GRILLED SWEET POTATO WEDGES WITH MAPLE BUTTER

Steps:
- Heat grill to medium-high heat.
- Place the wedges in a large bowl and drizzle with oil. Season with salt and pepper and toss to combine. Place on the grill, cooking on all sides until cooked through, about 10 minutes total. Remove and drizzle or brush with a bit of maple butter, sprinkle with salt and parsley to finish.
- In a bowl, blend the butter, maple syrup and allspice together until light and smooth. Refrigerate and use as a spread or melt and drizzle over pancakes, grilled sweet potatoes or popcorn.
GRILLED SWEET POTATOES WITH LIME AND CILANTRO
Steps:
- Parcook the potatoes: Place in a pot of water and boil until fork-tender; let cool. Slice each potato lengthwise into eighths.
- Preheat a grill to medium or place a cast-iron grill pan over medium heat. Mix 1 tablespoon salt, the lime zest and cayenne in a small bowl.
- Brush the potato wedges with the oil and season with salt and pepper. Grill until golden brown on all sides (including the skin) and just cooked through, about 1 1/2 minutes per side. Transfer to a platter; immediately season with the salt mixture and sprinkle with cilantro.

- Peel and cut each sweet potato lengthwise into 8 wedges; place in a large bowl. Toss with oil, salt and pepper. , In batches, cook potatoes on a greased grill rack, covered, over medium heat 8-10 minutes or until tender, turning occasionally. , In a large bowl, mix remaining ingredients; add potatoes and toss to coat.

- Cover potatoes with cold salted water in a large pot, then bring to a boil. Simmer until slightly resistant in center when pierced with a sharp small knife, 25 to 30 minutes, then transfer to a large bowl of cold water to stop cooking. Drain well. When cool enough to handle, peel potatoes with a sharp small knife and quarter lengthwise.
- Prepare grill for cooking.
- Whisk together lime juice, salt, and pepper and add oil in a slow stream, whisking. Whisk in cilantro.
- When fire is hot (you can hold your hand 5 inches above rack for 1 to 2 seconds), grill potatoes in 2 or 3 batches on lightly oiled grill rack (over coals if using a charcoal grill), uncovered, turning, until grill marks appear and potatoes are just tender, 3 to 6 minutes total.
- Serve potatoes warm or at room temperature, drizzled with vinaigrette.

- Blanch sweet potatoes in boiling water for 2 minutes, then drain and cool with cold water.
- Mix marinade ingredients in a ziplock bag or bowl, then add sweet potatoes and marinade for at least 15 minutes.
- Preheat grill to 450°F.
- Remove sweet potatoes from the marinade, shaking off excess marinade, and place them on the grill. Cook until golden brown, about 3-4 minutes per side.

- Combine the lime juice, maple syrup, soy sauce, and garlic in a small bowl. Whisk in the mustard. Slowly pour in the sesame oil and whisk constantly until the oil is emulsified. (Use immediately or store in an airtight container in the refrigerator up to 2 weeks).
- Scrub the potatoes well or peel them, then trim the ends and slice horizontally into 1/4 inch thick rounds. Place in a large bowl, add the marinade, and toss to coat each slice.
- Prepare a medium-low fire in the grill. Lift the sweet potatoes out of the marinade with a slotted spoon and grill, turning occasionally and basting with the remaining marinade, until tender when pierced with a fork, 15-20 minutes. Serve hot.

GRILLED SWEET POTATOES
This recipe originally came from Quick Cooking. The time it takes to cook can vary a lot depending upon the heat of the fire, the size of the potato, or how you package it up. When we are in a hurry, I have even cut the potato into chunks and divided it up between four pieces of foil. It is super easy, healthy, and goes well with pork chops or Recipe#267975. When we go camping this is often on our menu. Sometimes I have put the honey on before grilling, and I think that is okay, too.

- Cut two pieces of heavy duty foil, about 18 X 12 inches; place a potato half onto each piece of foil.
- Spread cut side with butter.
- Sprinkle with salt and pepper.

GRILLED SWEET POTATOES
This is a very easy grilling recipe with easy tinfoil cleanup. I tried this on my family this weekend and they loved it. I think it may be a new Thanksgiving classic.

Steps:
- Slice and split your sweet potatoes and apple between two tinfoil packages (two strips of tinfoil folded together).
- Top each with half the butter and brown sugar and a few dashes of cinnamon (optional).
- Close the tinfoil packages and put on the grill on medium/low heat for approximately 40 minutes, turning half way through.
- Make sure you don't burn, brown sugar doesn't taste good burnt.
