1 red pepper
1 green pepper
1 pound elbow macaroni
1/2 stick salted butter
3 tablespoons all-purpose flour
2 cups whole milk
1 cup grated Asiago cheese
1 cup Monterey Jack cheese
1/2 cup white Cheddar
1/2 cup Parmigiano-Reggiano
1 1/2 cups yellow sharp Cheddar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 teaspoon cayenne pepper, plus 1/2 teaspoon
1/2 jalapeno pepper, thinly sliced
1/4 cup seasoned bread crumbs

Steps:

  • Preheat grill to 350 degrees F.
  • Quarter red and green pepper, then place them on the grill, cooking until tender. Once grill marks are formed, remove peppers from grill and set aside. Boil elbow macaroni in salted boiling water until al dente - drain and set aside. In a large saucepan over medium heat, melt butter and then whisk in flour to thicken, about 1 minute. Add 1 cup milk and whisk in. Begin adding cheeses 1 at a time, thoroughly whisking each cheese. If sauce becomes too thick, add remaining cup of milk. Once all cheeses are blended add salt, black pepper, cayenne pepper, grilled peppers, jalapeno pepper and stir to combine. Add elbows to mixture and stir again. Once combined well, add to a cast iron 9 by 13-inch rectangle casserole dish, and sprinkle top with bread crumbs and an additional 1/2 teaspoon cayenne pepper. Place on grill for 12 minutes. Let stand a few minutes before serving.

4 tablespoons unsalted butter, softened
8 slices crusty bread
8 slices prosciutto (about 2 ounces)
8 slices monterey jack cheese (about 4 ounces)
1/2 cup pitted dates, thinly sliced
1/4 cup fresh basil leaves, torn

Steps:

  • Spread the butter on one side of each bread slice. Heat a large skillet over medium heat. Put 2 bread slices in the skillet, buttered-side down. Layer 2 slices of prosciutto, 1 slice of cheese, one-quarter each of the dates and basil, and another slice of cheese on each piece of bread. Close each with another piece of bread, buttered-side up.
  • Cook, pressing the sandwiches occasionally with a spatula, until the cheese melts and the bread is golden, 3 to 4 minutes per side. Repeat to make 2 more sandwiches.

12 thin slices prosciutto
12 thin slices hard salami
12 slices Italian or kalamata olive bread

Steps:

  • Layer the provolone, prosciutto and salami on six bread slices; top with remaining bread. Spread outsides of sandwiches with butter. , In a large skillet, toast sandwiches over medium heat for 2-3 minutes on each side or until golden brown and cheese is melted.

4 slices sourdough bread, country loaf cut on deep diagonal 1/3 inch thick slices
4 slices prosciutto
8 large fresh basil leaves
8 slices asiago cheese, 1/4 inch (young or drained fresh mozzarella cheese)
1/4 teaspoon crushed red pepper flakes (dried)
2 tablespoons olive oil
6 slices tomatoes, 1/3 inch (from about 1 large)

Steps:

  • Preheat oven to 400.
  • Lightly butter 1 side of each bread slice.
  • Top unbuttered side of 2 pieces with 2 proscuitto slices, then 4 basil leaves, then cheese slices.
  • Sprinkle with salt and crushed red pepper. Top with remaining bread, buttered side up.
  • Heat olive oil in an oven proof skillet over medium high. Cook until golden brown on the bottom, about 4 minutes.
  • Turn sandwich over and transfer to the oven to bake until cheese is melted. Remove.
  • carefully lift off top bread slices and insert 3 tomato slices into each, top again and serve.

1 slice jalapeno Jack cheese
1 roma tomato, thinly sliced

Steps:

  • Heat a cast iron or nonstick skillet over medium heat.
  • Spread 1/2 teaspoon mayonnaise on each slice of bread. Place bread slices mayo-side down in the hot skillet. Place jalapeno Jack cheese on 1 slice of bread, and top with tomato slices. Place mozzarella cheese on the other slice, top with basil, then top with Cheddar cheese. Cook until bread turns golden brown, 3 to 5 minutes. Carefully invert the piece with the tomato onto the piece with the basil.

