Ingredients

1 1/2 ounces (3 tablespoons) aged rum
1/2 ounce (1 tablespoon) orange liqueur: Curaçao, Cointreau or Grand Marnier
3/4 ounce (1 1/2 tablespoons) lime juice
1 ounce (2 tablespoons) orgeat syrup
1/2 ounce (1 tablespoon) dark rum
For the garnish: Fresh mint, cocktail cherry, pineapple slice, lime wedge

Steps:

Place the aged rum, orange liqueur, lime juice, and orgeat syrup in a cocktail shaker. Add ice and shake until cold.
Strain the drink into an ice-filled glass. Top with the dark rum. Garnish with fresh mint, a lime wedge, cocktail cherry and pineapple slice.

1.5 tablespoons fresh lime juice (from 1 lime)
1 tablespoon (½ oz.) dry orange Curaçao
1 tablespoon orgeat syrup or simple syrup
1 teaspoon maraschino cherry juice
1 tabelspoon (½ oz.) dark rum
Mint sprig, maraschino cherry, pineapple slice, for serving

Steps:

Combine pineapple juice, rum, lime juice, Curaçao, orgeat, and cherry juice in a cocktail shaker.
Fill with ice and shake vigorously for 20 seconds.
Strain into an ice-filled rocks glass. Top with dark rum, and garnish with mint, cherry, and pineapple.

Ingredients

2 cups light rum
1 cup dark rum
1 cup rum (151-proof)
1 cup orange Curacao (orange flavored liqueur)
1 cup almond syrup
1 cup simple syrup
10 limes, juice of
1/2 g fresh orange juice

Steps:

In a large jar or drink cooler, combine the light rum, dark rum, 151 rum, orange liqueur, almond syrup, simple syrup, and lime juice.
Stir and top off with orange juice. Do not use grenadine if you want the true Mai Tai!
Serve in 8 to 12 ounce glasses with ice.

Ingredients

25ml golden rum
1 tbsp orange curacao
2 tsp orgeat syrup
25ml lime juice
2 tsp sugar syrup
ice cubes
crushed ice
25ml dark rum
wedge of pineapple, a lime wheel or a cocktail cherry (or all three!)

Steps:

Pour the golden rum, curacao, orgeat, lime juice and sugar syrup into a cocktail shaker with a handful of ice cubes. Shake until the outside of the shaker feels really cold.
Fill a tumbler with crushed ice then strain the cocktail over it. Slowly pour the dark rum over the top so it stains the top of the drink a rusty gold.
Garnish with fruit like pineapple, lime and cocktail cherries if you like.

Shake all ingredients in a cocktail shaker with 1 cup ice cubes, then strain into a glass filled with ice cubes.
