JUICY GRILLED CHEESEBURGERS

Juicy Grilled Cheeseburgers image

These quarter-pounders are lightened up with 90-percent lean beef and a mere half-ounce of Cheddar, and they're served on wholesome whole wheat English muffins.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

Canola oil or nonstick grilling cooking spray, for oiling the grates
1 medium red onion, thinly sliced
Kosher salt and freshly ground black pepper
2 tablespoons ketchup
2 tablespoons yellow mustard
4 whole wheat English muffins, split
1 medium ripe tomato, cored and cut into 4 thick slices
1 pound 90-percent lean ground beef
2 ounces 50-percent reduced-fat sharp Cheddar, grated (about 1/2 cup)
Pickles, for serving, optional

Steps:

  • Heat a grill to medium-high direct heat and lightly oil the grates using a paper towel soaked in canola oil or nonstick grilling cooking spray.
  • Spread a 16-inch-long piece of nonstick aluminum foil on a cutting board (or mist a piece of regular aluminum foil with nonstick cooking spray). Top with the onions, 1/4 teaspoon each salt and pepper and 1 tablespoon water. Bring two sides of the foil together, fold over twice to create a seal and then seal the remaining two ends. Put on the grill and cook for 12 minutes, flipping once. The onions should be tender with only a bit of charring. Carefully open the top of the foil to let all the steam out and continue to cook the onions, tossing, until browned and lightly charred, 3 minutes longer. Remove from the heat.
  • While the onions cook, mix the ketchup and mustard together in a small bowl. Season with pepper and set aside.
  • Lightly toast the English muffins on the grill and place one top and bottom on each of 4 plates. Spread some of the ketchup sauce on the bottom half of each muffin and top with a slice of tomato.
  • Divide the beef into 4 patties about 4 inches in diameter and just under 1/2-inch thick. Sprinkle with a total of 1/2 teaspoon salt and 1/4 teaspoon pepper. Place the burgers on the grill. Cook until the edges of the burgers are browning, 3 to 5 minutes, and then flip. Brush the burgers with the remaining ketchup sauce and evenly top with the shredded cheese. Cover the burgers with the grill lid or a large heatproof bowl and continue to cook until the cheese has melted and the burgers are still a bit pink on the inside, about 3 minutes more.
  • Put one burger on top of the assembled muffin bottom and top with some of the grilled onions and the top of the muffin. Serve with pickles if desired.

Choose American or Cheddar cheese for these absolutely classic burgers.

Provided by Food Network Kitchen

Time 25m

Yield 6

Number Of Ingredients 6

2 1/2 pounds ground beef
Kosher salt and freshly ground black pepper
Vegetable oil, for the grill grates and buns
6 slices American or Cheddar cheese
6 seeded hamburger buns, split
Lettuce leaves, tomato slices, red onion slices, ketchup and mustard, for serving

Steps:

  • Prepare a grill for medium heat. Divide the ground beef into 6 even pieces and shape each into a 1-inch-thick patty. Press in the center of each patty so it is slightly thinner than the edges. Sprinkle generously on both sides with salt and pepper. Lightly oil the grill grates.
  • Grill the burgers, flipping once, until well browned and medium rare, 6 to 7 minutes per side, topping with a slice of cheese in the last few minutes of grilling. Lightly brush the buns with oil and grill until lightly toasted. Put the burgers on the bottom buns and top with the lettuce, tomato, onions and top buns. Serve with ketchup and mustard on the side.

GRILLED KOFTA KEBABS

Grilled Kofta Kebabs image

Kofta is a classic dish found throughout the Middle East, Mediterranean, Balkans and Southeast Asia. The word kofta comes from the Persian word koofteh, which means pounded meat. Kofta is typically made with ground meat such as lamb, beef or even chicken (although there are vegetarian and fish versions too), which is mixed with herbs and spices and shaped into balls or cylinders. I make my kofta using a combination of lamb and beef with warm spices such as cinnamon and allspice, then skewer and grill them for a nice smoky flavor.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 21

1 medium onion
1 slice bread (white or whole wheat)
2 tablespoons milk
1 pound ground beef
1 pound ground lamb
1 cup fresh parsley, chopped
1 teaspoon ground allspice
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon kosher salt
1 teaspoon sumac
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1/4 teaspoon freshly ground black pepper
2 cloves garlic, minced
Neutral oil, for the grill grates
1 cup whole-milk yogurt
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1 clove garlic, grated
Warm pita, sliced tomatoes, fresh parsley leaves and thinly sliced onion, for serving

