Time 1h25m

Number Of Ingredients 14

1/3 cup Fusia Asian Inspirations Soy Sauce
¼ cup water
2 tablespoons Carlini Toasted Sesame Oil or Olive Oil
2 tablespoons Simply Nature Organic Wildflower Honey
2 tablespoons packed Simply Nature Organic Light Brown Sugar (or sub coconut sugar)
1 small or medium lime, juiced
3 cloves garlic, finely minced
1 tablespoon fresh grated ginger
1 teaspoon Stonemill Crushed Red Pepper Flakes
2 ½ pounds chicken drumsticks, skin removed (or chicken breasts and/or thighs will also work)
To garnish:
Chopped Southern Grove Honey Roasted Peanuts
Diced green onion
Diced cilantro

Steps:

  • Make the chicken marinade. In a large bowl, whisk together soy sauce, water, oil, honey, brown sugar, lime juice, garlic, ginger and red pepper flakes. Reserve 1/2 cup of marinade and place in a small bowl in the fridge. You'll use this for glazing the chicken on the grill later.
  • Marinate the chicken: Pat the drumsticks dry, remove the skin, season them with a pinch of salt, and add them to the large bowl or a shallow dish with the Thai chicken marinade. Mix to coat the chicken evenly, then marinate in the refrigerator for a minimum of 1 hour, or up to 24 hours.
  • About a half hour before you're ready to cook the chicken, remove the chicken from the marinade and allow it to come to room temperature. Preheat a grill to 400 degrees F.
  • Grill the chicken: brush the hot grill grate with oil. Place the chicken on the grill and cook for 8 minutes, then flip. Generously brush each drumstick with the reserved marinade a few times, and grill for an additional 8 minutes. Turn the chicken over one last time, brush again with the remaining marinade, and cook for 5 more minutes or until no pink remains in the center of the chicken.
  • To serve: Place the chicken on a platter or large plate, then garnish with honey roasted peanuts, diced green onion and cilantro. Serves 4, 2 drumsticks each.

Yield 6-8 servings

Number Of Ingredients 12

3 lb. skinless, boneless chicken thighs
3 1/2 tsp. kosher salt, divided, plus more
1 (12-oz.) can ginger beer
6 garlic cloves, finely grated
3/4 cup plus 6 Tbsp. unseasoned rice vinegar, divided
3 Tbsp. plus 1 tsp. finely grated ginger (from about one 4" piece)
1 Tbsp. white miso
3/4 cup plus 1 Tbsp. vegetable or sunflower oil, plus more for grill
6 scallions, finely chopped
2 bunches radishes, preferably with greens, halved lengthwise
Freshly ground black pepper
3 heads Little Gem lettuce or romaine hearts, leaves separated

Steps:

  • Season chicken on all sides with 2 1/2 tsp. salt and place in a large bowl. Add ginger beer, garlic, 3/4 cup vinegar, and 3 Tbsp. ginger to bowl and toss to combine. Cover and chill at least 2 hours and up to 24 hours.
  • Meanwhile, whisk miso, 3/4 cup oil, 1 tsp. salt, and remaining 6 Tbsp. vinegar and 1 tsp. ginger in a small bowl. Mix in scallions. Let dressing sit at room temperature up to 1 hour, or chill up to 24 hours.
  • Prepare a grill for high heat; brush grate lightly with oil. Grill chicken, turning occasionally, until lightly charred and an instant-read thermometer inserted into thickest part of thigh registers 165°F, 12-15 minutes. Transfer to a platter and tent with foil to keep warm.
  • Toss radishes with remaining 1 Tbsp. oil in a medium bowl; season lightly with salt and pepper. Grill, turning occasionally, until charred in spots, 8-10 minutes. Transfer to platter with chicken.
  • Toss lettuce with about one-third of dressing in a large bowl. Drizzle another third of the dressing over grilled radishes. Serve remaining dressing alongside.

GINGER BEER CAN GRILLED CHICKEN

Ginger Beer Can Grilled Chicken image

Create a fun ginger beer chicken on the grill with a simple can of soda and a ginger ale glaze.

Provided by Souther Living Magazine, Tested by Christiane Potts

Categories     Main

Yield 8-10 servings

Number Of Ingredients 14

1 (13- x 9-inch) disposable aluminum baking pan
2 tablespoons kosher salt
2 teaspoons paprika
2 teaspoons sugar
1 teaspoon black pepper
¾ teaspoon ground ginger
½ teaspoon ground red pepper
2 (3½- to 4-lb.) whole chickens
2 (12-oz.) cans ginger ale
Ginger Ale Glaze
2 cups ginger ale or ginger beer
2 tablespoons light brown sugar
2 teaspoons grated fresh ginger
⅛ teaspoon ground red pepper

Steps:

  • Light 1 side of grill, heating to 400° to 475° (medium-high to high) heat; leave other side unlit, placing disposable baking pan under grill grate. Stir together salt and next 5 ingredients; sprinkle mixture inside cavity and on outside of each chicken.
  • Reserve just ¾ cup ginger ale from each can to put toward the 2 cups needed in glaze. Place chickens upright onto each can, fitting can into cavity. Pull legs forward to form a tripod.
  • Pour water to a depth of 1 inch into disposable pan. Place chickens upright on unlit side of grill above pan. Grill, covered with grill lid and rotating chickens occasionally, 1 hour and 20 minutes to 1 hour and 30 minutes or until golden and a meat thermometer inserted in thickest portion registers 165°. Let stand 10 minutes. Remove chickens from cans, and carve. Serve with Ginger Ale Glaze.
  • Stir ginger, brown sugar, grated ginger, and ground red pepper together in a small saucepan. Bring to a boil over high heat; reduce heat to medium, and cook, stirring occasionally, 15 to 20 minutes or until reduced to about ¼ cup.

  • With paper towels, pat chicken as dry as you can. I even go so far as to somewhat squeeze around the legs and wings with the paper towel.
  • In a small bowl, combine oil, cumin, garlic powder, onion powder, kosher salt, paprika, chili powder, oregano, and black pepper. Rub it all over the chicken and inside the chicken cavity. Use every last bit.
  • Place half-full beer can into can attachment of beer can chicken holder. We have a beer can chicken holder similar to this one. Lower the chicken onto the open can, so the chicken is sitting upright, with the can in its cavity. Then tilt the chicken a bit to the side, and sprinkle chicken all over with a bit more kosher salt and a generous sprinkling of just-cracked, coarsely ground black pepper. It works best to have someone tilting and rotating the chicken as you add this final sprinkle of flavor and texture.
