Delicate langoustines have a bright salmon-pink hue, whether raw or cooked. Make sure they're lovely and fresh - there should be no black spots on the tail or head, and they should feel firm and plump. Their sweet flavour works a treat with savoury, spicy 'nduja.

10 medium langoustines, from sustainable sources
25 g higher-welfare 'nduja
40 g unsalted butter, (at room temperature)
1 lemon

Steps:

  • Add 40g sea salt to 2 litres of water and bring to the boil in a large pan. Have a large bowl ready with 2 litres of ice-cold water.
  • Plunge the langoustines into the hot water for 40 seconds (using tongs), remove and refresh in the cold water, then shake dry.
  • Once blanched, carefully cut each langoustine in half lengthways.
  • Preheat the grill to medium-high.
  • Blitz the 'nduja in a blender with 20ml of warm water until you have a smooth paste. Add the butter and blend again to combine.
  • Lay the langoustines cut-side-up on a large roasting tray, loosen them within their shells, and spoon over the 'nduja butter.
  • Place under the grill for 4 to 5 minutes, or until the butter is bubbling and the langoustines are golden. Finish with a squeeze of lemon juice, and serve with napkins and toothpicks for picking the meat.

2 1/4 pounds ripe yellow tomatoes
1 large yellow pepper, halved and seeded
1 small clove garlic
1 small shallot, halved
1 tablespoon white wine vinegar
Kosher salt and freshly ground black pepper
1 English cucumber, peeled and halved
1/4 cup extra-virgin olive oil, plus more for drizzling
1/2 cup torn fresh basil leaves

Steps:

  • Preheat a grill or grill pan over medium-high heat. Grill the tomatoes and half of the yellow pepper, turning occasionally, until lightly charred on all sides, about 5 minutes. Transfer to a blender along with the garlic, shallot, vinegar, salt and pepper and half of the cucumber. Puree until very smooth. Slowly add the olive oil with the motor running. Strain through a medium-meshed sieve into a bowl. Cover and chill at least 4 hours and preferably overnight. Finely chop the remaining half yellow pepper and cucumber and keep refrigerated.
  • Before serving, season the gazpacho with salt and pepper. Ladle into bowls and top with a little of the diced pepper and cucumber, then drizzle with olive oil and sprinkle with basil.

8 ounces baby arugula, rinsed and drained well
1 tablespoon balsamic vinegar
1/4 teaspoon coarse salt

Steps:

  • Heat oil in a large skillet over medium heat. Add garlic; cook, stirring constantly, until garlic is fragrant but not browned, 2 to 3 minutes. Add arugula; cook, stirring constantly, until slightly wilted, 1 to 2 minutes. Add vinegar; cook, stirring constantly, until most of the vinegar has evaporated, about 1 minute. Stir in salt; season with pepper. Serve immediately.

2 pounds Danish langostines/ Norwegian lobsters

Steps:

  • Bring the water and salt to a boil in a large pot. The water should taste like the ocean.
  • Add the live langoustines and boil them for 3 to 4 minutes. Remove from the water and cool.
  • Eat them, as is, with aioli (garlic mayonnaise) and toast.

PEEKY-TOE CRAB AND GREEN TOMATO SALAD WITH CHILLED GAZPACHO SAUCE



Peeky-Toe Crab and Green Tomato Salad with Chilled Gazpacho Sauce image

12 ounces lump crab meat
1 tablespoon chives, sliced
1 tablespoon tomatoes, peeled, seeded and small dice
1/4 cup mayonnaise
1 tablespoon lemon juice
2 tablespoons basic vinaigrette (see recipe)
Fine sea salt and freshly ground white pepper to taste
3 to 4 green tomatoes, peeled, seeded and minced
1/2 teaspoon minced lemon zest
2 tablespoons lemon oil
Fine sea salt and freshly ground white pepper to taste
4 to 5 ripe red tomatoes, blended and strained
2 tablespoons olive oil
3 tablespoons Banyuls vinegar or to taste
Fine sea salt and freshly ground pepper to taste

Steps:

  • To make the crab salad, pick through the crabmeat and remove any cartilage or shells. Combine all remaining ingredients in a large bowl and mix to combine. Season with fine sea salt and freshly ground white pepper.
  • For the green tomato relish combine all ingredients in a bowl and mix to combine. Season with fine sea salt and freshly ground white pepper.
  • For the gazpacho sauce, combine all ingredients. If the tomatoes are very sweet adjust the flavor by adding more Banyuls vinegar. Season with fine sea salt and freshly ground pepper.
  • To serve the crab salad, set out 4 chilled plates and place a 2-inch ring mold or round cookie cutter in the center of each plate. Fill the ring mold with the crab salad and top with a thin layer of the green tomato relish. Spoon the gazpacho sauce around the crab salad in a thin layer. To garnish the dish, place "dots" of the green tomato relish in the gazpacho sauce around the crab salad and top the crab salad with a basil top.

