Ham 'N' Corn Fritters image

This old-fashioned recipe's pretty golden fritters are a perfect addition to any down-home brunch. You'll be amazed at how quickly they disappear. -Nelda Cronbaugh, Belle Plaine, Iowa

Number Of Ingredients 10

2 large eggs
1/3 cup 2% milk
1-1/4 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
Dash pepper
1 cup fresh or frozen corn, cooked and drained
1 cup chopped fully cooked ham
Oil for deep-fat frying

Steps:

  • Separate eggs; let stand at room temperature for 30 minutes. In a large bowl, beat egg yolks until slightly thickened. Beat in milk. Combine the flour, sugar, baking powder, salt and pepper; add to yolk mixture and mix well. Stir in corn and ham. , In a small bowl, beat egg whites on high speed until stiff peaks form. Fold into the corn mixture., In an electric skillet or a deep-fat fryer, heat oil to 375°. Drop batter by heaping tablespoonfuls, a few at a time, into hot oil. Fry until golden brown, about 1 minute on each side, turning with a slotted spoon. Drain on paper towels.

1 cup self raising flour
2 eggs
1 1/2 cups skim milk
2 fresh corn on the cob, kernels removed or 1/2 cup frozen corn kernels
200 g 98% fat-free ham, finely chopped
60 low-fat cheese, grated
1 tablespoon hot English mustard (french if you it milder)
1 shallot, chopped
4 tablespoons chutney (i use mango but fruit would be nice as well)

Steps:

  • Place the flour in a medium mixing bowl.
  • Combine the eggs and milk.
  • Stir egg mixture into the flour with the corn, ham, cheese, mustard and shallot.
  • Mix well.
  • Coat a medium frying pan with cooking spray heat and drop 1/4 cup portions of the batter onto the pan.
  • Cook on low for 2-3 mins on each side until golden.
  • Serve with the chutney.

  • Heat a frying pan, add a film of oil and drop heaped tablespoonfuls of the batter into the pan. Cook over a medium heat for 2 to 3 minutes on each side or until golden brown.
  • Keep made fritters warm in an oven heated to 160°C while you repeat the process and fry remaining batter into fritters. Serve fritters hot with chutney on the side.Tip: Always fry a test fritter first to judge the consistency of the batter and the correct temperature for the pan, which should be over a medium heat. If the fritter mixture is too thick, thin it by adding a little more milk.
