Steps:

  • Sweet island fruit is the perfect match for the grill, which caramelizes their natural sugars. You can leave the skin on - just slice ripe plantains in half lengthwise and cut mangoes, pineapple or papaya into wedges or thick pieces. Brush with oil, then place flesh-side down on the hot grates and cook until marked and tender, 3 to 5 minutes per side. Top with ice cream and caramel sauce for dessert.

Grilled Citrus Chicken with Grilled Tropical Fruit image

Provided by Food Network

Categories     main-dish

Yield 6 servings

Number Of Ingredients 19

7 pounds chicken pieces, excluding wings, washed and dried
1/2 cup freshly squeezed orange juice
1/4 cup freshly squeezed lime juice
1/4 cup freshly squeezed lemon juice
1/2 cup dark rum
6 garlic cloves, chopped
3 tablespoons brown sugar
3 Chipotle chiles, canned or rehydrated in vinegar
3 red peppers, seeded and chopped
1 medium red onion, thinly sliced
3 tablespoons cider vinegar
1/4 cup olive oil
2 large mangos, peeled, pitted and cut into 1-inch pieces
3 ripe bananas, peeled and cut on the bias into thick slices
1 pineapple, peeled and sliced
Juice of 1 lime
Vegetable oil, for the grill
Salt and freshly ground pepper
2 tablespoons butter, melted

Steps:

  • Place the chicken pieces in a baking dish. In a blender, combine the citrus juices, rum, garlic, sugar, chipotles, red peppers, onion, vinegar and olive oil. Pulse gently. Pour marinade over the chicken pieces, cover and refrigerate for 2 hours or overnight. Turn the chicken once. Remove the chicken from the refrigerator 30 minutes before cooking.
  • Preheat the grill.
  • Place the mango pieces, banana slices and pineapple on a sheet of foil and brush with lime juice. Set aside.
  • When the grill is ready, brush with vegetable oil. Season the chicken with salt and pepper. Place the chicken pieces, cavity sides down, on the grill and cook for 10 minutes. Turn and baste with the marinade and continue cooking for another 10 minutes. Baste and turn chicken every 5 minutes for an additional 15 to 20 minutes, or until chicken is tender.
  • Lightly brush the fruits with melted butter. Set the foil on the grill during the last 10 minutes of cooking time. Perforate the foil to allow the heat to reach the fruit, then fold the foil into a packet and cook until the fruit is slightly limp and lightly charred.
  • Place the chicken on a platter and arrange the fruit along the edges.

  • Grilled Fruit Kabobs. These colorful kabobs are sure to be a hit at your next BBQ. Use whatever fruit you like, and be sure to cut everything to a similar size.
  • Grilled Pineapple. Grilled pineapple is a fabulously easy dessert that’ll satisfy your sweet tooth without the added calories. The key is to coat fresh pineapple slices in a butter and brown sugar glaze before grilling.
  • Grilled Plums. Grilled plums are a delicious way to dress up a meal. And while I love them with ice cream and pound cake, they’re actually super tasty when served alongside savory dishes.
  • Grilled Peaches. Juicy peaches with deliciously caramelized flesh are quite possibly my new favorite fruity dessert. When peaches are grilled, they become nice and tender and suuuuuper sweet.
  • Grilled Watermelon. Watermelon is often found in savory dishes, and I use it all the time to make sweet and savory appetizers. Grilling the watermelon brings out its natural sugars, making it slightly sweeter.
  • Grilled Apricots with Cinnamon, Ricotta, and Honey. These bright orange flavor bombs are full of vitamins and minerals and are so, so yummy! You’ll grill apricot halves, then top them with creamy ricotta cheese.
  • Grilled Nectarines. Nectarines are another fantastic summer fruit that becomes exceptional when grilled. They’re very similar to peaches but without the fuzzy skin.
  • Grill Pears. Pears aren’t as sweet as some other fruits on this list. So, that means they’re sumptuous with ice cream but also pair very well with savory dishes, such as pork chops.
  • Grilled Apples. This recipe reminds me of a warm apple pie, only without the crust. These simple, tasty, and crisp apple slices are covered with butter, cinnamon, and brown sugar and then placed in a foil packet.
  • Grilled Cantaloupe. This grilled melon is a flawless mix of sweet and spicy. Sweet cantaloupe brushed with oil and sprinkled with Tajin? I’m drooling already!