Steps:

  • For the kofta: Place 16 to 20 wooden skewers in a container of water and press down to make sure they're fully submerged, then soak for at least 1 hour.
  • Grate the onion into a large bowl. Tear the bread into pieces and add it to the grated onion. Add the milk and mix to make sure that the bread is fully soaked. Let it sit for 10 minutes.
  • Discard any excess liquid in the bowl (if there is any). Add the beef and lamb and mix into the bread mixture with your hands. Add the parsley, allspice, cumin, paprika, salt, sumac, cinnamon, coriander, black pepper and garlic and mix to combine until the ingredients are well incorporated. Cover the bowl and refrigerate for 1 hour.
  • For the yogurt sauce: Mix the yogurt with the lemon juice, salt, garlic and 1 tablespoon water in a bowl until smooth and combined. Cover and refrigerate until ready to serve.
  • Prepare a grill for medium-high heat.
  • Divide the meat mixture into 16 to 20 pieces and roll each piece into a cylinder. Press a skewer into each cylinder and shape the mixture around the skewer, making it about 1 inch thick. Place the skewers on a baking sheet lined with parchment paper.
  • Lightly oil the grill grates. Grill the kofta until nicely grill-marked and just cooked through, 3 to 5 minutes on each side. Serve with the yogurt sauce, warm pita, tomatoes, parsley and onions.

Freshly cracked pepper

1 egg
1/2 Vidalia onion, minced
2 tablespoons extra-virgin olive oil
1 head garlic
1/2 cup roasted tahini
1/3 cup plain Mediterranean yogurt
1 teaspoon extra-virgin olive oil
1/4 cup fresh lemon juice
1/4 cup fresh mint leaves, roughly chopped

Place 2 grilled kebabs inside a pita, spoon in some tahini sauce and top with pickled radishes.

GRILLED FRENCH TOAST KEBABS

Grilled French Toast Kebabs image

This handheld version of a breakfast favorite is served with grilled bacon and warm maple syrup for the ultimate sweet and salty treat-no knife and fork needed! Lining the grill with foil ensures that the French toast cooks all the way through without burning, while covering the grill lets the toast acquire a nice touch of smoky flavor.

Provided by Food Network Kitchen

Time 8h30m

Yield 4 servings

Number Of Ingredients 11

Half a 12-inch brioche loaf, end discarded, bread cut into 1-inch cubes (about 48)
8 slices thick-cut bacon
1 1/2 cups well-shaken buttermilk
4 large eggs
4 tablespoons unsalted butter, melted
2 tablespoons sugar
1/2 teaspoon cinnamon
Kosher salt
Cooking spray
Pure maple syrup, warm
Special equipment: eight 12-inch skewers

Steps:

  • Thread 6 bread cubes onto each skewer, leaving at least 1/4 inch of space between cubes. Leave the skewers out overnight, uncovered, to dry out.
  • The next day, prepare an outdoor grill for medium heat. Grill the bacon, flipping as needed to ensure even cooking, until most of the fat has rendered and the bacon is charred in spots on both sides, about 10 minutes. Transfer to a paper-towel-lined plate to absorb any excess fat. (Note: If you have a charcoal grill, cook the bacon in a grill pan. It should not be grilled over charcoal because of the risk of flare-ups.)
  • Whisk together the buttermilk, eggs, butter, sugar, cinnamon and 1/2 teaspoon salt in a medium bowl until combined; pour into a rimmed baking sheet. Put the skewers of bread in the buttermilk mixture to soak, turning as needed, until the bread has absorbed some of the liquid but is not falling apart, no more than 5 minutes.
  • Spray a large piece of aluminum foil all over with cooking spray and place it on half the grill. Transfer the skewers to the foil in 1 layer, at least 1/2 inch of space between them. Grill, covered, turning the skewers a few times as needed, until the cubes of bread are golden in most places and no longer wet, 5 to 8 minutes.
  • Remove the skewers and foil from the grill, and return the bacon to the grill just until warmed through, 1 to 2 minutes.
  • Serve the grilled French toast kebabs and bacon with warm maple syrup.
