Grilled Lime Fiesta Chicken is tender and juicy with the perfect Tex-Mex flair. This marinated chicken recipe has all the spice and flavor and perfect atop the grill and your favorite Mexican Food.

3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon vegetable oil
1 lime juiced
1 teaspoon minced garlic
1 teaspoon fresh cilantro finely chopped
2 tablespoons Red Bell Pepper Finely Chopped
1 teaspoon House Seasoning Blend
4 boneless chicken breasts

Steps:

  • Combine soy sauce, honey, vegetable oil, lime juice, garlic, bell pepper and cilantro in a small bowl; stir until combined.
  • Transfer to a gallon sized zipper bag.
  • Add chicken to zipper bag, seal and toss to coat all of the chicken in the marinade.
  • Allow to marinate for 30 minutes to 3 hours.
  • Preheat grill to medium high.
  • Grill chicken on each side for 6-8 minutes or until internal temperature reaches 160 degrees.
  • Remove from heat, cover and allow to rest for 10 minutes before serving.

8 boneless skinless chicken breast halves (4 ounces each)
1/2 cup lime juice
1/3 cup olive oil
4 green onions, chopped
4 garlic cloves, minced
3 tablespoons chopped fresh dill, divided
1/4 teaspoon pepper

Steps:

  • Pound with a meat mallet to 1/4-in. thickness. In a shallow dish, combine the lime juice, oil, onions, garlic, 2 tablespoons dill and pepper; add chicken. Turn to coat; refrigerate, covered, 2-4 hours. , Drain and discard marinade. Grill chicken, uncovered, over medium-hot heat for 6-7 minutes on each side, or until a thermometer reaches 165 °. Sprinkle with remaining 1 tablespoon dill.

Tequila and lime seasoned chicken breast topped with Tex-Mex bean salad. Quite tasty. This is great for a summer BBQ. I serve this with grilled corn-on-the-cob.

1 (15 ounce) can black beans, rinsed and drained
1 (15 1/4 ounce) can sweet whole kernel corn, drained
1 (15 ounce) can black-eyed peas
1 small red onion, chopped
1/2 cup chopped green bell pepper
1 (4 1/2 ounce) can diced green chilies
2 tomatoes, diced and drained
1 cup Italian salad dressing
1 1/2 tablespoons chopped fresh cilantro
2 cloves garlic, minced
1/2 teaspoon garlic salt
6 (6 ounce) boneless skinless chicken breasts
3 fresh whole limes
1/3 cup tequila or 1/3 cup apple juice
3 teaspoons paprika
2 teaspoons salt
1 teaspoon pepper
6 romaine lettuce leaves

Steps:

  • Combine all ingredients for Texas Bean Salsa. Cover, and refrigerate 6 hours or overnight.
  • About 45 minutes before serving, place chicken breasts in baking dish. Squeeze lime juice over chicken. Drizzle with tequilla or apple juice. Sprinkle with paprika, salt and black pepper. Cover and marinate 10-60 minutes. Remove from marinade and grill or broil 10-12 minutes, until cooked, turning once.
  • Lay a lettuce leaf on each plate. Place a chicken breast on top of the lettuce leaf, and top each chicken breast with 1/6 of the Texas Bean Salsa. Garnish with additional cilantro leaves and/or lime wedges if desired.

2 large tomatoes, seeded and chopped
1 cup diced fresh pineapple
2/3 cup cubed avocado
2 green onions, thinly sliced
1 tablespoon lime juice
1 tablespoon cider vinegar
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large resealable plastic bag, combine the lime juice, oil, garlic and Greek seasoning; add the chicken. Seal bag and turn to coat; refrigerate for 2 hours. In a small bowl, combine salsa ingredients. Chill until serving., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 5-8 minutes on each side or until a thermometer reads 170°. Serve with salsa.

Steps:

  • Directions:.
