Been fixin' ribs for a long time and never had a complaint; they just kept comin' back for more.

½ cup Burgundy wine
¼ cup barbeque sauce, plus more for basting
¼ cup cider vinegar
¼ cup hot pepper sauce
2 tablespoons Worcestershire sauce
2 tablespoons prepared yellow mustard
4 pounds country-style pork ribs
1 tablespoon onion powder
1 tablespoon garlic powder

Steps:

  • Stir wine, barbeque sauce, cider vinegar, hot pepper sauce, Worcestershire sauce, and mustard together in bowl until well mixed. Place ribs in a baking dish; pour Burgundy wine mixture over ribs and coat completely.
  • Mix onion powder and garlic powder together in a bowl. Dust ribs with powder mixture; let marinate 2 hours, turning once.
  • Preheat grill for medium-low heat and lightly oil the grate.
  • Grill ribs, covered, over indirect heat on the preheated grill for 45 minutes, turning once. Baste with barbeque sauce and grill until meat is tender, about 15 minutes, turning and basting frequently.

1 1/2 lbs country-style pork ribs
garlic salt
pepper
barbecue sauce, your favorite

Steps:

  • Sprinkle ribs with garlic salt and pepper.
  • Coat ribs with generous portions of barbecue sauce.
  • Cover and marinate at room temperature for 2 hours.
  • Bake covered 50 minutes at 350 degrees.
  • Uncover and bake another 35 minutes.
  • Serve.
  • Note: Chinese sweet and sour sauce, plum sauce, duck sauce, honey or jelly can be substituted for barbecue sauce. These ribs are also excellent barbecued after marinating.

1 cup water, divided
1/2 cup reduced-sodium soy sauce
2 tablespoons lemon juice
2 tablespoons canola oil
1 tablespoon brown sugar
1 teaspoon garlic powder
1 teaspoon pepper
6 bone-in country-style pork ribs (1-1/2 inches thick and 14 ounces each)

Steps:

  • In a small bowl, combine 1/2 cup water, soy sauce, lemon juice, oil, brown sugar, garlic powder and pepper. Cover and refrigerate 1/2 cup mixture for basting. Pour remaining mixture into a large resealable plastic bag; add the ribs. Seal bag and turn to coat. Refrigerate for 8 hours or overnight., Drain and discard marinade; place ribs and remaining water in a 3-qt. microwave-safe dish. Cover and microwave on high for 20-25 minutes or until meat is tender., Drain ribs. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill ribs, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until browned, basting occasionally with reserved marinade.

We're having company from Brazil - the land of outdoor grilling. Country ribs were on sale locally, so this seemed a no-brainer! I happened to have those 2 types of chili powder - other can be used instead. Same with the salt.

1 1/2 Tbsp light brown sugar
1 Tbsp coarse sea salt (or less!)
1/2 Tbsp ground ancho chili powder
1/2 Tbsp ground new mexico chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
2 1/2 lb country ribs

Steps:

  • 1. In a small bowl, measure and blend together all the seasonings. Rub into all surfaces of country ribs. Put into resealable bag or dish covered with plastic wrap. Refrigerate for 8 hours or overnight. (Less time will work, flavors won't be as intense)
  • 2. Let the ribs sit at room temperature for 1 hour before cooking. Heat a grill pan or outdoor grill to medium (about 350°F to 450°F). If using charcoal, let coals turn gray and spread out.
  • 3. Place the ribs on the grill with the larger, flatter side down, cover the grill, and cook until the pork is browned and crusty on the bottom, about 5 to 7 minutes. Flip, cover, and cook until it's browned and crusty on the other side, about 5 to 7 minutes more. Rotate the ribs so that they are resting on a thinner side (you may need to prop them up against one another), cover, and cook until browned and crusty, about 4 to 6 minutes. Flip to the other thinner side, cover, and cook until browned and crusty or an instant-read thermometer inserted into the thickest part of the thickest rib registers 145°F, about 4 to 6 minutes more. Transfer to a clean serving platter, tent loosely with foil, and let rest about 5 minutes before serving.
