EGGS ON THE GRILL
Have you ever tried eggs on the grill by using a muffin pan? Just spray the pan and crack the eggs and put them on the grill. Try adding some chopped peppers and onions or anything to your liking.

Steps:
- Preheat an outdoor grill for medium high heat.
- Coat all holes of a muffin pan with cooking spray and crack an egg into each hole.
- Place on grill and grill over medium high heat for 2 minutes, or to desired doneness.

GRILLED FRIED EGGS
Keep the kitchen cool by preparing fried eggs on the barbecue in individual mini foil trays. It's a fun presentation and cleanup is easy!

Steps:
- Preheat grill to medium heat (about 350°F/180°C).
- For each egg, create a small round tray or boat with aluminum foil. To do this, fold a piece of foil (about 5 x 12 inches/13 x 30 cm) in half. Shape the double thickness of foil into a round tray, about 4 inches (10 cm) in diameter, by curving up edge to form a lip, then folding over as necessary.
- Brush the bottoms of the trays with oil or coat with cooking spray. Place the trays on the grill. Crack an egg into each tray.
- Close the lid and cook for a couple minutes until egg whites start to set. For a soft yolk, open the lid and continue cooking for 2 to 3 minutes until eggs are cooked as desired. For a firm yolk, finish cooking with the lid closed.
- Remove from grill. Sprinkle with pepper.

- Cook pancetta in large nonstick skillet over medium-high heat until crisp. Transfer to paper towels. Reserve skillet with drippings.
- Melt butter in extra-large nonstick skillet over medium heat. Add 4 bread slices; top each with 2 provolone slices. Sprinkle with black pepper. Cook until cheese melts, 3 to 4 minutes.
- Meanwhile, heat skillet with drippings over medium heat. Crack eggs into skillet; cook until whites are set but yolks are still runny, 2 to 3 minutes. Set 6 pancetta slices and 2 eggs atop each of 2 cheese toasts. Top eggs with onion, Parmesan, and basil, then remaining bread slices, cheese side down. Cut sandwiches in half and serve.

This is easily changed to fit your personal preferneces. Eggs on the grill in a muffin pan- easy for a low-carb side dish, breakfast, camping etc.. I've made these with parmesean and cooked asparagus, cheese and salsa as I describe here, with just a little salt and pepper- the possibilities are endless.

GRILLED FRIED EGG, BOLOGNA AND CHEESE SANDWICH
I was craving fried bologna. Came across an Egg, Cheese Bologna recipe and tweaked it a little bit to make it like a grilled cheese sandwich! Delicious!!

- Prep:.
- Slit the bologna in 4 places alond the side to 1/2 to middle (like a pinwheel) to prevent it from curling when fried.
- Mayo one side of 2 slices of bread (I prefer to grill with mayo -- browns better than butter -- a trick I learned from a diner).
- Add small pat of butter to grease a non-stick frying pan on medium. Add the bologna. Fry to your liking turning frequently as not to burn. Transfer to one piece of your bread on the un-mayo side.
- Fry an egg. You will have plenty of grease to fry it inches Poke yolk. Flip. Add a slice of cheese to cooked side. Fry it through. Transfer to on top of bologna.
- Put other slice of bread over. Mayo side out. Transfer to fry pan. Grill it like you would a grilled cheese sandwich. I put Frank's Red Hot cayanne pepper sauce as a condiment. (milder than Tabasco) -- use whatever condiment you want or leave it plain! Super YUMMY!
FLAT TOP GRILLED BURGERS WITH FRIED EGGS
The flat top grill is the best way to cook a burger. These are simple to make and delicious! The fried egg adds an extra bit of richness and the flour makes an excellent crust. Add whatever other toppings you choose.

- Cook bacon on the flat top grill over medium heat until browned and crispy, about 10 minutes.
- Meanwhile, mix ground chuck, onion powder, garlic powder, salt, and pepper together with your hands. Divide into 3 portions and roll into balls.
- Remove bacon from the flat top and increase heat to medium-high.
- Pour flour onto a plate and roll burgers around in the flour until well coated. Pour 1 tablespoon oil onto the hot grill.
- Place 1 of the burgers onto the oiled flat top and press down firmly until it forms a patty, about 1/2-inch thick; repeat for other 2 burgers. Cook until browned, 4 to 5 minutes. Use a firm, metal spatula to flip patties in order to scrape up all of the crust. Continue to cook until browned and no longer pink, 4 to 5 minutes more. An instant-read thermometer inserted into the center of the burgers should read at least 160 degrees F (70 degrees C).
- Reduce heat to medium and add remaining oil. Crack eggs onto the grill. Cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes.
- Assemble burgers in the buns with American cheese, bacon, and egg.
