CRISP SEARED SKATE WING ON SWEET PEA SHOOTS, SLIVERED ALMONDS AND LEMONGRASS VINAIGRETTE



Crisp Seared Skate Wing on Sweet Pea Shoots, Slivered Almonds and Lemongrass Vinaigrette image

Number Of Ingredients 20

2 tablespoons, plus 3/4 cup, olive oil
1/4 cup fresh ginger, peeled (keep the scraps) and finely diced
1/2 cup lemongrass (trim the top by 30%, peel several outer layers away, and then finely dice center; keep the scraps)
1/4 cup shallots, peeled and finely diced (keep the scraps)
1 cup vegetable stock (you may also use canned broth)
1/4 cup fish sauce
1 tablespoon hot pepper sauce
1/4 cup soy sauce
1 teaspoon fresh thyme
4 tablespoons lime juice
4 tablespoons balsamic vinegar
2 tablespoons pink peppercorns
2 medium turnips
1/2 cup slivered almonds
4 (6-ounce) skate wings, skin removed
4 ounces butter, room temperature
Salt and pepper, to taste
2 tablespoons olive oil
1 cup snow peas, cut into thin strips
3 cup snow pea shoots, loosely packed

Steps:

  • Vinaigrette: Combine 2 tablespoons of olive oil with the ginger, lemongrass and shallots in a large sauce pot over medium heat, and cook, stirring until the vegetables are soft and translucent, about 3 to 5 minutes. Meanwhile, combine the vegetable stock with the ginger, lemongrass and shallot trimmings in a sauce pot over medium heat (the scraps will infuse the stock with even more flavor). When the sauteed vegetables are ready, strain the stock into the pot, then add the fish sauce, hot pepper sauce, soy sauce, thyme, lime juice, balsamic vinegar and peppercorns to the pot. Bring the liquid to a very low simmer, and cook for 5 minutes. Turn off the heat and whisk in the remaining olive oil. Remove the pot from the burner and set aside until cool. You may store the vinaigrette in an airtight container for up to 1 week in the refrigerator.
  • Skate: Preheat the oven to 275 degrees. Slice the tops and bottoms from the turnips and peel away the outer skin. Using the julienne blade on a mandolin (or a very sharp knife), julienne the turnip, slicing it into very thin, match-stick size pieces. Set aside.
  • Spread the almonds on a non-stick sheet pan, and toast in the middle of the oven for 10 to 12 minutes, or until you can just begin to smell them toasting. Remove the pan from the oven and transfer the almonds to a plate or bowl. Set aside.
  • Place a large, non-stick saute pan over medium-high heat. As it warms, brush the skate on 1 side with the softened butter. Season with salt and pepper, and add the skate to the hot pan, buttered-side down. Season again with salt and pepper. Let the skate sear without moving it, so the fish forms a crispy brown crust. When well browned, turn the skate and brown on the other side.
  • While the skate is searing, warm another medium-sized saute pan over medium heat. Add 2 tablespoons olive oil, swirl to coat the bottom, and add the turnips and snow peas to the pan. Season with salt and pepper and cook, tossing frequently so that the vegetables cook evenly until crisp-tender. After 30 seconds, add the snow pea shoots. Toss, add the almonds, and remove from heat and mound in the center of 4 warm dinner plates. Top each with 1 piece of skate. Mix the vinaigrette well and ladle over the top of the fish, scattering the dressing and seasonings over the flesh. Serve.

4 boneless, skinless skate wings, about 1 1/2 pounds total
1/2 cup milk
Salt and freshly ground pepper to taste
4 tablespoons all-purpose flour for dredging
3 tablespoons vegetable or corn oil
4 tablespoons butter
1/2 cup sweet red peppers cut into 1/4-inch cubes
1/3 cup drained capers
2 tablespoons finely chopped shallots
2 tablespoons red wine vinegar
4 tablespoons finely chopped parsley

Steps:

  • Put the skate fillets in a dish large enough to hold them in one layer. Pour the milk over them and sprinkle with salt and pepper to taste. Turn the fillets in the milk so they are coated on both sides.
  • Scatter the flour over a large dish. Lightly dredge the fillets in the flour on both sides.
  • Heat the oil in a large nonstick skillet over medium-high heat. When the oil is hot but not smoking, add the fillets. If it is necessary to do this in two batches, use the same oil. Saute on one side until golden brown, about 3 minutes. Turn and cook on the other side until golden brown, about 3 minutes more. When the fillets are done, transfer them to a warm platter or serving plate.
  • Wipe out the pan with a paper towel and return the skillet to the heat. Melt the butter and add the red peppers, shaking the pan frequently until the butter turns light brown. Add the capers, cook briefly, and add the shallots, vinegar and parsley. Cook briefly; then stir and pour the sauce over each fillet evenly. Serve immediately.

