SEARED SCALLOPS WITH A CORN, BACON AND AVOCADO RELISH

Seared Scallops with a Corn, Bacon and Avocado Relish image

Provided by Food Network

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 10

Salt and freshly ground black pepper
Vegetable oil, for oiling pan
16 dry sea scallops
2 avocados
12 strips bacon, cooked and chopped
1 lemon, halved
4 ears corn, shucked
1 medium onion
1 red bell pepper
2 tablespoons chopped fresh parsley

Steps:

  • Take a small bowl and place it upside-down inside a large bowl. (This will provide a small stand for your corn, making it easier to remove the kernels, and the large bowl will catch them as the fall, avoiding a mess.) Using a knife, remove the kernels from the corn, letting them fall into the bowl.
  • Dice the onion and red bell pepper and add them to the bowl with the corn. Add 1 tablespoon of the chopped parsley and season with salt and pepper. Mix to evenly distribute the ingredients.
  • Set a pan over medium heat and add some oil. Add the corn mixture to the pan and cook until the onions begin to soften, tossing occasionally, about 5 minutes. Remove from the heat and let cool.
  • Sprinkle the sea scallops with salt and pepper. Set a pan over medium-high heat and add some oil. Add the scallops and sear until golden in color, about 1 minute on each side. Remove from the heat and let rest.
  • Dice the avocados and add them to the corn relish along with the chopped bacon. Season with salt and pepper and mix together.
  • Evenly distribute the relish among 4 plates and top each with 4 scallops. Garnish with the remaining 1 tablespoon parsley and a squeeze of lemon.

Provided by TooAllergic

Categories     Brunch

Time 25m

Yield 4 serving(s)

Number Of Ingredients 14

2 cucumbers, diced
1/2 cup cashews, chopped
1/4 cup onion, minced
1/4 cup parsley, chopped
1 tablespoon lemon juice
2 teaspoons olive oil
1/8 teaspoon salt
1/2 teaspoon salt
1 teaspoon cumin
1 teaspoon smoked paprika
1/2 teaspoon pepper
1/2 teaspoon coriander
1 teaspoon brown sugar
1 1/4 lbs sea scallops (**Best if you use the "dry" scallops that are "extra-large" 10-20 to a pound)

Steps:

  • Combine first 7 ingredients. Set aside.
  • Combine next 6 ingredients. This is the crust for the scallops.
  • Rinse the scallops and pat dry. **(You will have better success with "dry scallops" which have not been treated with a brine that extends shelf life at the expense of taste and texture.).
  • Coat each scallop with the spices by dipping each of the flat sides of the scallop in the mix.
  • If you like using them, slide the scallops on skewers (should be enough for 4-12inch skewers).
  • Lightly grease your grill rack or pan and grill the scallops over medium-high heat for about 3 minutes per side (less if they are not the extra-large). DO NOT OVER COOK!
  • Remove the scallops from the skewers (if used) and serve over the cucumber relish.

GRILLED SCALLOPS WITH BLISTERED-YELLOW-PEPPER RELISH

Grilled Scallops with Blistered-Yellow-Pepper Relish image

The mild sweetness of roasted yellow bell peppers is a perfect match for succulent scallops.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Time 40m

Number Of Ingredients 11

2 yellow bell peppers
1/4 cup blanched whole almonds, toasted and finely chopped
1 clove garlic, minced
1/2 teaspoon smoked paprika
1 tablespoon white-wine vinegar
1/4 cup extra-virgin olive oil, plus more for drizzling
Coarse salt and freshly ground pepper
1 1/2 cups Israeli couscous
1 pound dry-packed large sea scallops (about 16), tough ligaments on sides removed
2 scallions, thinly sliced, for serving
1/4 cup packed fresh cilantro leaves, for serving

Steps:

  • Char peppers over the flame of a gas stove, turning with tongs, until blackened and blistering, about 10 minutes. (Or char under the broiler.) Transfer to a bowl, cover with a plate, and let cool completely. Scrape off skins with a paring knife or paper towel.
  • Remove stems, ribs, and seeds, then finely dice peppers and transfer to another bowl. Add almonds, garlic, paprika, vinegar, and oil; season with salt. Relish can be refrigerated in an airtight container up to 5 days.
  • Cook couscous in boiling salted water according to package instructions. Drain; drizzle with oil. Transfer to a platter.
  • Heat grill to medium. Thread scallops on metal skewers; drizzle with oil and season with salt and pepper. Grill, turning, until scallops are lightly charred and just cooked through, about 2 minutes a side. Transfer skewers to couscous. Drizzle with some relish; sprinkle with scallions and cilantro. Serve, with more relish alongside.

GRILLED SEA SCALLOPS WITH YELLOW BEETS, CUCUMBERS AND LIME

Grilled Sea Scallops With Yellow Beets, Cucumbers and Lime image

Here's a simple bright dish that's nearly effortless to put together. You make a sort of salad-like relish with onion, cucumber and golden beet, seasoned with ginger and lime juice. Once the scallops are grilled, you spoon the relish over and drizzle with fruity olive oil, along with a shower of chopped sweet herbs. Done and done. If sea scallops are not available, use wild shrimp or halibut or salmon fillets. It is best to cook and cool the beets in advance (even a day ahead).

