A simple and delicious ham and cheese quiche that's good any time!

1 (9 inch) frozen pie crust
4 eggs
1 ½ cups milk
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) package diced cooked ham
2 tablespoons melted butter
1 tablespoon dried chives
1 pinch salt to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place pie crust on a cookie sheet.
  • Beat eggs together in a mixing bowl. Add milk, Cheddar cheese, ham, butter, chives, and salt; mix well. Pour into the pie crust.
  • Bake in the preheated oven for 35 minutes. Increase oven temperature to 400 degrees F (200 degrees C) and bake until top is slightly browned, about 10 minutes.

3-1/2 cups biscuit/baking mix
1 cup 2% milk
2/3 cup shredded cheddar cheese
1/2 cup chopped green pepper
2/3 cup cubed fully cooked ham or 3-1/2 ounces Canadian bacon, cubed
4 large eggs or 1 cup egg substitute
2 to 3 tablespoons prepared horseradish
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed

Steps:

  • Preheat oven to 375°. Stir together biscuit mix and milk to form a soft dough. On a lightly floured surface, pat dough to 1/4-in. thickness; cut 12 biscuits using a floured 3-1/2-in. round cutter. Press each onto bottom and up sides of a greased muffin cup., Divide cheese, green pepper and ham among cups. Whisk together eggs, horseradish, salt and pepper; pour into cups. Sprinkle with rosemary., Bake until eggs are set, 20-25 minutes. Let stand 5 minutes before removing from pan.

8 ounces cream cheese softened
2 tablespoons milk
2 Eggs
1/2 cup Swiss cheese shredded (Cheddar works also)
2 tablespoons Green onion chopped
10 can flakey biscuit dough
1/2 cup ham finely chopped
OR crisp fried bacon
1/4 cup jalapeno pepper (chopped optional)

Steps:

  • Preheat oven to 375F. Grease muffin cups. Beat cream cheese, milk, and eggs until smooth. Stir in cheese and onions. Separate dough into biscuits. Optionally you can then split each biscuit in half again. (this is why flakey dough works best). Place one biscuit in each cup pressing down to form a "biscuit cup". You should be able to form about a 1/4 inch "rim". Place 1/2 of ham at the bottom of the biscuit cups. Spoon about 2 Tbs. of egg mixture into each cup. Top with remaining ham and bake until filling is set and edges of biscuits are golden brown. About 25 minutes should do it. Remove from pan and serve immediately. They also travel well if you're going to a pot luck or other event. Makes 16 biscuit cups

1/3 pound bulk pork sausage
1 tablespoon all-purpose flour
1/8 teaspoon salt
1/2 teaspoon pepper, divided
3/4 cup plus 1 tablespoon 2% milk, divided
1/2 cup frozen cubed hash brown potatoes, thawed
1 tablespoon butter
2 large eggs
1/8 teaspoon garlic salt
1 can (16.3 ounces) large refrigerated flaky biscuits
1/2 cup shredded Colby-Monterey Jack cheese

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in the flour, salt and 1/4 teaspoon pepper until blended; gradually add 3/4 cup milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat and set aside., In another large skillet over medium heat, cook potatoes in butter until tender. Whisk the eggs, garlic salt and remaining milk and pepper; add to skillet. Cook and stir until almost set., Press each biscuit onto the bottom and up the sides of 8 ungreased muffin cups. Spoon the egg mixture, half the cheese, and sausage into cups; sprinkle with remaining cheese., Bake at 375° for 18-22 minutes or until golden brown. Cool 5 minutes before removing from pan. Freeze option: Freeze cooled biscuit cups in a freezer container, separating layers with waxed paper. To use, microwave 1 frozen biscuit cup on high for 50-60 seconds or until heated through.

1 package (14.1 ounces) refrigerated pie crust
2 cups diced fully cooked ham
2 cups shredded sharp cheddar cheese
2 teaspoons dried minced onion
4 large eggs
2 cups half-and-half cream
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400°. Unroll pie crusts into two 9-in. pie plates; flute edges. Line unpricked pie crusts with a double thickness of heavy-duty foil. Fill with pie weights, dried beans or uncooked rice. Bake until light golden brown, 10-12 minutes. Remove foil and weights; bake until bottom is golden brown, 3-5 minutes longer or Cool on wire racks., Divide ham, cheese and onion between shells. In a large bowl, whisk eggs, cream, salt and pepper until blended. Pour into crusts. Cover edges loosely with foil. Bake until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 5-10 minutes before cutting. Freeze option: Cover and freeze unbaked quiche. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 350°. Place quiche on a baking sheet; cover edge loosely with foil. Bake as directed, increasing time as necessary for a knife inserted in the center to come out clean.

3 ounces cream cheese, softened
2/3 cup sour cream
2 large eggs, lightly beaten
1/2 cup shredded Swiss cheese
4 bacon strips, cooked and crumbled
2 tablespoons finely chopped sweet red pepper
1/4 teaspoon dried oregano
1 tube (10 ounces) refrigerated biscuits

Steps:

  • In a bowl, beat cream cheese and sour cream until smooth. Add eggs; mix well. Stir in Swiss cheese, bacon, red pepper and oregano; set aside. Separate dough into 10 biscuits; flatten into 5-in. circles. Press onto the bottom and sides of 10 greased muffin cups. Divide the egg mixture among biscuit-lined muffin cups, using about 2 tablespoons for each. , Bake at 375° for 18-20 minutes or until a knife inserted in the center comes out clean.
