THE BEST CHILI
There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

Steps:
- Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
- Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
- Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
- Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
- Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
- Top with sour cream, Cheddar and scallions. Serve with tortilla chips.
CALIFORNIA TURKEY CHILI

Steps:
- Heat the oil in a heavy, large pot over medium-high heat. Add the garlic, poblanos, celery and onions. Saute until the vegetables soften, 5 to 6 minutes. Add the turkey and saute until no longer pink, breaking up the turkey with the back of a spoon, about 7 minutes. Sprinkle the flour over and stir to blend. Add the tomato paste, chili powder, cumin, sugar, oregano, 1 teaspoon salt, 1/2 teaspoon pepper, cinnamon and cloves. Cook 1 to 2 minutes, stirring to blend. Add the broth and beans. Bring to a simmer. Reduce the heat to medium-low and simmer until the flavors blend and the chili thickens to desired consistency, stirring often, 20 to 30 minutes. Season with more salt and pepper.
- To serve, spoon Simplest Quinoa and Pine Nut Pilaf into deep bowls. Ladle chili over. Serve with garnishes.
- Cook's Note: Other garnishes that you could offer: chopped radishes, pickled jalapenos, crumbled cotija cheese, tortilla chips and/or pico de gallo.
- Place the quinoa in a fine sieve. Rinse under cold running water 1 full minute. Set aside to drain.
- Bring the broth, salt and pepper to a boil in heavy, medium saucepan over medium-high heat. Stir in the quinoa. Cover, reduce the heat to medium-low and simmer until the quinoa is tender and all the broth is absorbed, about 15 minutes. Turn off the heat. Let the quinoa stand, still covered, for 10 minutes.
- Meanwhile, preheat the oven to 350 degrees F. Scatter pine nuts on a small rimmed baking sheet. Toast the nuts until golden, stirring occasionally, about 5 minutes. Cool on the baking sheet.
- Mix the cilantro and pine nuts into the quinoa.
MEXICAN CHILI PIE
This recipe is one of my husband Dwayne's favorite, especially during cooler weather. The topping is crunchy, and the chili has just enough spice to warm you up inside in even the coldest weather! I add a simple side salad to complete the meal.-Heather Thurmeier, Pense, Saskatchewan

- In a large skillet, cook the beef, onion and garlic over medium heat until no longer pink; drain. Add seasonings and tomatoes. Simmer, uncovered, for 20 minutes. Add green pepper. Spoon 2 cups into an ungreased 2-1/2-qt. shallow baking dish; top with half of the beans. Repeat layers. , For topping, combine dry ingredients in a large bowl. Stir in cheese. Combine buttermilk, egg and oil; stir into dry ingredients just until moistened. Spread over filling. , Bake at 450° for 15 minutes or until topping is lightly browned and filling is bubbly.

GRANDMA'S GUADALUPE PIE
Not sure which "Grandma" this is but with family recipes sometimes it doesn't matter.

- 1st layer: 1 stick butter, 1 c flour, 1 c walnuts. Mix and press into 9x13 pan. Bake at 350 degrees for 20-30 minutes until golden.
- 2nd layer: 1 8oz soft cream cheese, 1 c. powdered sugar. Blend with mixer and fold in 1 cup Cool Whip.
- 3rd layer: 1 small pkg chocolate instant pudding, made with 1 1/2 c milk.
- 4th layer: Same as 3rd but vanilla pudding.
- 5th layer: Top with desired amount of Cool Whip (about 1" high and sprinkled grated chocolate)
CHICKEN GUADALAJARA
This recipe is from Better Homes and Gardens, and we really enjoyed this dish. The creamy sauce flavors the fettucine quite nicely. And it's pretty quick to prepare too, so it's managable even on a busy weeknight.

- In a plastic bag combine flour, salt and pepper. Add chicken pieces and shake bag to coat evenly.
- In a large skillet heat 2 tablespoons of the butter over medium heat until hot. Add coated chicken pieces and cook about 8 minutes or until chicken is tender and no longer pink, and coating is golden brown, stirring occasionally. Remove chicken from skillet and keep warm.
- Heat remaining butter in the same skillet until hot. Add chili peppers, onion, and crushed red pepper. Cook and stir about 5 minutes or until tender but not brown, stirring up any browned bits. Add cream to the skillet and bring just to a low boil. Return chicken to skillet, and stir until combined. Simmer, uncovered, for 1 minute more or until sauce is slightly thickened.
- Spoon the creamy chicken mixture over hot, cooked fettucine, then spinkle with cheese.
GUADALUPE RIVER PUDDING
When I was little my aunt used to make this when I came to visit. It is so easy to make and delicious. It makes a lot so you can separate it out into tow 8x8 pans and freeze one for later.

- For the crust:.
- Finely crumble the butter and flour together. Add chopped nuts and mix together. Grease 9x13 pan and pat into the bottom. Bake 350 for 20 minutes. Let cool.
- Mix together the cream cheese, powdered sugar and cool whip. Whip with electric mixer until smooth. Spread on the crust.
- Mix together the pudding mixes and milk, beat until thickened. Spread the pudding on top of the cream cheese mixture. It works best to drop large dollops of pudding in various spots and then smooth out.
- Spread remaining Cool Whip on top of the pudding and garnish with chocolate curls.
- Refrigerate to set. Cut and serve. Can freeze for several months.
GUADALUPE CHILI
This is a camping recipe and is done outside with coals underneath and on top. (you might be able to do this in the oven also.) This is the first dutch oven recipe that my husband and I tried when we camped in Baxter State Park on Daicy Pond a few years ago. We loved it and have made it many times since. The amount of coals depends on the weather, so if it's a bit chilly outside, then you might need more coals and vice-versa.

- Brown beef, onion and butter in the open dutch oven.
- Add beans, chili powder, salt and sauce and cook for 15 minutes in covered oven.
- Mix the cornbread as directed on the package, and add to top of meat and beans. Place lid on oven.
- Cook for 20-30 minutes until cornbread is done.
- For this recipe we use the large (12-14 inch) dutch oven. And, we might put about 15 coals underneath, and about 10-12 on top. Just keep checking periodically to make sure the chili does not burn
