1 1/2 cup pecan halves (toasted)
1/2 cup shredded unsweetened coconut (toasted)
2 tablespoons Swerve confectioners
1/2 teaspoon sea salt
6 tablespoons butter (melted)

Steps:

  • In a food processor, process the pecans, coconut, Swerve, and salt until fine.
  • Add the butter and process until the mixture sticks together.
  • Transfer the mixture into the bottom of a greased springform pan and press into the bottom and up the sides of the pan. Freeze until solid.

This is my go-to crust for either pies or cheesecake. It's low carb, sugar free & holds together well when you cut the pie. Personally, I think this is a much yummier alternative to graham cracker crusts & much healthier!

Number Of Ingredients 6

1 1/2 cups whole pecans
1/2 teaspoon cinnamon
1/4 cup Truvia, baking blend (stevia & erythritol, not the stuff with sugar)
1 pinch kosher salt
1 tablespoon butter, melted
1 egg white

Steps:

  • Preheat oven to 350 degrees.
  • In a food processor, process pecans on high until they are a fine meal. Add the Truvia, cinnamon & salt. Pulse a few times.
  • While food processor is running on low, add the melted butter & egg white until dough is completely blended & clumped together.
  • Lightly spray pie pan with Pam. Add the dough & cover with a piece of plastic wrap. Using your fingers or the bottom of a glass, gently press to cover the bottom & sides of the pie pan. Remove the plastic wrap.
  • Bake the crust for 10 minutes. It will puff a bit in the middle but will flatten again as it cools. If you use this crust for a baked pie, when you bake it again cover the edges with foil so that it doesn't over-brown.

This pie crust is low carb, keto, and tastes like pecan pie by itself. Fill with filling and bake or cool as needed.

5 ounces ground pecans
4 tablespoons unsalted butter, melted
5 teaspoons brown sugar substitute (such as Swerve®)
½ teaspoon vanilla extract
⅛ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix pecans, butter, brown sugar substitute, vanilla extract, and cinnamon together. Press into the bottom and up the sides of an 8-inch pie pan.
  • Bake in the preheated oven until lightly golden, about 12 minutes. Do not let pecans brown.

This crust is especially good as a base for Eggnog Pie with Rum, but can be used with almost any custard pie.

2 ½ cups ground pecans
¼ teaspoon ground cinnamon
⅓ cup white sugar
4 tablespoons unsalted butter, melted

Steps:

  • Stir together ground nuts, cinnamon, and sugar. Mix in melted butter.
  • Press the mixture into the bottom and up the sides of a 9 inch, deep-dish style, pie pan. Chill the unbaked crust in the refrigerator for about 30 to 45 minutes.
  • Place pie crust on a cookie sheet, and position on the middle rack of a preheated 350 degree F (175 degree C) oven. Bake for 12 to 15 minutes, or until lightly browned. WATCH it carefully, as nut crusts burn easily; they DON'T have to turn black to taste burnt! Cool completely before filling.

1 cup Splenda granular
1 teaspoon vanilla extract
2 tablespoons butter, melted
1 cup sugar-free maple syrup
1 1/2 cups pecans (chopped or halves)

Steps:

  • For the crust, mix together the ingredients, press into an 8" or 9" pie plate and refrigerate.
  • Beat the eggs with the Splenda.
  • Add the vanilla, butter and syrup, then add the pecans.
  • Pour into the crust and bake at 350°F for about 45 minutes.

  • To roast the sweet potatoes: Preheat oven to 400 degrees F. Poke sweet potatoes with a fork a few times, then place on baking sheet lined with foil. Roast for 45 minutes or until knife tender. Turn down oven to 350 degrees F and set sweet potatoes aside to cool off.
  • To make the crust: Place pecans, salt and sugar in the bowl of a food processor and pulse until the nuts begin to become very crumbly and look like wet sand; this should take less than 1 min. Next add the melted butter and process again. I like to taste the crust at this point to see if I may need to add more salt.
  • Dump the mixture into a 9 inch pie pan and press crust to the edges evenly with your fingertips. Bake for 10-12 minutes, being careful not to overbake. I usually take mine out at 10 minutes.
  • To make the filling: While the crust is baking, you can start making the filling. Scoop filling out of cooled roasted sweet potatoes and peel away skin. Place in a food processor and process until somewhat smooth and fibers are removed.

  • Prick bottom of pie crust with fork. Place pie plate on a baking sheet and bake on the LOWEST RACK for 20-25 minutes. If upper crust is becoming overly browned, use a pie shield to protect it. The crust will puff up slightly during baking, but go down as it cools.
