1 red onion, sliced into 1/2 inch circles
1 lb. large ripe tomatoes of your choosing, colorful or one color, cut in half
3 Tbsp. extra virgin olive oil
1/2 Tbsp. Mrs. Dash® Original Blend
4 Tbsp. fresh basil, cut into slivers
3 Tbsp. low sodium Parmesan, shredded

Steps:

  • 1. Brush the onion slices and the tomatoes with olive oil.
  • 2. Grill on both sides over medium heat until marked and lightly cooked.
  • 3. Sprinkle with Mrs. Dash® Original Blend.
  • 4. To serve, transfer to small plates. Sprinkle with Parmesan and basil.

GRILLED AVOCADO, TOMATO, RED ONION SALAD



Grilled Avocado, Tomato, Red Onion Salad image

10 tomatoes, quartered
4 avocados, peeled, halved, and pitted
Extra-virgin olive oil, for drizzling
1 red onion, sliced
1/2 lemon
1 cup pesto sauce
1/2 cup pine nuts
Parmiggiano-Reggiano

Steps:

  • Preheat a grill over medium heat.
  • Cover a large tray with tomato quarters, and set aside.
  • Place avocado halves in a bowl and drizzle with olive oil. Place each half on a hot open grill for about 30 to 45 seconds. Remove and place on top of the tomatoes arranged on tray. Drizzle with olive oil again.
  • In another bowl, cover the red onion slices with the juice from the lemon half and olive oil. Place onions in the empty avocado pit holes. Cover with the lemon/olive oil mix. Then, top with pesto, distributing generously on all sides. Sprinkle pine nuts and cheese on top, to taste.

4 tablespoons olive oil, plus more for grates
1 Vidalia onion, cut all the way through the root end into 8 wedges (see note, below)
Coarse salt and ground pepper
2 tablespoons fresh lemon juice (from 1 lemon)
12 ounces baby salad greens (such as red leaf, green leaf, or romaine mix)
4 ounces soft goat cheese, crumbled

Steps:

  • Heat grill to medium; lightly oil grates. In a small bowl, gently toss onion with 1 tablespoon oil; season with salt and pepper. Grill wedges, turning occasionally, until soft, 15 to 20 minutes.
  • Meanwhile, in a large bowl, whisk together lemon juice and remaining 3 tablespoons oil; season with salt and pepper. Add greens, and toss to coat. Serve topped with onion and cheese.

1 large onion
1 tablespoon olive oil
1/3 cup milk
1 teaspoon cider vinegar
1/2 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 lbs red boiling potatoes (about 5-6 medium)
2/3 cup sliced celery

Steps:

  • Heat grill.
  • Slice onion into slightly larger than 1/4-inch slices and brush both sides of each slice with olive oil.
  • Place onion on grill and cook 4-5 minutes per side or until brown and tender.
  • Let onion cool and then chop.
  • Place potatoes into boiling salted water for about 20-25 minutes or until just tender; drain.
  • When cool enough to handle, peeled and cut into 3/4 inch pieces.
  • In a large bowl, stir milk and vinegar together and let sit 1-2 minutes to thicken.
  • Whisk in mayo, salt and pepper.
  • Stir in onions.
  • Add potatoes to bowl, stir and then add celery.
  • Stir gently.
  • Cover and refrigerate for several hours before serving.

1/2 pound applewood smoked bacon, optional
8 russet potatoes
Gray salt and freshly ground black pepper
6 tablespoons extra-virgin olive oil
2 bunches green onions, both white and green parts, trimmed
1/3 cup Champagne vinegar
1 heaping tablespoon Dijon mustard
2 shallots, minced
1 teaspoon gray salt
1/2 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil (or use half bacon fat)
Bacon fat, optional
4 tablespoons chopped Italian parsley leaves

Steps:

