Homemade Grilled Breakfast Sausage Patties image

I looked and looked at the grocery store for a breakfast sausage that did not include sugar. It was a long and fruitless search, so I decided to make it myself. After a couple of tries, yielding rather bland tasting sausage, I realized that commercial sausage sits with its seasonings and preservatives, and possibly, flavor enhancers, in the grocer's refrigerator case for a long time. When you make this sausage, please don't skip the resting time in the refrigerator, because this allows the seasonings to bloom.

1 tablespoon rubbed sage
1 teaspoon kosher salt, or to taste
1 teaspoon dried parsley
½ teaspoon crushed red pepper flakes, or to taste
½ teaspoon fennel seeds
½ teaspoon ground black pepper, or to taste
½ teaspoon smoked paprika
½ teaspoon ground coriander
¼ teaspoon dried thyme
1 pound ground pork
1 tablespoon vegetable oil

Steps:

  • Stir sage, salt, parsley, red pepper, fennel, black pepper, smoked paprika, coriander, and thyme together in a small bowl.
  • Place ground pork in a bowl, add seasoning mix, and mix well using your hands until all ingredients are evenly distributed. Form into a roll about 2 inches in diameter and 6 inches long. Wrap tightly in plastic wrap and refrigerate for 8 hours, or up to 24 hours.
  • Clean and preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Slice seasoned pork into twelve 1/2-inch thick patties.
  • Place patties onto the hot grate. Close lid and allow to cook for 1 1/2 minutes. Rotate each patty 90 degrees and continue grilling for 1 1/2 minutes at a time, until juices run clear, 6 minutes total. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

A blend of garlic, seasonings, and red wine combine to give you all the flavor of sausage, without the hassle of stuffing the meat into links. Makes a fantastic burger, topped with grilled peppers, onions and provolone cheese.

1 pound ground pork
¼ cup dry red wine
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon dried parsley
¾ teaspoon paprika
½ teaspoon dried rosemary
¼ teaspoon white pepper
¼ teaspoon black pepper

Steps:

  • Combine ground pork, red wine, garlic, salt, parsley, paprika, rosemary, white pepper, and black pepper in a bowl and mix until evenly combined; do not overmix. Let sit in the fridge at least 4 hours, preferably overnight, in order for flavors to meld.
  • Preheat an outdoor grill over medium-high heat.
  • Divide the meat into 4 equal portions and form into patties. Cook on the preheated grill about 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 165 degrees F (74 degrees C).

¼ cup shredded Cheddar cheese
1 jalapeno pepper, seeded and minced
2 teaspoons taco seasoning
½ teaspoon ground coriander
4 hamburger buns

Steps:

  • Combine ground pork, Cheddar cheese, jalapeno, taco seasoning, and coriander in a large bowl. Using your hands, mix well until evenly combined. Form into 4 patties.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Grill patties for 4 minutes. Flip and grill for 3 minutes more. Remove from grill and let rest for 5 minutes. Serve on buns.

1 pound lean ground beef
1/2 pound bulk mild or hot Italian sausage
2 tablespoons Progresso™ Italian-style bread crumbs
6 slices (3/4 ounce each) mozzarella cheese
12 slices Italian bread, 1/2 inch thick
1/2 cup sun-dried tomato mayonnaise
1 cup shredded lettuce
1 medium tomato, thinly sliced

Steps:

  • Heat coals or gas grill for direct heat. Mix beef, sausage and bread crumbs in large bowl. Shape mixture into 6 patties, about 1/2 inch thick and 3 1/2 inches in diameter.
  • Cover and grill patties 4 to 6 inches from medium heat 12 to 15 minutes, turning once, until meat thermometer inserted in center reads 160°. Top patties with cheese. Cover and grill about 1 minute longer or until cheese is melted. Add bread slices to side of grill for last 2 to 3 minutes of grilling, turning once, until lightly toasted.
  • Spread toasted bread with mayonnaise; top 6 bread slices with lettuce, tomato and patties. Top with remaining bread slices.

3 tablespoons kosher salt
2 tablespoons cracked black pepper
3 tablespoons smoked paprika
2 tablespoons fennel seeds
2 teaspoons cayenne pepper, or to taste
2 teaspoons red pepper flakes, or to taste
2 tablespoons garlic, minced
4 tablespoons olive oil
2 red bell peppers, seeded and sliced in rings
2 green bell peppers, seeded and sliced in rings
1 sweet onion, sliced in rings
2 tablespoons salt, or to taste
1 1/2 tablespoons cracked black pepper, or to taste
16 ounces fresh mozzarella, thinly sliced
5 kaiser rolls, split in 1/2

Steps:

  • Preheat the grill to 350 degrees F.
  • In a large bowl mix together the pork and all of the spices. Mix well until evenly distributed. Shape the mixture into 5 equal patties. Grill the patties on each side until cooked to desired doneness, about 4 minutes on each side.
  • In a large bowl, add olive oil, peppers, onions, salt and pepper, and toss together. Coat the mozzarella in the oil mixture, and transfer the slices to a large plate.
  • Using a grate on top of the grill, arrange the onions and sliced peppers. Close the grill and allow to cook for 1 to 2 minutes on each side.
  • Put the sliced peppers, onions and mozzarella on top of each meat patty. Close the grill and cook until the cheese melts, about 1 minute.
  • Tuck a sausage patty into each roll and arrange on a serving platter.
  • Cook's Note: After assembling each sandwich, gently squeeze the patty together so the bread absorbs some of the juice.
