry
1 lb candied pineapple
3 tablespoons milk
3 teaspoons baking soda
1/2 cup whiskey

Steps:

  • Cream the brown sugar and the butter together.
  • In separate bowl mix flour and spices together.
  • Chop the candied fruits into small pieces.
  • Out of flour take 1/2°C and dredge the chopped fruit and pecans.
  • In separate container combine the milk and the baking soda.
  • Add eggs to the creamed butter and sugar.
  • Alternate adding the egg butter mixture with the whiskey into the flour mixture.
  • Pour in the fruit and nuts and mix.
  • Drop from a small spoon onto slightly greased cookie sheet.
  • Bake 13-15 minutes.

  • In a food processor, pulse the flour with the granulated sugar and salt. Add the butter and pulse until the mixture resembles coarse meal with some pea-size pieces remaining. Add the egg and vanilla and pulse until the dough just comes together. Scrape out onto a work surface and pat into a disk. Wrap in plastic and refrigerate until chilled, about 1 hour.
  • Preheat the oven to 350° and line 2 large rimmed baking sheets with parchment paper. On a lightly floured work surface, roll out the dough 1/4 inch thick. Using a 2-inch round cookie cutter, stamp out cookies as close together as possible; transfer to the prepared baking sheets. Gather the scraps, re-roll and stamp out more cookies.   • Bake the cookies for about 20 minutes, until golden; rotate the baking sheets from top to bottom and front to back halfway through baking. Transfer to a rack to cool.
  • In a small saucepan, warm the jam over moderate heat, stirring, until runny, about 3 minutes. Brush a thin layer of jam on 24 of the cookies and top with the remaining cookies.
