SHAVED ASPARAGUS SALAD WITH GINGER AND SESAME



Shaved Asparagus Salad With Ginger and Sesame image

Succulent, fat, fresh asparagus is thinly sliced by hand for this raw salad - easier than you'd think, and safer than using a mandoline. It's very refreshing and bright tasting.

2 tablespoons rice vinegar
1 tablespoon grated ginger
1 teaspoon minced garlic
1 tablespoon light brown sugar
1 jalapeño pepper, seeds removed and finely diced (optional)
2 teaspoons toasted sesame oil
Salt and pepper
1 1/2 pounds fat asparagus
Salt and pepper
1/2 cup slivered scallions
Squeeze of lime juice, to taste
Mint leaves, for garnish
Cilantro sprigs, for garnish
1 tablespoon toasted sesame seeds
1 tablespoon black sesame seeds

Steps:

  • Make the dressing: In a small bowl, stir together rice vinegar, ginger, garlic and brown sugar. Add jalapeño and sesame oil, then season to taste with salt and pepper.
  • Snap or cut off the tough bottoms of each asparagus spear. With a vegetable peeler, peel each tough-skinned spear, starting halfway down from tip and peeling toward bottom end.
  • Cut the asparagus at a long diagonal into very thin slices (not paper thin - about the width of a thinly sliced onion). Place asparagus slices in a wide salad bowl. Season with salt and pepper and toss lightly. Add the ginger dressing and toss to coat well. Taste and adjust. Add scallions and lime juice and toss again.
  • Garnish with mint leaves and cilantro sprigs. Sprinkle with sesame seeds and serve.

1 pound asparagus, cut into 2-inch pieces
2 tablespoons soy sauce
1 tablespoon vegetable oil
1 tablespoon white vinegar
1-1/2 teaspoons sugar

1/4 to 1/2 teaspoon ground ginger
1/4 teaspoon ground cumin

Steps:

  • In a saucepan, cook the asparagus in a small amount of water until crisp-tender, about 3-4 minutes. Drain well and place in a large bowl. , Combine the soy sauce, oil, vinegar, sugar, sesame seeds, ginger and cumin; pour over asparagus and toss to coat. Cover and chill for 1 hour.   • Toss beef with salt and pepper. In a large skillet, heat oil over medium-high heat; saute beef 2 minutes. Add garlic and green onion; cook and stir until beef is browned, 2-3 minutes.   • Place steak on a broiler pan coated with cooking spray. 6 ounces shoulder steak, trimmed, frozen 30 minutes to 1 hour
1/2 teaspoon baking soda
3 large cloves garlic, crushed plus 2 tablespoons chopped
1 egg white
1/4 teaspoon salt
1 tablespoon sesame seeds
5 teaspoons sugar
1 teaspoon peanut oil plus 4 cups, for deep-frying
3/4 teaspoon cornstarch
2 tablespoons thin soy sauce
2 tablespoons Shao Hsing (Chinese rice wine) or dry sherry
2 teaspoons Chinese dark vinegar* or balsamic vinegar
2 teaspoons sesame oil
1 teaspoon Chinese sesame paste*
1/4 pound pencil-thin asparagus tips (4 inches)
1/2 small red bell pepper, very thinly sliced (about 1/3 cup)
4 dried red chili peppers
3 scallions, chopped
2 tablespoons chopped ginger
Serving suggestion: Rice

Steps:

  • Slice steak into broad 1/8-inch thick strips, about 1 inch wide and 6 inches long. In a small bowl combine steak strips with baking soda, crushed garlic cloves and 1/4 cup cold water. Mix well and soak 5 hours.
  • Rinse steak slices and dry well on paper towels. In a small bowl mix together egg white and salt, stirring vigorously until egg white foams. Stir in sesame seeds, 1 teaspoon sugar, 1 teaspoon peanut oil and cornstarch. Add steak and toss to coat. Marinate 1/2 hour at room temperature. In another small bowl, combine thin soy sauce, Shao Hsing, remaining 4 teaspoons sugar, vinegar, sesame oil and sesame paste; set aside.
  • In a wok heat remaining 4 cups peanut oil over high heat to 375 degrees. Drain beef, pat dry then deep-fry 45 seconds, turning pieces several times with a metal spoon. Using a slotted spoon, remove beef and drain on paper towels. When oil returns to 375 degrees, deep-fry 15 seconds more, remove beef, and drain. Repeat deep-frying, 15 seconds, a third time. Remove beef and drain on clean paper towels. When oil returns to 375 degrees, deep-fry asparagus and red bell pepper 30 seconds. Drain on paper towels.
  • Drain off all but 1 tablespoon oil from wok and increase heat to high. Add chili peppers, scallions, chopped garlic and chopped ginger; stir-fry 1 minute. Add asparagus and red pepper; stir-fry 10 seconds and add beef. Stir in soy sauce mixture, bring to a boil and serve immediately with rice.

2 tablespoons white wine vinegar
2 tablespoons soy sauce
2 teaspoons sugar
Kosher salt
1 pound fairly thin pencil asparagus, ends trimmed, cut into 2-inch pieces
4 tablespoons sesame seeds

Steps:

  • Bring a large pot of water to a rolling boil. In a medium bowl, whisk together the sesame oil, white wine vinegar, soy sauce, and sugar. Set aside.
  • Prepare an ice bath: Fill a large bowl halfway with ice cubes and add some cold water. Place a colander squarely inside the ice bath. The colander will keep you from having to pick the asparagus out from amongst the ice cubes in the ice bath.
  • Add salt until the boiling water tastes like seawater. Add the asparagus to the boiling water and cook for 1 1/2 to 2 minutes - you want them to be crunchy. If the asparagus are thin, cook for only 1 minute. Remove the asparagus from the water with a strainer and transfer them to the colander inside the ice bath. Allow them to cool completely for a few minutes and then place them on a kitchen towel to drain any excess moisture.
  • Toss the asparagus, sesame seeds, and the sauce together and refrigerate for 1 hour, or until ready to serve.