8 ounces shallots, coarsely chopped
6 to 8 jalapeno chiles, , or other hot chiles, seeded and coarsely chopped (for a hotter sauce, leave the seeds in)
3 to 4 stalks lemongrass, , large, trimmed and coarsely chopped, or 3 strips lemon zest (each 2 x 1/2 inches removed with a vegetable peeler)
2 heads garlic, peeled
1/2 cup vegetable oil
1/3 cup lime juice, fresh, or more to taste
2 tablespoons orange juice, fresh, or additional lime juice
2 tablespoons sugar, or more to taste
1 1/2 tablespoons soy sauce, or more to taste
1 teaspoon salt, or more to taste
1/2 teaspoon turmeric, ground
1/2 cup coconut milk, canned or fresh

Steps:

  • 1. Combine the shallots, chiles, lemongrass, garlic, oil, 1/3 cup lime juice, the orange juice, 2 tablespoons sugar, 1 1/2 tablespoons soy sauce, 1 teaspoon salt, and the turmeric in a blender and process until almost smooth the sauce should remain a little chunky.2. Transfer the mixture to a small, heavy saucepan and cook over medium heat until slightly reduced, nicely browned, and richly flavored, 15 to 20 minutes, stirring frequently. Stir in the coconut milk and simmer the sauce until thick and creamy, about 5 minutes longer. Remove from the heat and taste for seasoning, adding salt, sugar, soy sauce, or lime juice as necessary the sauce should be a little sweet, a little tart, and very aromatic.3. If not using immediately, cool the sauce to room temperature, then transfer to a clean jar and store, tightly covered, in the refrigerator. It will keep for several weeks.Makes 1 1/2 to 2 cups

1 snapper, , whole, pompano, or other large fish (4 to 5 pounds), cleaned and trimmed of fins, head and tail left on
3 goat peppers, scotch bonnet chiles, or habanero chiles
4 limes, large, juicy
salt and freshly ground black pepper, to taste
1 piece ginger, (2 inches), fresh, peeled and thinly sliced
2 cloves garlic, thinly sliced
1 to 2 tablespoon olive oil (not traditional, but I like it)

Steps:

  • 1. Rinse the fish, inside and out, under cold running water, then drain and blot dry with paper towels. Make 4 or 5 diagonal slashes, to the bone, in each side of the fish. Set the fish aside.2. Thinly slice 2 of the chiles cut the other chile lengthwise in half. Cut one of the limes in half lengthwise, then into thin crosswise slices. Cut the second lime in half crosswise. Juice the remaining limes.3. Rub the fish all over with the cut chile and lime. Sprinkle salt and pepper in the cavity and into the slashes in the sides of the fish. Place a slice each of chile, lime, ginger, and garlic in each slit and under each gill, then place the remaining slices in the cavity. Place the fish on the banana leaf or foil on a large platter. Pour the lime juice over the fish and season again with salt and pepper, then drizzle with oil, if using. Cover and let the fish marinate, in the refrigerator, for 30 minutes or so while you preheat the grill.4. Set up the grill for indirect cooking and preheat to high.5. When ready to cook, place the fish, on its banana leaf, in the center of the grill away from the heat. Cover the grill, and cook the fish until the flesh breaks into firm flakes when pressed with a finger, 1 to 1 1/2 hours. If using a charcoal grill, you'll need to add 10 to 12 fresh coals after 1 hour.6. Using two long spatulas, carefully transfer the fish to a serving platter. At the table, fillet the fish.Serves 4

3 pounds chicken wings
1 pinch garlic powder
1 pinch cayenne pepper
1 ⅓ cups white sugar
1 cup white vinegar
½ cup chicken broth
2 tablespoons ketchup
2 tablespoons soy sauce

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Wash chicken wings and pat dry. Sprinkle lightly with garlic powder and cayenne pepper.
  • Cook on the preheated grill, turning every few minutes, until crispy on the outside and no longer pink at the bone and the juices run clear, 20 to 25 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • While the wings are grilling, whisk sugar, vinegar, chicken broth, ketchup, and soy sauce together in a large saucepan over medium-high heat. Bring to a boil. Cook until sauce is rendered to 1/2 of the original volume.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place wings in a large baking dish and drizzle sauce over top.
  • Bake in the preheated oven until flavors have intermingled, 10 to 15 minutes.

2 teaspoons curry powder
1/4 teaspoon cloves, ground
1 to 2 serrano chile, , or other hot chiles, seeded and minced (for a hotter mixture, leave the seeds in)
6 tablespoons water
2 tablespoons Worcestershire sauce
salt and freshly ground black pepper, to taste
1/2 cup sweet and sour sauce, Nonya (see recipe), or as needed
1 to 2 tablespoon vegetable oil, for brushing

Steps:

  • 1. Preheat the grill to high.2. Cut the skate wings crosswise (in the same direction as the bones) into 1-inch strips. Butterfly each strip by cutting it in half lengthwise as far as, but not through, the bottom piece of skin. Spread the halves open, then set the strips aside while you prepare the basting mixture.3. Combine the coriander, curry powder, cloves, chile, water, Worcestershire sauce, salt, and pepper in a bowl and whisk until smooth (see Note).4. When ready to cook, preheat a fish or vegetable grate (if using) for 5 minutes, then oil it or the grill grate. Arrange the skate pieces on the hot grate and grill until nicely browned on the bottom, 2 to 4 minutes. Using a long spatula, carefully turn the pieces over and brush each with 1 to 2 tablespoons of the Nonya Sweet-and-Sour Sauce. Grill until browned on the second side and the meat flakes easily when pressed with a finger, 2 to 4 minutes longer.5. 2 pounds cod filets, salt
2/3 cup olive oil, extra-virgin
8 cloves garlic, thinly sliced
1/2 teaspoon black pepper, cracked or coarsely ground

  • 1. Place the salt cod in a large bowl and pour in enough cold water to cover by 1 inch. Cover with plastic wrap and place in the refrigerator to soak for 24 hours. Using the spatula, transfer the fish to a heatproof platter. Divide the garlic slices among the fish pieces, concentrating them in the center sprinkle with the coarse pepper. Pour the hot oil over the fish, especially where the garlic is (the garlic should sizzle and brown). Serve immediately, accompanied by lemon wedges.Serves 4
