GRILLED SALMON WITH LEMON-DILL SAUCE

Steps:
- 1.Spray a grill grate with cooking spray or brush with oil.
- 2.Heat a gas or charcoal grill.
- 3.Brush the top of the salmon with the olive oil; sprinkle with the salt and pepper.
- 4.Grill over medium heat, skin side up, for 3 minutes.
- 5.Using a broad spatula, turn the fish over; grill for 5 to 7 minutes or until the salmon flakes easily with a fork.
- 6.Meanwhile, in a medium bowl, mix all of the remaining ingredients. Serve the sauce over salmon.

- Preheat grill for medium heat and lightly oil the grate.
- Mix mayonnaise, dill, mustard, and brown sugar in a bowl. Spread vegetable oil over salmon skin.
- Grill salmon skin-side down on preheated grill. Spread mayonnaise mixture over top of salmon and cook until salmon is easily flaked with a fork, 6 to 12 minutes.

- Heat coals or gas grill for direct heat.
- Place fish on 24-inch piece of heavy-duty aluminum foil. Brush salmon with oil; sprinkle with pepper. Wrap foil securely around fish.
- Cover and grill fish 4 to 6 inches from medium heat 20 to 30 minutes or until fish flakes easily with fork.
- Mix dill dip and milk until smooth. Serve salmon with dill sauce.

GRILLED SALMON WITH LEMON AND DILL SAUCE RECIPE
Steps:
- Gather the ingredients.
- Place the salmon in a shallow, nonreactive dish. In a bowl, combine the lemon zest, lemon juice, vegetable oil, dill, and garlic. Whisk to combine and emulsify .
- Pour the marinade over the salmon. Cover and refrigerate for 1 to 2 hours.
- Preheat a grill to medium and lightly oil the grates to prevent the fish from sticking. Remove the salmon, reserving the marinade, and place the fish on the grill.
- Pour the marinade into a saucepan and bring to a boil. Remove from the heat and set aside.
- Cook the salmon for about 4 minutes on each side or until the fish flakes easily, basting with the boiled marinade.
- To serve, spoon a little sauce on top of each fillet or steak.

GRILLED LEMON-DILL SALMON FILLETS
Steps:
- Gather the ingredients.
- Preheat grill to medium heat.
- Combine lemon juice and grapeseed oil together in a bowl. Brush liberally onto salmon skin and then onto salmon flesh.
- Make a rub mixture out of salt, black pepper, and garlic powder. Sprinkle onto salmon and then top with chopped dill.
- Place salmon flesh-side down onto grill grate. Allow to cook for 2 to 3 minutes, and very carefully using a spatula, work fillets away, on all sides, from the grill grate.
- Once free, gently turn fillets over. Close cover and allow fish to cook for 8 to 10 minutes, or until it reaches an internal temperature of 145 F to 150 F.
- Remove fish from the grill and garnish with lemon slices and additional chopped dill.

GRILLED SALMON SANDWICH WITH DILL SAUCE
Steps:
- Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Evenly coat the salmon with the olive oil.
- Cook the salmon on the preheated grill with the skin side down for about 5 minutes before flipping and cooking on the other side until the skin can easily be lifted off the flesh, about 5 minutes more. Flip the salmon once more and continue cooking until the salmon flakes easily with a fork, another 2 to 3 minutes.
- Whisk the mayonnaise, dill, and lemon zest together in a small bowl; divide between 2 of the toasted bread slices. Top each with 1 portion of cooked salmon, 2 tomato slices, 2 bacon slices, 1 lettuce leaf, and a remaining slice of toasted bread.

- GRILL DIRECTIONS: Heat grill. In small bowl, combine dill, mustard and honey; mix well. Place 2 tablespoons mustard mixture in small bowl; stir in mayonnaise until well blended. Refrigerate sauce until serving time. Reserve remaining mustard mixture for brushing on salmon.
- When ready to grill, spray skin side of salmon with nonstick cooking spray. Place salmon, skin side down, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Spoon reserved mustard mixture onto salmon, spreading evenly; cover grill. Cook 10 to 15 minutes or until fish flakes easily with fork. Serve mayonnaise-mustard sauce mixture with salmon.

DILL-MUSTARD GRILLED SALMON
We love salmon in our house and with my new George Foreman grill we have been enjoying grilled foods during the winter.

Steps:
- Mix together dill, mustard and honey.
- Next, stir in mayonnaise and 2 Tablespoons of mustard until blended well.
- This will be the sauce used after salmon is grilled.
- Refrigerate until needed.
- I use my George Foreman but if using a regular grill I suggest spraying the skin side of the salmon with vegetable spray so it doesn't stick to grill.
- Brush top of salmon with reserved mustard.
- Grill for 10 to 15 minutes or until salmon begins to flake.
- When done, serve with dill sauce.
