1 teaspoon vegetable oil
1 (10 ounce) package penne pasta
3 tablespoons butter, divided
1 tablespoon minced garlic
1 pound uncooked medium shrimp, peeled and deveined
3 tablespoons chopped fresh parsley, divided
2 teaspoons chopped fresh dill
2 tablespoons all-purpose flour
½ cup chicken broth
1 cup milk
2 large tomatoes, chopped
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon ground black pepper
¾ cup grated Parmesan cheese
½ cup grated Romano cheese
¼ cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Heat 1 tablespoon butter and vegetable oil large oven-safe skillet over medium heat. Add garlic; cook until fragrant, about 30 seconds. Add shrimp, 2 tablespoons parsley, and dill. Cook and stir, flipping shrimp halfway, until pink, 3 to 4 minutes. Move shrimp to a plate and set aside.
  • Melt the remaining 2 tablespoons butter in the skillet, stirring into the shrimp juices. Add flour; whisk until fully combined and starting to turn golden, 30 seconds to 1 minute. Add chicken broth and milk in that order; whisk to combine. Stir in tomatoes, lemon juice, salt, and pepper. Bring sauce to a simmer.
  • Stir 1/2 cup Parmesan cheese and Romano cheese into the sauce until cheeses begin to melt and sauce is creamy. Add 1 tablespoon mozzarella cheese. Mix in about 1/2 the cooked penne to start; add more if there is enough sauce to coat. Add the shrimp and stir to combine. Top with the remaining parsley, Parmesan, and mozzarella.
  • Bake in the preheated oven and bake until top is golden and sauce bubbles around the edges of the skillet, 8 to 10 minutes.

8 Sea Scallops, quartered
1 lobster tail, rough chopped
10 jumbo shrimp, cut in half
8 Jonah crab claws, shucked (optional)
2 shallots fine diced
2 cloves garlic, minced
2 tablespoons unsalted butter
1/2 cup Clos du Bois Chardonnay
2 tablespoons flour
2 1/2 cups milk or cream, I use milk
1 cup grated Parmesan, divided in half
Pinch salt & pepper
1/4 teaspoon dried tarragon or thyme
1 lb Barilla Penne, cooked Al Dente
2 tablespoon butter, melted
1 cup Italian bread crumbs

Steps:

  • Preheat oven to 425.
  • Heat a skillet over medium , drizzle with Olive oil.
  • Saute seafood for 1-2 minutes.
  • Slowly add wine to deglaze the pan, add shallots, garlic & butter. Stir.
  • Add flour, stir to coat seafood.
  • Pour in milk or cream, bring to a boil stirring constantly
  • Reduce to simmer, sauce should start thicken.
  • Remove from heat. Stir in 1/2 the Parmesan.
  • Cook, drain and rinse penne pasta.
  • Mix bread crumbs into melted butter.
  • Layer in casserole dish- pasta, sauce and seafood, bread crumbs, remaining Parmesan.
  • Bake 15 minutes or until top is golden and edges are bubbly.
  • Serve with a glass of Chardonnay and crusty bread.

I like to eat supper outdoors, in my Grotto (The Ancient and much-Revered Ospidillo Grotto!) and this is a great, easy casserole that I can enjoy there. And did you notice? There's no red meat in this dish. Lots of flavors and there's no can of soup in it either! I'll bet your family will like it just fine. Who gave me the recipe? I drank too many beers in the Grotto and I don't remember! Sorry!

1/2 cup green bell pepper, chopped
2 tablespoons scallions, thinly sliced
4 tablespoons salted butter (divided)
2 tablespoons all-purpose flour
1/2 teaspoon table salt
2 cups whole milk (pre-heated to about 100 degrees in microwave)
1 large tomatoes, peeled and chopped
2 tablespoons fresh parsley, minced
1 1/2 cups monterey jack cheese, with jalapenas (shredded, divided)
3 1/2 cups medium pasta shells, cooked and drained (or, bowtie pasta)
1 lb imitation crabmeat, chopped
1/2 cup seasoned dry bread crumb
2 quarts water (for boiling pasta)
1 teaspoon table salt (for boiling pasta)
Pam cooking spray

Steps:

  • Cook your pasta in lightly salted water (about 2/3 of a pound, dry) until tender and drain. Set aside.
  • In a large saucepan, over medium heat, saute the bell pepper and scallions in 2 tablespoons of the butter until tender.
  • Blend in the flour and salt into the pepper-scallion mix, stirring constantly. Gradually stir in the pre-warmed milk. Bring to a boil.
  • Cook and stir the boiling sauce until it thickens and then remove from heat. Stir in the tomato and parsley. Stir in one cup of the cheese until it melts, then, stir in the pasta and crabmeat.
  • Transfer this mix into a 2 1/2 quart casserole dish which has been sprayed with Pam. Cover and bake in a pre-heated 350-degree F. oven for 20 minutes.
  • Melt remaining butter and toss it with the bread crumbs.
  • After the casserole has been in the oven for 20 minutes, remove it and sprinkle first the buttered bread crumbs over it, and then the remaining cheese (on top of the crumbs).
  • Bake UNCOVERED for 5-10 more minutes. The top should be golden brown.
