Broccoli-Ham Cheese Pie image

Sheets of easy-to-use phyllo dough create a crisp buttery crust for this comforting entree from Nancy Granaman. "This egg and vegetable pie always gets thumbs-up approval from my sons and husband," says the Burlington, Iowa cook.

Number Of Ingredients 14

12 sheets phyllo dough (14 inches x 9 inches)
Refrigerated butter-flavored spray
1 package (16 ounces) frozen broccoli cuts, thawed and patted dry
1 cup cubed fully cooked lean ham
1 cup shredded reduced-fat cheddar cheese
1 small onion, chopped
2 tablespoons minced fresh parsley
2 garlic cloves, minced
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup egg substitute
1 cup fat-free evaporated milk
2 tablespoons grated Parmesan cheese

Steps:

  • Spritz one sheet of phyllo dough with butter-flavored spray. Place in a 9-in. pie plate coated with cooking spray; allow one end of dough to overhang edge of plate by 3-4 in. (Until ready to use, keep phyllo dough covered with plastic wrap and a damp towel to prevent drying out.) Repeat with remaining phyllo, overlapping the sheets (staggering the points around the plate) and spritzing with butter-flavored spray between each layer. , In a large bowl, combine the broccoli, ham, cheese, onion, parsley, garlic, thyme, salt and pepper; spoon into crust. Combine egg substitute and milk; pour over broccoli mixture. Fold edges of dough over filling toward center of pie plate. Spritz edges with butter-flavored spray. , Cover edge of crust with foil. Bake at 375° for 40 minutes. Remove foil. Sprinkle with Parmesan cheese. Bake 30-35 minutes longer or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

1 (9 inch) unbaked pie crust
1 (10 ounce) package frozen broccoli florets
2 tablespoons butter
1 onion, minced
1 teaspoon garlic, minced
1 ½ cups diced cooked ham
1 ½ cups shredded Cheddar cheese
1 cup milk
4 eggs, beaten
½ teaspoon ground black pepper
1 teaspoon smoked paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Press the pie crust ito a 9-inch pie plate; set aside.
  • Place broccoli in a glass bowl. Cover bowl with plastic wrap. Cook broccoli in microwave in 1-minute intervals until evenly heated through, about 5 minutes total; set aside.
  • Melt butter in a large saucepan over medium heat. Saute onion and garlic in melted butter until slightly translucent, about 5 minutes.
  • Stir ham and broccoli into the onion mixture and transfer to the pie crust.
  • Beat Cheddar cheese, milk, eggs, and black pepper together in a bowl; pour over the ham mixture. Sprinkle paprika over the entire quiche.
  • Bake in the preheated oven until a knife inserted into the center of the quiche comes out clean, 30 to 45 minutes.

1 (5 1/4 ounce) package scalloped potatoes mix
4 cups boiling water
1 teaspoon salt
1 tablespoon margarine or 1 tablespoon butter, melted
1 egg, slightly beaten
1 1/2 cups smoked ham, fully cooked diced
1 (10 ounce) package frozen chopped broccoli, thawed and drained
1 cup swiss cheese, shredded
2 eggs, slightly beaten
1 small onion, finely chopped
2 tablespoons margarine or 2 tablespoons butter
1 cup milk
1/4 teaspoon dry mustard

Steps:

  • Heat oven to 375 degrees. Grease pie plate, 9 X 1 1/4 inches. Cover potato slices from scalloped potato package with boiling water in 2 1/2 quart bowl; stir in salt. Let stand uncovered 15 minutes; drain thoroughly. Toss potatoes with melted margarine and 1 egg. Press potato mixture against bottom and siside of pie plate. Bake 10 minutes.
  • Mix ham,broccoli, 1/2 cup of the cheese, 2 eggs and the onion. Heat 2 tablespoons margarine in 2 quart saucepan until melted; stir in Sauce Mix from scalloped potato package, the milk and mustard. Heat to boiling over medium heat, stirring contantly. Boil and stir 1 minute. Fold into ham mixture; spoon into potato shell. Bake uncovered 30 minutes; sprinkle with remaining cheese. Bake until cheese is melted, about 5 minutes longer. Let stand 5 minutes before serving.

This is so good. Its simple because of all the convenience products in it but still tastes very good. Blind baking the shell helps keep it from getting too soggy. I like to serve this with fresh fruit and a green salad. Makes a nice lunch to light dinner.

15 ounces refrigerated pie crusts
3 eggs
1/4 cup milk
1 1/2 cups finely chopped cooked ham
2 (10 ounce) packages frozen rice and broccoli in cheese sauce, thawed
8 ounces shredded swiss cheese
1/8 teaspoon pepper

Steps:

  • Heat oven to 425.
  • Prepare crust as directed on pkg for one crust filled pie using 9 inch glass pie pan.
  • DO NOT PRICK CRUST.
  • Bake at 425 for 7 to 8 minutes or until crust begins to brown.
  • Meanwhile, beat eggs in large bowl.
  • Add milk, ham, rice and broccoli mixture, 1 cup swiss cheese and pepper; mix well.
  • Remove partially baked crust from oven.
  • Reduce oven temperature to 400.
  • Pour ham mixture into crust.
  • Top with remaining 1 cup swiss cheese.
  • Return to oven; bake at 400 for an additional 35 to 40 minutes or until knife inserted in center comes out clean.
  • Cover edge of crust with strips of foil after 15 to 20 minutes of baking if necessary to prevent excessive browning.
  • Cool 10 minutes.
  • Cut into wedges to serve.
