VANILLA BUTTERCREAM FROSTING



Vanilla Buttercream Frosting image

This American buttercream recipe only uses five ingredients! It's so delicious and easy to make, you'll never buy frosting again!!

Number Of Ingredients 5

2 cups unsalted butter, room temperature (452g; 1 lb. box)
1 Tbsp vanilla extract or vanilla bean paste (12g)
1/2 tsp fine salt (3g)
7 cups powdered sugar (907g; 2 lb. bag)
3 Tbsp heavy cream or whipping cream (45g)

Steps:

  • Beat 2 cups of unsalted butter on a medium speed for 30 seconds until smooth with a paddle attachment / stand mixer or a hand mixer.
  • Mix in 1 Tbsp vanilla extract or vanilla bean paste and 1/2 tsp salt on a low speed.
  • Slowly add in 7 cups of powdered sugar while mixing slowly on the lowest setting. Half way through add in 3 Tbsp of heavy cream or milk to make it easier to mix. I like to place a kitchen towel over my mixer to contain any powdered sugar clouds.
  • Mix on low until the ingredients are fully incorporated and the desired consistency is reached.
  • If the frosting is too thick, add in additional cream (1 Tbsp at a time). If the frosting is too thin, add in more powdered sugar (quarter of a cup at a time).
  • If you plan to color the buttercream, add in the gel food coloring once the frosting is fully mixed and beat on low until it reach the desired colored.
  • To make the frosting extra smooth, stir it by hand with a rubber spatula for a minute or two right before you use it. It's an arm workout, but it's worth it! Push the frosting back and forth and spread it around the side of the bowl. This will push out any extra air and make it easier to smooth onto cakes or pipe with.

Ask any pastry chef about frostings and they'll tell you that there's nothing like a good basic vanilla buttercream. This American-style vanilla buttercream from chef Billy Reece of Billy's Bakery in NYC requires just four ingredients and comes together in just about as many minutes. Smooth, fluffy, and creamy, it's ideal for all kinds of cakes, from cupcakes to multi-layered confections.

1 cup (2 sticks) unsalted butter, room temperature
6 to 8 cups confectioners' sugar
1/2 cup milk
1 teaspoon pure vanilla extract

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter until smooth and creamy, 2 to 3 minutes. With mixer on low speed, add 6 cups sugar, milk, and vanilla; mix until light and fluffy. If necessary, gradually add remaining 2 cups sugar to reach desired consistency.

1 cup unsalted butter, room temperature
8 cups powdered sugar, sifted
3/4 cup water or 3/4 cup milk
1/4 teaspoon pink himalayan sea salt
1 tablespoon best quality pure vanilla extract (vanilla bean paste works great too.)
1/2 teaspoon clear butter flavor extract

Steps:

  • In a stand up mixer fixed with paddle attachment, cream butter until smooth.
  • Turn off mixer and add 2 cups powdered sugar, milk, and vanilla. Keep adding the powdered sugar in increments on a low, then medium speed until there is no more left. Stop and scrape bottom of bowl in between mixing. Set mixer on high speed and mix until smooth and fluffy.

  • Place the butter and a couple of cups of the sugar in a mixing bowl. Mix on medium speed until the sugar is blended well with the butter. Blend in the vanilla extract.
  • Slowly add more sugar a little at a time. Start with just 6 cups of sugar if you want a looser, fluffier consistency. Beat until it is very smooth and creamy.
  • To get really smooth and creamy results, beat for at least 5 to 6 minutes with a handheld mixer and 3 to 4 minutes with a stand mixer. For an even fluffier and almost white color, add a couple more minutes.
