- Preheat oven to 350°. Place ham and pickles in a food processor; pulse until almost smooth. Transfer to a small bowl; stir in eggs, celery, onion and mayonnaise. Spread 1/2 cup over each roll bottom; replace tops. Wrap each in foil and place on a baking sheet. Bake until heated through, 10-15 minutes.

MY GREAT GRANDMOTHER'S HAM CROQUETTES
I don't know how this recipe came to be, but we know my great-grandmother made this. It is made with diced ham in the oven and covered in bread crumbs. After shaping them, you can put cheese or anything you want into the middle for a filling. I personally like cream cheese or Cheddar cheese in mine but you can put whatever you want in the middle.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix ham, egg, mayonnaise, and half the breadcrumbs together in a bowl; shape into 6 meatballs. Spread the remaining breadcrumbs onto a plate; roll the balls in the breadcrumbs to coat. Arrange the balls in a baking dish.
- Bake in the preheated oven until golden brown, 20 to 25 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes. Drain.
- Mix egg noodles, ham, evaporated milk, cream of chicken soup, onion, and processed cheese food in a 9x13-inch baking dish until evenly distributed.
- Bake in preheated oven until bubbly and cheese food is melted, about 1 hour. About 5 minutes before end of baking, sprinkle chips atop casserole and return to oven; bake for 5 minutes more.

GRANDMA'S HAM
This is an easy delicious ham that my grandma has made every year for Christmas, I got to make it for the first time last year for my family and it is always wonderful and beautiful.

- Preheat oven to 325 degrees F (165 degrees C). Place ham in a roasting pan.
- Pour ginger ale into the roasting pan. Rub brown sugar over the ham. Attach pineapple slices to outside of ham with toothpicks. Secure a cherry into the middle of each pineapple slice again using toothpicks. Pour reserved pineapple juice into pan with ginger ale. Tent aluminum foil over the ham.
- Bake ham in preheated oven for 4 hours. Remove aluminum foil and continue baking another 30 minutes.

GRANDMA'S HAM & CHEESE BALL
This recipe has been a family favorite for years. We have it every Christmas/New Year's Eve. It is my grandmother's recipe. Every time I take it somewhere, people love it.

- 1. Cream together cream cheese and Miracle Whip.
- 2. Drain ham (if needed). Add ham (I chop it a bit while it's in the can before adding it), Tobasco sauce, and parsley flakes to mixture. Stir together.
- 3. Cover and refrigerate for 3-4 hrs.
- 4. Drop onto wax paper and roll mixture into a ball using the wax paper. Roll in chopped pecans.
- 5. Serve with Ritz crackers, Triscuits, or whatever suits your fancy.
BRANDY GLAZED HAM
This spiral brandy glazed ham is a favorite on holidays; the glaze was my grandma's recipe that I have continued to use. Using the oven bag keeps the ham moist and juicy.

- 1. 90 minutes before baking ham start by soaking ham in hot tap water. Leave ham in its original packaging(If there is a hole or tear in the original wrapping, wrap it in several layers of plastic wrap before soaking it in hot water), cover with hot tap water; set aside for 45 minutes. Drain and cover again with hot tap water; set aside for another 45 minutes. You can bypass these steps, but the heating time will increase 18 to 20 minutes per pound for a cold ham.
- 2. Place oven rack in the lowest position and preheat oven to 275 degrees.
- 3. Open ham and place in oven bag. Gather top of bag tightly so bag fits securely around the ham, tie bag and trim surplus plastic. Set ham cut side down in large roasting pan and cut 4 slits in top of bag.
- 4. Bake ham until cetner registers 100 degrees, 1 to 1 1/2 hours (about 10 minutes per pound).
- 5. GLAZE: Combine all ingredients in saucepan. Cook over medium heat, stirring occasionally, until mixture is thick, syrupy about 5 to 10 minutes. There should be about 1 cup. Set aside.
- 6. Remove ham from oven and increase oven temp. to 350 degrees. Cut open oven bag and roll back sides to expose ham. Brush ham with 1/3 glaze and return to oven until glaze gets sticky, about 10 minutes.
- 7. Remove ham from oven, transfer to carving board, and brush entire ham with another third of glaze. Let ham rest, loosely tented with aluminum for 15 minutes.
- 8. While ham rests, heat remaining third of glaze with 4 to 6 tablespoons of ham juices until it forms thick but fluid sauce. Carve and serve ham with remaining sauce at table.
GRANDMA'S HAM CASSEROLE
This is a casserole my grandmother would serve using her leftover ham from Easter. I also make it to use up leftover ham, or I buy a ham slice and make it anytime because so many people like it. Enjoy!

- Cut cauliflower into florets (about 3 cups). Cook in boiling salted water to cover 10 to 12 minutes, or until tender; drain and set aside.
- Melt 4 tablespoons butter in a medium saucepan over medium-high heat. Whisk in flour until smooth. Gradually add milk, whisking constantly, until mixture begins to thicken. Lower heat to medium. Add cheese and sour cream, stirring until cheese melts. (Do not boil.).
- Stir cauliflower, ham and mushrooms into cheese sauce; pour into a 2-quart baking dish. Sprinkle breadcrumbs evenly over casserole. Cut 1 tablespoon butter into pieces and sprinkle evenly over breadcrumbs.
- Bake casserole, uncovered, at 350 degrees for 45 minutes.

Granma made this long before anyone else used the name Honey Baked Ham.

- 1. Preheat oven to 325 degrees. Score ham. Wrap ham in foil and bake for 30 minutes. Meanwhile, to make glaze, combine honey and brown sugar in a small saucepan. Simmer until sugar is dissolved.
- 2. After the ham has baked 30 minutes remove from oven. Uncover and spread honey glaze over ham. Re-wrap and continue baking for about 1 more hour. Remove from oven and unwrap. Allow to sit for 10 minutes before cutting.
