PERFECT HASH BROWNS
When it comes to breakfast potatoes, most people fall into one of two camps: home fries or hash browns. This recipe from Alison Roman shows you how to make an ideal batch of the hashed variety that are aggressively crisp on the outside and creamy tender on the inside. To ensure ultimate crispness, be sure to rinse the grated potatoes with cold water until the water runs nearly clear and to use a very hot, well-seasoned pan. As with all potato dishes, remember to season well.

- Grate potatoes on the largest hole on a box grater into a medium bowl. Cover with cold water and drain; repeat once or twice, until water runs nearly clear. Taking small handfuls at a time, squeeze all the water from the potatoes and place in a dry medium bowl. Grate onion on the largest hole on a box grater and toss with potatoes. Season with salt and pepper.
- Taking small handfuls at a time, squeeze all water from the potato-onion mixture. Heat 2 tablespoons reserved bacon fat or vegetable oil in skillet over medium heat, add 1 tablespoon butter and swirl together.
- Add potatoes and onions and spread into a thin, even layer. Cook, without moving, until the potatoes are nearly cooked through and browned on one side, about 5 to 8 minutes. Using a spatula, flip sections of the potatoes to crisp on the other side. Add 1 tablespoon reserved bacon fat or vegetable oil and remaining 1 tablespoon butter and cook, without moving, until potatoes are browned on the other side, about another 5 minutes. Flip once or twice more (you don't have to be so careful here; just kind of stir them around) and continue to cook until most of the bits of potato are golden brown and crisped, about another 4 minutes.
- Transfer potatoes to a plate. Serve with hot sauce (or ketchup, if you wish).

- Shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.
- Heat clarified butter in a large non-stick pan over medium heat. Sprinkle shredded potatoes into the hot butter and season with salt, black pepper, cayenne pepper, and paprika.
- Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Continue to cook and stir until potatoes are browned all over, about 5 more minutes.

- Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
- Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
- Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

MAMA'S FRY BAKES ( ST. VINCENT AND THE GRENADINES)
West Indian breakfast bread. Fry bakes is the Trinidadian name. The rest of the Caribbean calls this Johnny Cakes. According to Côte-Çi, Côte-Là: Trinidad & Tobago Dictionary, by John Mendes, © 1986, "A Johnny Bake was originally called a journey bake, cooked especially so that it will remain edible on a long journey." It is a simple dough which can be roasted baked or fried. Stuff it with cheese, or with fried fish, or sausages or Recipe #220176 (salted cod fish). They are delicious plain, warm and slathered in butter. My 'Mama' (Grandma) on Canouan Island in the Grenadines made the best fried bakes that I know. I have tried to re-create her recipe. The yeast in this recipe is my personal preference. Traditionally this recipe does not use yeast. Will yield a marginally denser (no less delicious) bake without the yeast.

- If not using yeast, omit step 6. The dough can be rolled out and fried immediately.
- Mix together the flour, salt, baking powder and yeast.
- Rub in the shortening.
- Add sufficient water to the flour mixture to make a smooth dough.
- Knead dough lightly until smooth.
- Cover with a damp cloth and leave dough to relax for ½ hr).
- After dough has rested for ½ hour, divide and shape into 12 balls.
- Roll each ball of dough on a lightly floured surface, to 1/4 " thick and 3 1/2" round.
- Fry in hot oil until brown on both sides.
- Put on paper towels to absorb excess oil.
- These freeze well and can be reheated in the microwave.

VEGGIE DELIGHTFUL SANDWICH à LA SUBWAY
My sandwich of choice from Subway. This is my homegrown version with the addition of avocado! For the bread I used recipe #141038 and by special request recipe #67854 (onion sauce) to top it all off. I don't make these as often as I should, but when I do, the sandwiches are served with fresh fruit in season and a small bag of multi-grain SunChips. Hubby and I always fight over the last SunChip! Note: omit the red onion slices if using the onion sauce.

- Put the potatoes in a pot, cover with cold water and boil for 10-15 minutes; Drain them well, cool, then peel and grate them.
- Heat 2 tablespoons of butter in a medium skillet; Add the onions and pancetta and sauté for 5 to 6 minutes, just until the onions become tender; Add the potatoes, salt and pepper; Mix well.
- Melt the remaining butter and add to the potatoes, gently pressing them tightly together forming a galette...they will look like one giant hash brown; Let it cook for 10 minutes, adding a little butter around the edges and shaking the pan often.
- While gently turning the galette over with a large plate or extra large spatula, add some butter to the pan; Let the galette slide back into the pan to cook the other side; Add more butter and let it cook until golden brown, around 7 minutes; Remove the pan from the stove and keep the galette warm.
- In another pan, heat the rest of the butter; Add the mushrooms and sauté for 3 to 5 minutes, just until they are tender, but still firm; Add salt, pepper and the parsley; Put this mixture on top of the galette.
- *To clarify butter: melt the butter over low heat, then cool in the refrigerator; Gently pour the pure butter in a separate bowl, and discard the watery deposit.