1 pound asparagus
2 tablespoons peanut oil
2 tablespoons minced shallots
1 tablespoon sesame seeds
2 teaspoons soy sauce (low sodium, if desired)
Dash of toasted sesame oil
Freshly ground black pepper

Steps:

  • Trim tough ends from asparagus spears. Set spears aside.
  • Heat a 10-inch cast-iron skillet for about 2 minutes over medium-high heat. Add 1 tablespoon peanut oil and half of the asparagus in a single layer.
  • Cook for 3 to 4 minutes without turning. Shake pan occasionally. Turn, and cook 3 minutes more. Asparagus should be bright green with brown spots.
  • Add 1 tablespoon shallots and half the sesame seeds, and cook, shaking the pan to toss asparagus, for 1 to 2 minutes or until shallots are transparent. Do not let them burn.
  • Add half the soy sauce, sesame oil, and pepper, and cook 30 seconds. Transfer to a plate, and keep warm. Repeat with remaining asparagus. Keep warm until ready to serve.

1 lb boneless sirloin, thinly sliced across grain
4 garlic cloves, minced
1 lb asparagus, thinly sliced diagonally
toasted sesame seeds

Steps:

  • In a bowl mix together, soy,rice vinegar, hoisin sauce, brown sugar, chopped ginger, 2 tsps. sesame oil cornstarch and pepper flakes, set aside.
  • To 2 cups boiling water andd two beef ramen noodles, 1 seasoning packet, 4 scallions and 1 teaspoons sesame oil. Cook one minute, remove from heat; let stand covered.
  • In a large skillet heat oil, add boneless sirloin and garlic and stir fry until lightly browned. Remove beef, keep warm. Add second Tbls. of oil add asparagus; stir fry until done to your taste.
  • Add beef and soy mixture to skillet. Stir fry until thickened. Sprinkle with toasted sesame seed and more green onions. Toss with noodles and serve.

ASPARAGUS & COURGETTE SALAD WITH FETA & SESAME SEEDS

1 tsp sesame seed
140g asparagus
50g pea
200g courgette
1 tsp sesame or olive oil
small handful rocket leaves
20g feta cheese
grated zest ½ lemon

Steps:

  • Heat a small frying pan and add the sesame seeds. Cook, shaking the pan and making sure the seeds don't burn. When they are fragrant and have turned a light teak colour, tip them onto a saucer.
  • Steam the asparagus for 3-4 mins until almost done. Drop into a bowl of iced water to cool, then drain and wrap in a tea towel to dry really well. Cook the peas for 3 mins in the boiling water used to steam the asparagus, then drain and cool under a cold tap. Slice the courgettes on the diagonal, about 0.5cm thick.
  • Heat a griddle pan until very hot. Brush the asparagus and courgette slices with the oil, and cook in batches until nicely striped with dark brown. Cut the asparagus into 5cm lengths.
  • Mix the asparagus, courgettes, peas, rocket, feta and lemon zest. Grind over some black pepper and sprinkle with the sesame seeds before serving.

1 small bunch green onions, cut on diagonal into 1 1/2-inch pieces
1 1/2 tablespoons minced peeled fresh ginger
2/3 cup beef broth
1 tablespoon fish sauce (nam pla)
1 teaspoon sugar

Steps:

  • Combine beef and cornstarch in large bowl. Using hands, rub to coat well.
  • Heat 2 tablespoons peanut oil in large skillet over high heat. Working in batches, add beef in single layer and cook, undisturbed, until meat begins to blacken on bottom, about 1 1/2 minutes. Turn over and cook until second side browns, about 1 minute. Transfer beef to large plate.
  • Heat remaining 2 tablespoons peanut oil and 1 teaspoon sesame oil in same skillet over medium-high heat. Add asparagus, green onions, and ginger; sauté until vegetables are tinged brown and crisp-tender, about 2 minutes. Add broth, fish sauce, and sugar; bring to boil. Return beef to skillet and cook until sauce is slightly thickened, about 1 minute. Transfer to platter and serve.

16-20 asparagus spears, about 500g/1lb 2oz
2 tbsp sesame oil
1 tbsp soy sauce
1 garlic clove , crushed
2 tbsp sesame seeds

Steps:

  • With one hand, hold an asparagus stalk at its base. Bend the stalk over with your other hand - the asparagus will break where the woody part ends and the tender part begins. Discard the base. Place 4 or 5 asparagus stalks next to one another. Skewer them crosswise in two places - just below the tips and 3cm from the bottom - with slender bamboo skewers. You will end up with something that looks like a raft.
  • In a small bowl, combine the sesame oil, soy sauce, garlic and sesame seeds and stir with a fork to mix. Brush this mixture on the asparagus rafts on both sides. Season the asparagus with a little salt and lots of pepper.
  • Grill the asparagus on a barbecue or in a griddle pan for 4-5 mins per side, turning with tongs. Sprinkle with sesame mix as they grill.