Provided by David Tanis

Categories     dinner, seafood, main course

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 11

3 medium yellow beets
1 1/2 pounds large dry-packed sea scallops (about 18 scallops)
Salt and pepper
Extra-virgin olive oil
1 cup finely diced red onion
4 tablespoons lime juice, plus more for finishing
1 teaspoon grated ginger
2 medium cucumbers, peeled and diced into 1/2 inch cubes
2 tablespoons roughly chopped dill
2 tablespoons roughly chopped mint
2 tablespoons finely cut chives

Steps:

  • Heat oven to 375 degrees. Place beets in a baking dish with an inch of water. Tightly cover baking dish and roast for 1 hour or so, until beets are soft enough to yield to a fork and skins easily rub off. Peel beets, let them cool, then dice into 1/2-inch cubes. Alternatively, peel and dice raw beets, then simmer in salted water for 20 to 30 minutes, until tender. (Beets may be cooked up to a day in advance.)
  • Put scallops on a baking sheet, pat dry and season on both sides with salt and pepper. Drizzle or paint very lightly with olive oil, just to coat the surface. Leave at room temperature for 15 minutes to absorb seasoning. (Or refrigerate up to 6 hours in advance; bring to room temperature before proceeding.)
  • Put onions, ginger and lime juice in a mixing bowl with a big pinch of salt. Let macerate for 10 minutes or so, then add beets and cucumber to bowl. Season generously with salt and pepper and toss to coat well with juices. Leave to marinate, tossing occasionally, for at least 10 minutes and up to 30 minutes.
  • Prepare a bed of medium-hot coals for grilling or heat a stovetop grill pan. Lay the scallops on the grill and let them crisp gradually, for 5 minutes or so. Don't try to turn them until they are well browned or they'll stick. Flip and cook for 2 or 3 minutes more, until cooked through, but juicy.
  • Transfer scallops to a serving dish in one layer. Spoon beets and cucumbers over the scallops and sprinkle with dill, mint and chives. Squeeze a little more lime juice over everything and drizzle with good fruity olive oil.

  • Garlicky Buttery Scallops. This basic seared scallop recipe lets fresh seafood shine in a simple garlic butter sauce. To achieve a truly golden crust, cook the scallops primarily on one side over medium-high heat and try not to move them around, then flip and kiss the other side with just a touch of heat.
  • Grilled Scallops With Nori, Ginger, and Lime. Served with lime mayo, these nori-and-spice-rubbed scallops gain a smoky dimension from the grill. Aleppo-style pepper flakes bring warm depth without adding too much heat.
  • Seared Scallops With Red Chile Paste and Fennel Salad. Sear these scallops on only one side to preserve the meltingly tender, near-raw texture on the other end.
  • Grilled Scallops With Peach Sweet Chili Sauce. Inspired by the grilled fish-ball skewers found on the streets of Bangkok, this recipe pairs grilled, lightly smoky scallops with a tangy peach and chili sauce.
  • Scallops With Red Aguachile and Pickled Onions. This recipe from former guest editor Marcus Samuelsson accents thinly sliced raw scallops with fiery aguachile, cooling cucumber, and zingy pickled onions.
  • Sea Scallops With Celery Root and Meyer Lemon Salad. Keep this easy recipe for seared scallops on hand for last-minute hosting: the shellfish cooks in just 2 minutes, and the crisp celery root and Meyer lemon slaw provides refreshing contrast.
  • Pan-Seared Scallops With Chorizo and Corn. Instead of butter, sear scallops in chorizo oil to achieve a tender, succulent texture with a slightly smoky, savory flavor.
  • Spicy Tomato Shellfish Stew. This dynamic fish stew packs in littleneck clams, mussels, scallops, and anchovies—so, all the good things. Don’t forget crusty bread for dunking.
  • Seared Scallops With Brown Butter and Lemon Pan Sauce. Sear scallops in olive oil, then coat them in a glossy, ultra-simple pan sauce of butter, lemon juice, and capers.
  • Grilled Scallops With Creamed Corn. Instead of drowning beautiful, briny scallops in a heavy cream sauce, coat them in a chile-thyme dry rub and serve them over a plate of bright creamed corn enriched with a pat of unsalted butter.

  • Pat scallops dry with a dish towel or paper towels. It’s very important to get out as much of the liquid as possible.
  • Drizzle or brush scallops with olive oil on both sides and season with salt and pepper. Place back in the refrigerator until the grill is ready (it’s important to keep scallops cold for as long as possible).
  • Preheat an outdoor grill or indoor grill pan over medium-high heat. Rub the grates liberally with an oil with a high smoke point (such as canola or vegetable oil) to prevent the scallops from sticking. Place the scallops directly onto the grates and grill for 2-3 minutes per side, or until slightly charred on the outside and completely opaque.