Brandade of Cod With Langoustines and Gazpacho Sauce image

5 tablespoons unsalted butter
1/2 medium onion, finely diced
1 leek, white part only, cleaned and finely diced
12 ounces cod or scrod fillets, skinned, boned and cut into 1/2-inch dice
2 cups plus 2 tablespoons double or heavy cream
1/2 package unflavored gelatin
1 1/2 teaspoons salt, plus more to taste
4 cups ripe cherry tomatoes
4 tablespoons extra-virgin olive oil
3 cups fish stock
36 langoustines (or medium shrimps)
3 ounces baby spring greens, washed and dried
Freshly ground black pepper to taste
1 teaspoon lemon juice

Steps:

  • Melt 1 tablespoon of the butter in a large pan. Add the onion and leek and cook, covered, until soft but not browned. Add the cod and cook for 30 seconds. Add 1 cup of the cream, bring to a boil and remove from heat.
  • Soften the gelatin in 2 tablespoons of tepid water. Add 2 tablespoons of the cream mixture, stirring constantly. Add the gelatin mixture to the cream mixture and stir until smooth. Puree in a blender with 1/2 teaspoon of salt, then pass through a chinois or fine-mesh sieve into a metal bowl set on ice. Refrigerate to set lightly.
  • Whip 1 cup of cream until it forms soft peaks. Fold the cod mixture into the whipped cream to make a mousse. If the mixture becomes loose in the process, briefly whisk to restore texture. Refrigerate to set, about 2 hours.
  • Puree the tomatoes in a food processor or blender, then push them through a fine-mesh sieve. In a pan over low heat, simmer them for 20 minutes, until reduced by half. Add the remaining 2 tablespoons of cream as well as the remaining 4 tablespoons of butter, diced, and 2 tablespoons of the olive oil. Season to taste and set aside.
  • Bring the fish stock to a boil in a large pan. Immerse the langoustines in the stock for about 1 minute, turn and cook for another 30 seconds. Remove them with a slotted spoon. Reserve the stock for another purpose.
  • Toss the greens with the remaining 2 tablespoons of oil and sprinkle with salt, pepper and lemon juice.
  • To serve, place a small mound of the greens on each of 6 plates. Form the brandade into neat "footballs" about 1 inches long, using the bowls of 2 teaspoons as a mold. Place 6 of these and 6 langoustines on each plate. Spoon the sauce around them.

1 1/2 pounds cherry tomatoes
3 bell peppers (any color)
2 medium red onions
2 pound zucchini (4 medium), trimmed and halved lengthwise
4 garlic cloves, peeled
1 1/4 pound sweet or hot Italian sausages
3 tablespoons Sherry vinegar
1/2 teaspoon sugar
1 pound ziti
1/2 cup chopped fresh flat-leaf parsley
1/3 cup chopped fresh basil
1 cup crumbled or thinly shaved ricotta salata or French feta
Special Equipment
5 (12-inch) wooden skewers (soaked in water 30 minutes)

Steps:

  • Stir 1 teaspoon each of salt and pepper into 6 tablespoons oil.
  • Toss tomatoes with 1 tablespoon seasoned oil, then thouread onto skewers.
  • Trim off bottoms and tops of bell peppers, then halve peppers lengthwise.
  • Quarter onions lengthwise, leaving root ends intact. Brush onions, peppers, and zucchini generously with some seasoned oil.
  • Put garlic on a double layer of foil and drizzle with some seasoned oil, then wrap tightly in foil, twisting to seal.
  • Put vegetables on a large tray.
  • Brush sausages lightly with some seasoned oil and put on a plate.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas). Grill vegetables, garlic, and sausages, in batches if necessary, covered only if using a gas grill, turning occasionally (frequently for garlic), until tomatoes are charred and slightly wilted, 3 to 5 minutesutes; bell peppers are blackened in spots, 8 to 10 minutesutes; onions and zucchini are tender, 8 to 12 minutesutes; garlic is softened and caramelized in spots, about 10 minutesutes; sausages are browned and cooked thourough, 12 to 15 minutesutes. Transfer as cooked to a platter (or platters) and keep warm, covered.
  • Peel peppers. Coarsely chop 2 bell pepper halves and 2 zucchini halves and transfer to a blender. Add garlic, 4 pieces of onion, vinegar, sugar, 3/4 teaspoon salt, 1/2 teaspoon pepper, half of tomatoes, and remaining 1/4 cup oil and purée until as smooth as possible.
  • Transfer remaining tomatoes to a large serving bowl and keep warm, covered. Chop remaining peppers, onion, and zucchini and add to tomatoes.
  • Meanwhile, cook ziti in a pasta pot of boiling salted water (3 tablespoons salt for 6 quarts water) until al dente. Drain in a colander, then add to grilled vegetables and toss with sauce. Sprinkle with herbs and cheese, then serve with sausages.

10 Scottish langoustines , heads removed, shelled, and tails left on
1 tsp hazelnuts , toasted
25g butter
few parsley leaves, finely chopped
1 tsp olive oil
10 wooden skewers

Steps:

  • Thread the langoustines carefully onto the skewers and chill for up to a day. For the butter, finely grate or chop half the hazelnuts (grating gives the nuttiest flavour), then roughly chop the rest. Tip into a small saucepan with the butter, parsley and a little seasoning, then set aside.
  • When ready to serve, melt the hazelnut butter in the pan. Heat a griddle pan or barbecue, then brush the langoustines with the oil. Griddle each skewer for 1-2 mins, turning, until pink and just cooked. Pile on a platter, pour half the hazelnut butter over the langoustines, then serve the rest in a small bowl for dipping.