  • Prepare a grill to medium-high heat.
  • If using bacon, cut into 1/2-inch pieces and render in a skillet over low heat until crisp. Remove the bacon from pan, and reserve the bacon fat for the dressing.
  • Wash potatoes and slice into 1/2-inch thick rounds. Cover with cold water and about 2 tablespoons of salt in a medium saucepan and bring to boil. Partially cook until crisp-tender, about 4 minutes. Drain the potatoes, put in bowl, and toss with 1/4 cup olive oil, salt and black pepper, to taste.
  • Drizzle the green onions with the remaining 2 tablespoons olive oil (or the olive oil-bacon fat blend), season with salt and pepper to taste, and grill until tender. Remove from grill and allow to cool. Cut scallions into 1/2-inch pieces.
  • Grill the potatoes until golden brown and tender. If the potatoes are still firm but already brown, finish cooking in a 375 degrees F oven. Let the potatoes cool to room temperature. Slice the potatoes into 1/2-inch sticks and put in a large bowl. Keep all ingredients separate until the day of the party.
  • Make the dressing: combine Champagne vinegar, Dijon, shallot, salt, and pepper in a medium bowl. Slowly drizzle in extra-virgin olive oil, whisking constantly, until emulsified. (You may add in some of the optional strained bacon fat for taste at this stage.) Check seasoning. Keep chopped Italian parsley separate until ready to serve, and toss in at the last minute.
  • To serve, pour dressing over potatoes, green onions, and bacon, if using, and toss.

12 ears of corn, husks and silk removed and blanched
1/2 cup olive oil, plus extra for brushing the corn
1/4 cup aged sherry vinegar
1 tablespoon Dijon mustard
1 garlic clove, minced
2 large red bell peppers, diced
1 large Vidalia onion, thinly sliced
4 ripe plum tomatoes, finely chopped
1 jalapeno pepper, finely chopped
1/4 cup finely chopped chives
Salt and pepper

Steps:

  • Preheat grill. Brush the blanched corn with oil and season with salt and pepper to taste. Grill until slightly charred on all sides, about 2 minutes. Remove from the grill and with a sharp knife, scrape the kernels into a medium bowl.
  • Combine the vinegar, mustard, and garlic in a large bowl and slowly whisk in the remaining 1/2 cup of olive oil until emulsified. Add the corn kernels, bell peppers, onion, tomatoes, jalapeno, and chives, and toss to coat with the dressing. Season with salt and pepper.

2 small red onions, cut into 3/4-inch-thick rounds
1 12-ounce container cherry tomatoes, halved
1 5-ounce package baby arugula
2 cups (packed) torn fresh basil leaves
1/2 English hothouse cucumber, halved lengthwise, then thinly sliced crosswise
1/2 cup oil-cured black olives, pitted

Steps:

  • For vinaigrette:
  • Whisk vinegar, shallots, and mustard in small bowl to blend. Gradually whisk in oil. Season vinaigrette with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring vinaigrette to room temperature and rewhisk before using.)
  • For salad:
  • Spray grill rack with nonstick spray. Prepare barbecue (medium-high heat). Cut cornbread into 4 squares; remove from pan. Cut each square into four 1-inch-wide strips. Brush cornbread strips lightly on all sides with oil. Grill bread just until grill marks appear, about 1 minute per side. Transfer bread to work surface; cool. Brush onion rounds with oil. Grill until tender and golden, turning once, about 6 minutes per side. Transfer to large bowl; cool.
  • Cut bread into 1-inch cubes. Separate onion rounds into rings; return onions to same bowl. (Grilled cornbread and onions can be prepared 4 hours ahead; let stand at room temperature.)
  • Add tomatoes, arugula, basil, cucumber, and olives to bowl with onion rings. Add vinaigrette and toss to coat, then add cornbread and toss gently; serve.

4 medium red onions, unpeeled
1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons white wine vinegar
1 pinch cayenne pepper
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
chopped fresh parsley (optional)

Steps:

  • peel onions, leaving stem ends intact.
  • Cut shallow cross in root ends.
  • In large bowl, stir together oil, lemon juice, vinegar and cayenne.
  • Add onions, rolling to coat well.
  • Let stand for 30 minutes, rolling onions, in mixture occasionally.
  • With slotted spoon, remove onions, stir sugar, salt and plack pepper into marinade and set aside.
  • Cook onions on greased grill over medium hot coals or on medium setting, turning every 5 minutes, for about 30 minutes or just until lightly charred all over and tender when pierced with knife.
  • Let cool slightly, remove stems and charred outer layers.
  • In food processor fitted with thin slicing blade or using very sharp knife, cut onions into very thin slices.
  • Toss with reserved marinade.
  • Cover and refrigerate for at least 4 hours or overnight.
  • Just before serving, arrange onions on individual salad plates.
  • Garnish with parsley, if using.