2 prosciutto slices
1 teaspoon coarse-grained mustard
8 fresh basil leaves
1/4 cup freshly grated mozzarella
1 skinless boneless whole chicken breast, halved (about 1 pound)

Steps:

  • Prepare grill.
  • On a work surface spread prosciutto slices evenly with mustard. Top slices with basil leaves and sprinkle evenly with mozzarella. Starting with a short end roll up each prosciutto slice.
  • Pat chicken dry and put on a work surface, skinned sides down. Remove "tender" (fillet strip located on either side of where breast bone was) from each breast half, keeping rest of chicken breast intact, and reserve tenders for another use. (There should be 1 tender from each breast half.)
  • To form a long thin pocket in chicken for prosciutto roll: Put chicken breast halves on cutting board and, beginning at thicker end of breast half, horizontally insert a thin sharp knife three fourths of the way through center of each. Open cut to create a 1-inch-wide pocket in each half. Fit a prosciutto roll into each pocket and season chicken with salt and pepper.
  • Grill chicken on a lightly oiled rack set 5 to 6 inches over glowing coals until cooked through, about 5 minutes on each side. (Alternatively, chicken may be grilled in a hot well-seasoned ridged grill pan over moderately low heat.)

2 ripe, sweet (but not soft) freestone peaches
3 thin slices prosciutto, or more as needed, torn into ribbons
8 small bamboo skewers, soaked in water 20 minutes
6 ounces burrata cheese
1 tablespoon extra virgin olive oil, for drizzling
Coarse sea salt to taste
Freshly ground black pepper, to taste
1 tablespoon finely sliced fresh basil leaves

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cut peaches in half and remove peach stones. Cut each half in half again.
  • Wrap prosciutto around each peach section; secure with small bamboo skewers.
  • Grill peaches, turning often, until prosciutto gets a little crisp around the edges and the peaches begin to caramelize, about 6 minutes.
  • To serve, spoon burrata onto serving plates. Remove peaches from skewers; place several of the grilled peaches around the cheese. Drizzle with olive oil. Top with a sprinkle of sea salt and pepper; garnish with basil.

4 tablespoons butter, divided
3 -6 ounces thinly sliced prosciutto (can substitute pancetta)
1 bunch basil, washed
4 -6 slices bread (I prefer sourdough or marble rye)
1 (20 ounce) package Simply Macaroni & Cheese, prepared to package directions

Steps:

  • Melt 1/4 -1/3 of butter in large skillet over medium heat.
  • Place 1-2 ounces prosciutto on 1 slice of bread. Cover prosciutto with single layer of basil leaves. Scoop roughly 2/3 -1 cup of prepared macaroni and cheese on top of basil and top with another slice of bread to form a sandwich.
  • Place sandwich in skillet with heated butter and cook for about 3 minutes on each side, or until bread is toasted enough for your taste.
  • Repeat with remaining ingredients.

  • First crisp up the prosciutto. Heat your oven to 350 degrees, spread the prosciutto out on a baking sheet, and bake it for 10-12 minutes until it is stiff and crisp. I recommend using a Silpat if you have one.
  • Next spread the inside of the slices of bread with the mustard. Then add the MT Tam cheese on top of the mustard. MT Tam is very flavorful, and I didn't want it to overpower the mustard and prosciutto, so I just added a thin layer of cheese to each slice of bread. Adding cheese to each slice of bread holds the prosciutto in place. Lastly, sandwich the prosciutto between the two slices of bread, it will likely break up into smaller pieces at this point, but that is ok.
  • Heat a skillet over medium heat and add the sandwich. Toast each side for 3-5 minutes until golden brown. Slice the grilled cheese in half and eat immediately.
